Crispy Lasagna Onion Bombs
CRISPY LASAGNA ONION BOMBS

Ingredients
  • 3 small white onions
  • 1 cup beef ragu
  • ½ cup bechamel sauce
  • fresh lasagna sheets, cooked
  • 4 slices mozzarella
  • oil, for frying
  • 1 cup plain flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • parmesan, for serving
Instructions
  1. Top and tail then peel your onions. Cut in half, leaving two sets of rings. Separate out the rings then partner each ring with its opposing number (you want the two largest rings only)
  2. Using a small cookie cutter (about ⅕" in diameter), cut out as many rings of cheese and lasagna sheet as you can, then set aside.
  3. Layer your onions - in each half, put in a circle of pasta. Top with 1 tsp of ragu, then a slice of cheese, ½ tsp bechamel, then another piece of pasta. Repeat this process in both halves, but refrain from putting a final slice of pasta on ONE of the halves. Put one half on top of the other to form a ball. Transfer to a baking tray and pop in the freezer for ½ hour.
  4. Dip each ball into the flour, shake off the excess, then go in the egg then the breadcrumbs. Repeat with all the bombs.
  5. Heat your oil to frying temperature then go in with half of your balls. Fry until beautiful and golden. Drain on kitchen towel and leave to rest for a few minutes.
  6. Serve with lashings of parmesan.

Spaghetti Lasagna

Spaghetti Lasagna
When you can't decide between your two favorite carbs.

Ingredients
  • 1 lb. spaghetti
  • 2 eggs, lightly whisked (divided)
  • ½ c. finely grated Parmesan
  • 2 tbsp. extra-virgin olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 lb. ground beef
  • 2 tbsp. tomato paste
  • 1 28 oz can crushed tomatoes
  • ¼ tsp. dried oregano
  • 3 c. ricotta
  • 3 c. shredded mozzarella
  • 2 tbsp. chopped Italian parsley
Instructions
  1. In a large pot of salted boiling water, add spaghetti and cook until al dente, about 8 minutes. Drain water then return the spaghetti to the pot. Add 1 egg and the Parmesan and toss to combine.
  2. Meanwhile, make sauce. In a large pot over medium, heat olive oil. Add onion and cook until tender, about 5 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Add the ground beef, breaking up the meat with a wooden spoon, and cook until the meat is no longer pink, about 6 minutes. Drain fat then return the pot to medium heat and stir in tomato paste. Cook for 1 minute, then add the crushed tomatoes and oregano. Season with salt and pepper and simmer for 10 minutes.
  3. In a medium bowl, combine ricotta and remaining egg. Stir to combine.
  4. In a large baking dish, spoon a thin layer of sauce in the bottom of the dish. Top with half of the spaghetti noodles, cover with about half of the remaining sauce, half of the ricotta mixture and half of the mozzarella. Repeat once more. Bake until the cheese is melty and the lasagna is warmed through, about 20-30 minutes. Garnish with parsely.

Close your eyes. Imagine a lasagna. Think of those layers of perfectly cooked pasta, thinking of oozing mozzarella, deeply rich beef ragu. Now think of that, but in a brioche bun - the ease of convenience.

Ingredients
  • 5 hot dog buns
  • ½ cup garlic butter
  • 1 tbsp olive oil
  • ½ cup pancetta
  • 1 onion, diced
  • 1.8 lb beef mince
  • 3 cloves garlic, finely diced
  • 1 tin chopped tomatoes
  • 1 glass red wine
  • 1 tbsp tomato puree
  • 1 tbsp salt
  • 1 tsp pepper
  • 10 strips of fresh lasagna sheets
  • 15 strips of mozzarella
  • Parmesan
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Fry the pancetta in the oil until golden, then add the onion and cook for a further 5 minutes. Add the garlic and cook for 1 more minute then add the mince and break up in the pan with a wooden spoon, moving it around as you go to brown it.
  3. Add the can of tomatoes, wine and tomato puree then season. Gently simmer until the liquid has reduced considerably - you want it to be almost dry.
  4. Meanwhile, take the hot dog buns and hollow them out with a sharp knife. Brush with garlic butter and bake for 10 - 15 minutes.
  5. Layer up the buns - a strip of pasta on the bottom followed by a few spoonfuls of ragu and a strip of mozzarella. Top with more ragu, more pasta and another strip of mozzarella, then sprinkle with the parmesan. Bake for around half an hour, covering with foil if the buns look like they'll burn.

