Kentucky Fried Chicken Style Chicken

Ingredients
  • 2 bone-in chicken thighs
  • 8 ounces chicken breasts
  • 8 ounces chicken wings
  • 1 cup flour
  • 1 teaspoon allspice
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon ginger powder
  • 2 teaspoons salt and pepper
  • 2¾ cups milk, divided
  • 1 bouillon cube
  • 1 egg, beaten
Instructions
  1. In a bowl, combine the flour, allspice, chili powder, garlic powder, paprika, ginger, salt and pepper.
  2. In a sauce pot over low heat, add the chicken, 2¼ cups milk and bouillon cube. Cook for 20 minutes.
  3. Preheat oil to 400 degrees.
  4. In a shallow dish, combine remaining milk and the beaten egg. Dip each chicken piece into the egg mixture, then coat well in the flour mixture.
  5. Deep-fry chicken in batches until golden brown.

Blooming Chocolate Flower

Blooming Chocolate Flower
Spring is here with these beautiful and tasty blooming chocolate flowers!

Ingredients
  • 2½ cups fresh strawberries, halved, stems removed
  • ¾ cup sugar
  • ⅓ cup lemon juice
  • 1 half vanilla bean, cut open
  • 1½ cups dark chocolate
  • Macaron, for inside the flower
  • Whipped cream
  • Fresh raspberries
  • Mint, for garnish
Instructions
For the strawberry coulis:
  1. In a medium saucepan over medium heat, add the strawberries, sugar, lemon juice and vanilla bean. Bring to a boil until fruit is softened. Pour cooked liquid into a blender, blend and strain. Set aside.
For the flowers:
  1. Melt the chocolate, and pour and spread over a 4-by-18-inch piece of acetate. Allow the chocolate to set slightly then cut small leaf-shaped petals out of the chocolate with a paring knife. Leave the chocolate on the acetate, bend the acetate and place between two cake pans to hold in a crescent shape. Allow to set then move to the freezer for 15 minutes before breaking into petals.
  2. Pour a circle of chocolate and allow it to set. Dip each set chocolate petal in a bit of melted chocolate and adhere to the base. Once half of the sphere of petals is assembled place the dessert inside. Assemble the remaining chocolate petals and chill slightly to set.
  3. When ready to serve, garnish with mint and place into a deep bowl. Warm the strawberry coulis and pour around the dessert. The warm coulis will melt the base of the chocolate flower and create a blooming effect!

Pizza Churros
Commonly served as a sweet street side snack or dessert, churros are a favorite treat. We put a savory spin on them with cheesy pizza flavors, fried till golden brown so they're slightly molten inside. Dipped in your favorite pizza sauce they're a great appetizer!

Ingredients
  • ½ cup butter
  • 1½ cups water
  • 1 tsp salt
  • 1 tsp oregano
  • ½ tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion granules
  • 1¼ cups plain flour
  • 3 eggs
  • 1 cup grated mozzarella cheese
  • Oil for frying
  • Marinara Sauce
Instructions
  1. Heat oil to 190ºC (375ºF).
  2. In a medium saucepan, combine water and butter until just starting to melt and simmering. Add all of the spices and stir to dissolve and bring to a simmer.
  3. Add flour all at once. Stir until the dough pulls away from the sides of the pan and forms a ball. Remove from heat and let cool for 4 to 5 minutes.
  4. Stir in eggs one at a time until fully combined then add the cheese.
  5. Using a star-tip in a piping bag, pipe about 3-4-inch long churros. Fry until golden brown.
  6. Serve with marinara sauce to dip. Enjoy!

Luxury Strawberry Jelly Cake
Quite possibly the most elegant and luxurious jello with strawberries and gold. Fancy, fancy.

