Garlic Parm Chicken & Potatoes

Ingredients
  • 4 skin-on, bone-in chicken thighs
  • kosher salt
  • Freshly ground black pepper
  • 1 tbsp. olive oil
  • ½ lb. baby red potatoes, quartered
  • 4 cloves garlic, minced
  • 2 tbsp. tomato paste
  • 1 c. chicken stock
  • 1 head broccoli florets
  • 1 c. half and half
  • 1 c. grated Parmesan
  • 1 c. spinach
  • Chopped parsley, for garnish
Instructions
  1. Season chicken thighs all over with salt and pepper. In a large skillet over medium heat, heat olive oil, then add the chicken thighs, skin side down. Cook until golden and crispy, about 10 minutes. Flip chicken cook until golden, another 10 minutes.
  2. Remove chicken but leave skillet on stove. Add potatoes and season with salt and pepper. Leave untouched for about 4 minutes, until one side is crispy.
  3. Add the garlic and tomato paste and stir until fragrant, 2 minutes. Stir in chicken broth and broccoli, season with salt and pepper, and simmer for 5 minutes. Stir in half and half, Parmesan, and spinach, add chicken, skin side, up, and simmer until the sauce is nicely reduced and the potatoes are done, about 15 minutes.
  4. Garnish with parsley and serve.

Loaded Boneless Wings
Apply your nacho-building skills to boneless wings for a killer snack.

Ingredients
  • 1 c. all-purpose flour
  • 2 lb. chicken tenders
  • 2 c. panko bread crumbs
  • 3 large eggs, beaten
  • kosher salt
  • Freshly ground black pepper
  • 1 c. barbecue sauce
  • ⅓ c. brown sugar
  • Juice of 1 lime
  • 1 tsp. garlic powder
  • 1 c. Shredded Monterey Jack
  • 1 c. shredded Cheddar
  • 4 slices bacon, cooked and crumbled
  • Green onions, for serving
Instructions
  1. Preheat oven to 425°. In a large, resealable Ziploc bag, combine flour and chicken. Shake until fully coated.
  2. Set up a dredging station: In one bowl, add panko bread crumbs and in another bowl, whisk eggs with 2 tablespoons water. Dip chicken in eggs, then in panko until fully coated. Transfer to a parchment-lined baking sheet and season generously with salt and pepper. Bake until golden and crispy, 23 to 25 minutes.
  3. Meanwhile, in a small saucepan over low heat, warm barbecue sauce, brown sugar, lime juice, and garlic powder. Stir to combine.
  4. When the chicken is cooked through, heat broiler. Coat tenders in sauce, then top with cheese, bacon, and green onions. Return to oven and broil until the cheese is melted, 1 to 2 minutes.

Ingredients
  • ¾ c. creamy peanut butter
  • ¼ c. coconut oil, melted
  • ¼ c. raspberry or strawberry jam
  • ½ c. Chopped peanuts
Instructions
  1. Line a muffin tin with paper liners. In a small bowl, stir together the peanut butter and coconut oil until combined.
  2. Divide half the mixture evenly among the 12 muffin cups, then freeze for 15 minutes.
  3. Spoon a teaspoon of jam in the middle of each peanut butter layer.
  4. Top with the remaining peanut butter mixture, sprinkle chopped peanuts, then freeze until solid, another 25 minutes.

Pizza Burgers

Ingredients
  • 1 lb. ground beef
  • 2 cloves garlic, chopped
  • ¼ c. chopped parsley
  • kosher salt
  • Freshly ground black pepper
  • 2 tbsp. vegetable oil
  • 2 c. jarred marinara
  • 4 slices mozzarella
  • 8 pepperoni slices
  • 4 Italian rolls (or hamburger buns)
  • 2 tbsp. melted butter
  • 2 tsp. garlic powder
  • 1 tsp. Italian seasoning
  • ¼ c. freshly grated Parmesan
Instructions
  1. Preheat oven to 350°.
  2. In a medium bowl, combine ground beef, garlic and parsley and mix with spatula until just combined. Using your hands, form 4 equally-sized patties; season both sides with salt and pepper.
  3. Heat oil in a large skillet over medium-high heat. Add the burgers and cook, 4 to 5 minutes for medium. Flip patties, then immediately pour marinara around them in the pan. Simmer for another minute, then top each with cheese and 2 slices pepperoni. Cover pan and cook until the cheese melts and the burger is cooked to your liking, about 3 minutes more.
  4. Meanwhile, make garlic buns. Brush melted butter on the inside of each half of the roll and sprinkle with garlic powder, Italian seasoning and Parmesan. Bake until golden, about 10 minutes.
  5. Spread a dollop of marinara on each bottom bun followed by cooked burgers and the top bun halves.