LASAGNA SAMOSAS

Ingredients
  • 10 8” tortillas, halved
  • 2 tbsp oil
  • 500g beef mince
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • ½ cup red wine
  • 1 can chopped tomatoes
  • 2 tsp oregano
  • 1 tsp salt
  • ½ tsp pepper
  • ½ cup heavy cream
  • 1 cup chopped fresh lasagna noodles
  • ½ cup grated parmesan
  • ¼ cup flour
  • ¼ cup water
  • Mozarella Cheese
  • 2 cups finely grated parmesan cheese
  • 1 tsp pepper
  • 1 tbsp finely chopped parsley
  • 1½ tsp garlic powder
  • Oil for frying
Instructions
  1. Heat oil in a large in a large sauce pan over medium heat. Add onions and cook until just softened, add garlic and cook ti fragrant. Add mince and cook until browned.
  2. Stir in tomato paste until coated. Cook for 2 minutes. Add wine, bring to a boil and reduce to half. Add tomatoes and spices. Cook until just thickened.
  3. Add cream, noodles and parmesan cheese. Bring to a boil then cover and reduce to a simmer until thickened. Let cool completely.
  4. In a small bowl, mix together ¼ cup flour and ¼ cup water to form a paste.Spread a thin layer of paste on ⅓ of one half of tortilla. Fold over into a cone shape. Repeat with remaining tortillas.
  5. Fill each cone halfway with lasagna mixture, a piece of mozzarella and top with more lasagna mix leaving a gap at the top.
  6. Use more of the paste to seal the edge.
  7. Heat oil to 170ºC. Fry in batches until golden brown.
  8. In a large bowl, mix together parmesan, pepper, parsley and garlic powder. Toss each drained and slightly cooled triangle in the cheese mixture to coat.
  9. Enjoy!

Pull-Apart Broccoli Chicken Alfredo Lasagna Rolls

Ingredients
  • nonstick cooking spray
  • 2 cups (250 g) shredded chicken, cooked
  • 2 cups (300 g) broccoli, finely chopped
  • 2 cups (200 g) shredded mozzarella cheese, divided
  • ½ cup (50 g) shredded parmesan cheese
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 cups (520 g) alfredo sauce, divided
  • 12 wide lasagna noodles, cooked
  • 1 tablespoon fresh parsley, chopped, for garnish
Instructions
  1. Preheat the oven to 350˚F (180˚C). Grease a 9-inch (23-cm) springform pan with nonstick spray.
  2. In a large bowl, add the chicken, broccoli, half of mozzarella, the Parmesan, salt, pepper, garlic powder, and half of alfredo sauce. Mix thoroughly.
  3. Place one of the lasagna noodles vertically on a cutting board. Scoop a spoonful of the chicken mixture onto the noodle and spread.
  4. Starting with the end closest to you, roll up the noodle, being careful not to squeeze any of the filling out of the sides. Cut the rolled noodle in half crosswise. Repeat with the rest of the noodles and filling.
  5. Place the rolls wavy side up in a greased 9-inch (23-cm) springform pan. Sprinkle with the rest of the mozzarella cheese.
  6. Bake for 20 minutes, until the cheese starts to brown.
  7. Release the pan and garnish the rolls with parsley. Serve immediately, with warm alfredo sauce alongside for dipping.

No bother fussing to make a béchamel or cooking lasagna noodles! Layered bolognese with creamy coated penne bakes up beautifully for an easy spin on a lasagna!