Ingredients
  • 11 strawberries
  • 1 7-inch round sponge cake
Strawberry jelly:
  • 5 ounces strawberries, quartered
  • 1½ tablespoons granulated sugar
  • ½ tablespoon powdered gelatin plus 1 tablespoon water
Lemon gelatin:
  • 1¾ cups water
  • 3 tablespoons granulated sugar
  • 5 sheet gelatin, soaked in ice water
  • ⅓ cup lemon juice
  • 2 tablespoons honey
  • Gold leaf, optional
Whipped cream:
  • ¾ tablespoon granulated sugar
  • ½ tablespoon cherry fruit brandy
  • ¾ cup heavy cream
Instructions
  1. In a 7-inch round cake pan, add the sponge cake round. Line with whole strawberries. Set aside.
  2. In a food processor, add strawberry jelly ingredients and blend to combine.
  3. Line a 4-inch round cake pan with plastic wrap. Pour in the strawberry jelly mixture and cool until hardened.
  4. In a mixing bowl, add sugar, cherry brandy and heavy cream. Allow to sit for 8 minutes, then whip to soft peaks. Top set strawberry jelly with a layer of whipped cream and cool in freezer until set.
  5. In a saucepan over medium heat, add water and sugar. Add soaked sheet gelatin and allow to melt. Stir to combine. Add lemon juice, honey and gold leaf and stir until combined. Pour one-third of the gelatin mixture overtop of the sponge cake layer. Add the set strawberry jelly, and cover cake with remaining gelatin mixture.
  6. Place in refrigerator until set. Remove from mold. Add garnishes and serve.

Ingredients
  • CHILI
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 lb (455 g) ground beef
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 15 oz (425 g) tomato sauce, 1 can
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 15 oz (425 g) kidney bean, 1 can, drained and rinsed
  • GARLIC BUTTER
  • ¼ cup (55 g) butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon grated parmesan cheese
  • 12 dinner rolls
  • ½ cup (50 g) shredded cheddar cheese
  • sour cream, to serve
  • green onion, sliced, to serve
Instructions
  1. Heat oil in a large pot or Dutch oven over medium heat. Add the onion and cook until translucent.
  2. Add the garlic and cook for two minutes.
  3. Add the ground beef and season with salt and pepper. Break up the beef with a wooden spoon, cooking until browned.
  4. Add in the tomato sauce, cumin, oregano, and chili powder. Stir until combined.
  5. Reduce the heat to low, cover and simmer for 1 hour.
  6. Remove lid and stir in kidney beans.
  7. Preheat the oven to 400°F (200°C).
  8. In a bowl, add the butter, garlic, parsley, and Parmesan. Stir until combined.
  9. Place the dinner rolls in a baking dish. Use a knife to carve a circle in the top of each roll. Press down the bottom of the bun to create a denser bottom layer.
  10. Brush the rolls with the garlic butter and bake for 5 minutes, or until lightly toasted.
  11. Spoon the chilli into the holes of the toasted rolls.
  12. Sprinkle with cheddar cheese and bake for another 5 minutes, or until cheese has melted.
  13. Serve topped with sour cream and green onions.
  14. Enjoy!

Ingredients
  • ice
  • 2 liter sprite
  • 2 c. orange juice
  • 2 c. pineapple juice
  • 2 c. vodka
  • 1 bottle prosecco
  • 2 c. Strawberries, sliced
  • 2 c. raspberries
  • 1 c. Fresh mint leaves, plus more for garnish
  • Sanding sugars, for rims
Instructions
  1. To a large punch bowl, add ice, Sprite, orange juice, pineapple juice, vodka, Prosecco, strawberries, raspberries and mint leaves and stir to combine.
  2. In a small dish of sanding sugar, rim glasses with fresh strawberry and coat rims with sugar. Ladle punch into glasses and garnish with more mint.

Ingredients
  • 3 ½ cups (525 g) broccoli, finely chopped, divided
  • 2 cups (200 g) shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 8 oz (225 g) cream cheese, 1 package, softened
  • 3 chicken breasts
  • salt, to taste
  • pepper, to taste
  • 13.7 oz (390 g) cheddar cracker, 1 package
  • 1 cup (125 g) all-purpose flour
  • 2 eggs
Instructions
  1. Preheat the oven to 325˚F (165˚C). Line a baking sheet with parchment paper.
  2. In a small bowl, microwave 1½ cups (225 g) of broccoli for 1 minute. Add the cheddar cheese, garlic powder, onion powder, and cream cheese. Mix thoroughly, and set aside until ready to use.
  3. On a cutting board, butterfly the chicken breasts with a knife. Cut through the chicken breast so you have 6 thinner chicken cutlets. Cover in plastic wrap, and tenderize by beating with a rolling pin or a heavy pan.
  4. Remove the plastic wrap, and season with salt and pepper. Place a scoop of the broccoli cheddar mixture on top of a chicken cutlet, and spread until the chicken is covered.
  5. Roll the chicken up starting from the tapered end. Use 2 toothpicks to keep the chicken tightly rolled. Repeat with the rest of the chicken.
  6. In a plastic bag, crush the cheddar crackers until they have a coarse, sand-like texture. Pour the cracker crumbs into a large bowl. Add the rest of the minced broccoli. Stir to combine.
  7. Put the flour into a medium bowl.
  8. Whisk the eggs in another medium bowl.
  9. Using tongs, place one of the pieces of chicken into the flour. Turn the chicken in the flour until it is fully coated, tap off any excess flour. Place the chicken in the egg, turn until the chicken is coated. Place the chicken in the broccoli cracker crumb mixture, turn until the chicken is fully coated. Repeat with the remaining chicken rolls.
  10. Transfer the pieces of chicken to the prepared baking sheet. Bake for 40-45 minutes.
  11. Let the chicken cool slightly, then remove the toothpicks.
  12. Enjoy!