Instructions
  1. Fill a glass with ice. Pour over orange juice, pineapple juice, dark rum, coocnut rum, lime juice and grenadine.
  2. Garnish with pineapple and maraschino cherries.

Italian Mac & Cheese

Ingredients
  • 1 lb. Italian sausage
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 10 oz. shells
  • 16 oz. marinara or tomato sauce
  • 4 c. low-sodium chicken broth
  • ½ c. half-and-half or heavy cream
  • 1 c. shredded mozzarella
  • Freshly chopped parsley, for garnish
Instructions
  1. In a large skillet over medium heat, brown sausage until golden.
  2. Add onion, garlic and bell pepper and cook until soft, 5 minutes.
  3. Add shells and stir until coated in sausage and peppers, then pour over marinara and chicken broth. Simmer until shells are al dente and almost all of the liquid is absorbed, 20 minutes.
  4. Stir in half-and-half and mozzarella. Garnish with parsley and serve.

Ingredients
  • 1 lb russet potato, cut
  • 3 tablespoons olive oil
  • 2 teaspoons salt, divided
  • ½ teaspoon pepper, divided
  • 1 tablespoon grated parmesan cheese
  • 5 eggs
  • 1 cup milk
  • 1 tomato, diced
  • ¼ cup green onion, sliced
  • ½ cup bacon, cooked and chopped
  • ½ cup shredded cheddar cheese
  • 1 teaspoon garlic powder
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Thinly slice the potatoes with a knife or mandoline.
  3. Put the sliced potatoes in a bowl and drizzle with olive oil, 1 teaspoon of salt, ¼ teaspoon of pepper, and Parmesan and use your hands or a spoon to evenly coat the potato slices.
  4. Lay the potato slices in a pie dish starting from the middle and working your way out, overlapping the potato slices. Line the edge of the pie dish with overlapping potato slices. Fill in any gaps with leftover potato slices.
  5. Bake the potatoes for 15 minutes or until the potatoes are just cooked and not yet brown.
  6. In a bowl, whisk the eggs, milk, tomato, green onions, bacon, cheddar cheese, 1 teaspoon of salt, ¼ teaspoon of pepper, and garlic powder.
  7. Slowly pour the egg mixture over the potatoes, if the potatoes begin to lift up, stop and press them down with a spoon.
  8. Bake the quiche for 30 minutes or until the eggs are set and the potatoes are brown.
  9. Slice and serve.
  10. Enjoy!

Beef Stroganoff French Bread Toast
Why serve beef stroganoff with a side of French bread when it's so much tastier served inside the French bread?

Ingredients
For the stroganoff:
  • 4 tablespoons olive oil
  • 1½ cups mushrooms
  • 2 teaspoons salt, divided
  • ½ teaspoon black pepper
  • 2 tablespoons thyme
  • 2 tablespoons butter
  • ½ cup onions, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 3 tablespoons all-purpose flour
  • 2 teaspoons paprika
  • 1½ cups beef broth
  • ½ cup sour cream
  • 1 teaspoon Dijon mustard
For the toasts:
  • 1 loaf French bread, insides hollowed out
  • 2 cups mozzarella
  • 3 tablespoons chopped Italian parsley
Instructions
  1. Preheat oven to 350 degrees, and line a sheet pan with parchment paper.
  2. Make the stroganoff: In a large Dutch oven or skillet, heat olive oil over medium heat. Saute mushrooms with one teaspoon salt and black pepper. Add thyme. Cook mushrooms until golden, approximately 4 minutes. Remove from pan and set aside.
  3. Add butter, onions and garlic to the pan and saute 2 minutes. Cook ground beef over medium heat until brown, approximately 4 minutes. Add flour and paprika to coat evenly. Add beef broth, sour cream and mustard. Mix thoroughly and add mushrooms back in.
  4. Fill the hollowed out loaf with stroganoff and top with mozzarella cheese. Place on the prepared baking sheet, and bake for 5 to 10 minutes until cheese is golden and melted. Top with parsley, slice and serve immediately.