Ingredients
  • 500g beef mince
  • 1 onion, diced
  • 1 tbsp oil
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp oregano
  • 2 tbsp tomato paste
  • ⅓ cup red wine
  • 4 cups passata
  • 500g cooked penne
  • 1½ cups ricotta cheese
  • 1 cup grated mozzarella, split
  • ½ cup grated parmesan
  • 1 tsp salt
  • ½ tsp pepper
  • ½ cup heavy cream
  • Chopped parsley
Instructions
  1. In a large saute pan, heat oil over medium heat. Add onions and cook until softened, add garlic and cook until fragrant. Add mince, breaking apart with a spoon and brown.
  2. Stir in tomato paste until coated. Cook for 2 minutes. Add red wine scraping the bottom of the pan to release the bits. Let reduce by half.
  3. Add the passata, salt, pepper and oregano. Bring to a boil then reduce to a simmer and cover. Cook until thickened.
  4. In a large bowl mix penne, ricotta cheese, half the mozzarella, parmesan, salt, pepper and cream.
  5. Layer bolognese into a dish, topped with pasta, more bolognese and finish with pasta later. Top with remaining mozzarella cheese.
  6. Bake covered in a 180ºF oven for 30 minutes. Grill for 5 minutes until golden brown.

Chicken & Eggplant Parmesan Lasagna
How do you make 3 meals in one? By incorporating chicken and eggplant Parmesan into a thick, hearty lasagna.

Ingredients
  • 2 cups extra-virgin olive oil, divided, plus more for drizzling
  • 8 large eggs
  • 4 cups Italian breadcrumbs
  • 1 teaspoon kosher salt, plus more for seasoning
  • ½ teaspoon freshly ground black pepper, plus more for seasoning
  • ½ teaspoon ground fennel
  • 6 to 8 boneless, skinless chicken cutlets
  • 1 large Italian globe eggplant, cut crosswise into ¼-inch-thick slices (12 to 16 slices)
  • 4 cups store-bought tomato sauce
  • 14 no-boil lasagna noodles
  • 1 pound grated 4-cheese blend (mozzarella, provolone, Asiago, fontina)
  • ½ cup small basil leaves
  • 1 cup whole milk ricotta cheese
Instructions
  1. Preheat oven to 350 degrees, and set an oven rack in the middle position.
  2. In a large, nonstick frying pan over medium heat, add 1 cup of oil.
  3. Prepare a breading station: In a large, shallow mixing bowl, whisk the eggs. In a separate large, shallow mixing bowl, mix together the breadcrumbs, salt, pepper and ground fennel. Dredge each of the chicken cutlets in the egg, allowing any excess to drip off before placing each into the seasoned breadcrumbs to coat on both sides.
  4. In batches, fry the chicken cutlets for 4 to 5 minutes per side until golden brown. Remove to a cooling rack set over a baking sheet and continue frying the second batch until complete. Turn off the heat. Carefully clean out the oil and any breadcrumb “sludge.”
  5. Add the remaining 1 cup of oil into the cleaned pan and place over medium heat. Dredge the eggplant slices in the egg, once again allowing any excess to drip off before dredging in breadcrumbs to completely coat both sides. Shake off excess breadcrumbs and fry in batches for 3 to 4 minutes per side until golden brown. Remove to a cooling rack set over a baking sheet.
  6. To assemble the lasagna: In a 9x13-inch baking dish, spread 1 cup of tomato sauce onto the bottom of the pan. Lay 4 lasagna noodles on top to cover. Arrange all of the fried, breaded chicken cutlets in a single layer on top of the noodles. Top with some tomato sauce, Italian cheese blend and basil leaves. Top with 6 lasagna noodles (in an opposite pattern from the bottom layer). Evenly spread the ricotta on the noodles. Top with tomato sauce, and place the remaining 4 lasagna noodles on top in a single layer. Arrange all of the breaded, fried eggplant in a single layer on top of the noodles. Top with sauce, cheese and basil leaves. Drizzle with olive oil and season with salt and pepper.
  7. Bake for 30 to 40 minutes until the cheese is melted and bubbling and the lasagna noodles are fully cooked. Remove from the oven. Cool for 20 minutes before serving.