There are few things more wonderful than a tater tot - crisp little morsels of potato joy, the ultimate game day snack. However, imagine if you will how much better they would taste if they were stuffed full of chicken, mozzarella and bacon drenched in the world's most delicious hot sauce, Frank's RedHot.

Ingredients
  • ¾ cup melted butter
  • ½ cup Franks Hot Sauce
  • 3 cups shredded chicken
  • 1 cup cream cheese
  • 2 cups mozzarella
  • 6 rashers bacon, cooked crisp and chopped
  • 2 lb potatoes, parboiled
  • ¼ cup flour
  • 1 tbsp salt
  • 1 tbsp pepper
  • Oil for frying
Instructions
  1. Whisk the Frank's RedHot Sauce into the melted butter and set aside.
  2. Combine chicken, cream cheese, mozzarella, chopped bacon and half the buffalo sauce.
  3. Make thin ballotines by rolling spoonfuls of the mix in clingfilm then freeze for a few hours.
  4. Grate the potatoes into a bowl and stir in the flour and seasoning. Set aside while you cut up the frozen sausages into roughly ¾ inch sections.
  5. Take a small handful of the mixture and fashion it around a piece of the frozen sausage then set aside to make the rest.
  6. Heat the oil to 300°F and fry for around 4 - 5 minutes until golden and crispy.
  7. Pile high in a bowl and pour over the remaining buffalo sauce and enjoy!

A boozy take on banana pudding.

Ingredients
  • 2 packages instant vanilla pudding
  • 1¼ c. milk
  • ¾ c. white rum
  • 1 banana, chopped
  • ½ banana, sliced
  • ½ c. nilla wafers, crushed and divided
  • Cool Whip, for garnish
Instructions
  1. In a large bowl, combine pudding with milk and rum and whisk to combine. Fold in chopped bananas.
  2. Spoon or pour pudding mixture into shot glasses until they are half full. Make a layer of crushed Nillas in each shot glass, using ¼ cup of the crushed wafers. Top with remaining pudding.
  3. Garnish pudding shots with a dollop of cool whip, a sprinkle of the remaining Nilla wafers, and a slice of banana. Serve.

Ingredients
  • 20 large ladyfingers
  • 1 cup (240 mL) coffee
  • 16 oz (455 g) cream cheese
  • 16 oz (455 g) mascarpone cheese
  • 1 tablespoon vanilla extract
  • 1 cup (240 mL) milk, hot
  • ½ cup (100 g) sugar
  • 4 teaspoons gelatin
  • 2 tablespoons cocoa powder
Instructions
  1. Dip the ladyfingers in coffee.
  2. In two spring form pans lined with parchment paper, layer the coffee-dipped lady fingers in a single layer.
  3. Freeze until the ladyfingers are frozen.
  4. In a bowl, add the cream cheese, mascarpone cheese, and vanilla extract. Stir to combine.
  5. Add the milk, sugar, and gelatin to a bowl and whisk until the gelatin has dissolved.
  6. Pour the milk mixture through a sieve into the bowl of cream cheese.
  7. Pour 1 cup (290 g) of cheesecake batter into a springform pan. Refrigerate until firm, about 2 hours
  8. Add one layer of frozen ladyfingers on top of the refrigerated cheesecake layer.
  9. Add another cup (290 g) of cheesecake batter on top. Refrigerate for two hours, and repeat with remaining batter and ladyfinger layer.
  10. Refrigerate for 2 hours or until firm.
  11. Dust the top with cocoa powder.
  12. Enjoy!