Bell Pepper Meatloaves

Bell Pepper Meatloaves
Not your mom's meatloaf.

Ingredients
  • 3 bell peppers
  • 1 lb. ground beef
  • ¼ c. bread crumbs
  • 1 Egg, lightly beaten
  • 1 tsp. Worcestershire sauce
  • ½ Onion, finely chopped
  • ½ tsp. fresh thyme leaves, chopped
  • 1 clove garlic, minced
  • 1 tbsp. tomato paste
  • kosher salt
  • Freshly ground black pepper
  • ¼ c. ketchup
  • 1 tbsp. brown sugar
  • 2 c. Shredded Monterey Jack
  • 1 tbsp. Fresh parsley, for garnish
Instructions
  1. Preheat oven to 350° and line a medium baking sheet with parchment paper. Cut ends off peppers and set aside. Remove seeds and slice peppers into 2” thick rings. Place on prepared baking sheet.
  2. In a large bowl, combine beef with bread crumbs, egg, Worcestershire sauce, onion, thyme, garlic and tomato paste. Season with salt and pepper and stir until combined. Fill each pepper with meatloaf mixture.
  3. In a small bowl, whisk together ketchup and brown sugar and brush on tops of meatloaf. Bake for 35 minutes, then top with cheese, and bake 5 to 10 minutes more, or until cheese is melty. Garnish with parsley and serve.

Artichoke 101

Artichoke 101
From simply boiling the veggie to grilling it, here is your guide to preparing the perfect artichoke.

Ingredients
Base ingredients:
  • 1 large artichoke
  • 1 lemon
For the garlic aioli:
  • ½ cup mayonnaise
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • ¼ teaspoon Dijon mustard
  • 1 garlic clove, grated
  • Pinch of kosher salt
For boiled artichoke:
  • Kosher salt
  • 1 large lemon, halved
For roasted artichoke:
  • Olive oil
  • Kosher salt
  • Course ground pepper
  • 2 lemon slices
  • 4 garlic cloves, smashed
  • 2 rosemary sprigs
  • For grilled artichoke:
  • 1 lemon, halved
  • Olive oil
  • Kosher salt
  • Course ground pepper
Instructions
Cleaning method:
  1. Using a sharp stainless steel* knife, cut off the bottom third of the artichoke stem and top. Then, using a pair of sharp kitchen shears, cut off the top portion of each leaf to remove the thorns.
  2. Using a peeler, peel away the first layer of skin on the artichoke stem and tear off any small or dead leaves.
  3. Proceed to boiling method.
Boiling method:
  1. Fill a stock pot with water and a large pinch of kosher salt and bring to a boil.
  2. Squeeze the juice from the lemon halves into the water, followed by the lemon halves themselves.
  3. Carefully place the artichoke in the water.
  4. Reduce heat to low and simmer, covered, for about 20 to 30 minutes, or until you can easily pull out a leaf from the center of the artichoke. Discard the leftover lemon halves.
Roasting method:
  1. Preheat oven to 375°F.
  2. Follow the 'boiling method' directions. Cut the cleaned artichoke in half lengthwise and use a spoon or paring knife to remove the fibrous 'fuzzy' membrane and sharp purple leaves in the center.
  3. Drizzle an 8x8 inch shallow baking dish with olive oil. Sprinkle artichokes with salt pepper and an additional drizzle of olive oil. Place 2 garlic cloves in the center of each artichoke, top each half with a sprig of rosemary and a lemon slice. Flip the artichoke half over and place into prepared pan cut side down, followed by an additional drizzle of olive oil and sprinkle of salt and pepper.
  4. Cover the pan with foil and roast for 40-45 minutes or until tender.
Grilling method:
  1. Follow the 'boiling method' directions. Cut the cleaned artichoke in half lengthwise and use a spoon or paring knife to remove the fibrous 'fuzzy' membrane and sharp purple leaves in the center.
  2. Preheat grill or grill pan over high heat.
  3. Drizzle steamed artichoke halves with olive oil, salt and pepper and grill on high heat for about 4 minutes on each side until charred. Grill lemon halves, cut side down, until charred, and squeeze over grilled artichokes to finish. Enjoy plain or dipped in garlic aioli.
Garlic aioli:
  1. In a medium-sized bowl, whisk together all ingredients and serve with warm artichoke.
  2. *Stainless steel prevents the artichoke from becoming brown or black during cooking.