Ingredients
  • 6 boneless, skinless chicken breasts
  • 4 teaspoons salt
  • 4 teaspoons pepper
  • 4 teaspoons garlic powder
  • 4 tablespoons canola oil
  • 3 cloves garlic, minced
  • ½ medium white onion, finely chopped
  • 2 cups heavy cream
  • ½ cup shredded parmesan cheese
  • 1 cup fresh parsley, chopped
  • 10 lasagna noodles, cooked
  • 2 cups shredded mozzarella cheese
  • 6 strips bacon, cooked and crumbled
Instructions
  1. Preheat oven to 350°F (180°C).
  2. Slice each chicken breasts in half lengthwise and sprinkle 1 teaspoon of salt, pepper, and garlic powder evenly on both sides of each chicken breast.
  3. Heat oil in a large pan over high heat, then sear the chicken for about 1 minute per side. They will continue to cook through in the oven later on.
  4. In the residual oil (drain some if necessary), toss in the garlic and onions, stirring constantly until the mixture has started to brown.
  5. Pour in the cream, stirring until it starts to boil, then add the parmesan and parsley.
  6. Cook for 1 additional minute, then remove from heat.
  7. In a 9" x 13" (23cm x 33cm) rectangular baking pan, spread about ¼ of the cream mixture on the bottom.
  8. Lay enough lasagna noodles to cover the sauce, then spread about ½ of the remaining cream mixture on top.
  9. Place enough chicken breasts to cover the sauce, then sprinkle with half of the mozzarella, followed by half of the bacon and half of the parsley.
  10. Repeat the layers once more, starting with noodles, sauce, chicken, bacon, parsley, and mozzarella.
  11. Bake for about 25 minutes, until the cheese is golden brown.
  12. Cool for about 15 minutes, slice, and serve!

Ingredients
  • 1 tbsp olive oil
  • 1 cup / 2oog pancetta
  • 3 cloves garlic, finely diced
  • 1 onion, finely diced
  • 2.2 lb / 1 kg beef mince
  • 1 cup / 250g passata
  • 1 tbsp tomato puree
  • ½ cup /150ml beef stock
  • ½ cup / 150ml wine
  • 1 cup / 250ml double cream
  • Around 4 sheets lasagna, chopped into squares
  • 1 cup grated parmesan
  • 1 cup torn mozzarella
  • Lotsa lotsa fries
Instructions
  1. Fry the pancetta in the olive oil until nicely browned then add the garlic and fry for a minute.
  2. Add the onion and cook for another 3 minutes until nice and soft, then add the beef mince and cook until it's brown all over, breaking it up in the pan with a wooden spoon.
  3. Pour in the tomatoes, tomato puree, stock and red wine and give everything a stir, then leave to bubble away for around an hour.
  4. Pour in the cream, the chopped up pasta, the parmesan and the mozzarella and give everything a stir.
  5. Pour over the fries and sprinkle with parmesan. Eat with mates (not alone you monster).

Ingredients
  • Cooking spray, for pan
  • 8 slices bacon
  • 1 lb. frozen shredded hash browns
  • 1 tbsp. butter
  • 10 eggs
  • ¼ c. heavy cream
  • kosher salt
  • Freshly ground black pepper
  • 6 Small flour tortillas
  • ¼ c. finely chopped chives
  • 2 c. shredded Cheddar cheese
Instructions
  1. Preheat oven to 350°. Grease a medium baking dish with cooking spray. In a large skillet over medium heat, cook bacon until crispy. Drain slices on paper towels, but reserve fat in pan. Add hash browns, and cook, stirring often, until the hash browns begin to turn golden. Season with salt and pepper and remove from heat. Chop bacon.
  2. In a large bowl, whisk together eggs and heavy cream until light and frothy. In a large nonstick skillet over medium heat, melt butter. Reduce heat to low then add egg mixture and cook, stirring often, until the eggs are just set. Stir in chives, season with salt and pepper and remove from heat.
  3. Add a layer of tortillas to the prepared baking dish. Top with a layer of hash browns, eggs, cheese and crumbled bacon. Repeat to make 2 more layers, ending with tortillas, cheese, and bacon.
  4. Bake until the cheese is melted and the hash browns are golden, about 30 minutes.
