Baileys Ice Cube Chocolate Truffles
BAILEYS ICE CUBE CHOCOLATE TRUFFLES recipe.

Ingredients
Ganache:
  • 800g dark chocolate, finely chopped
  • 200ml whipping cream
  • 200ml Baileys Chocolat Luxe
Coating:
  • 500g dark chocolate, finely chopped
  • 2 tbsp coconutoil
  • Melted white chocolate
  • Melted milk chocolate
  • Raspberries
  • Toasted Hazelnuts
Instructions
  1. Drizzle melted white chocolate across one ice cube tray being sure to get across all sides. Drizzle melted milk chocolate across a second tray similar to white chocolate. Set both aside to chill for 10 minutes.
  2. In a microwavable jug, add 500g chocolate and coconut oil. Microwave on high for 2 minutes until completely melted. Pour into each of the 3 ice cube trays and tilt tray in all directions, allowing chocolate to cover the sides. Flip trays upside down to let excess chocolate drip out. Then refrigerate for 5 minutes.
  3. In a large bowl, add 800g chocolate. Microwave 200ml cream and 200ml Baileys Chocolate Luxe together until steaming. Pour over chocolate and let sit for minute. Stir to combine until smooth.
  4. In the ice cube tray with white chocolate drizzle, fill ⅓ with ganache. Then add half a raspberry to each. Fill with ganache, smooth over and then top with coating and smooth over. Repeat a second tray with on milk chocolate drizzle, and fill the same way with a hazelnut.
  5. In the third plain tray, fill completely with ganache and seal with remaining coating. Chill all trays until set about 15-20 minutes.
  6. Pop chocolates out carefully and trim excess chocolate if needed. Place in a chocolate box to gift or enjoy as is!

The Most Delicious Chestnut Dessert (Mont Blanc)
The Most Delicious Chestnut Dessert (Mont Blanc) recipe.

Ingredients
CHESTNUT FILLING
  • 2 lb chestnut
  • 3 cups water
  • ¼ cup sugar
  • 2 tablespoons vanilla extract
MERINGUE
  • 2 egg whites
  • ½ cup sugar
CREAM FILLING
  • 1 qt whipped cream
BASE
  • 1 circle pie crust, baked
  • 1 powdered sugar, to serve
Instructions
  1. Preheat the oven to 450˚F (230˚C).
  2. Score the chestnuts in a cross with a knife.
  3. Place the chestnuts on a sheet pan and bake for 30 minutes.
  4. Remove the chestnuts with a towel, and quickly peel the warm chestnuts.
  5. Put the peeled chestnuts in a pan and add water, sugar, and vanilla extract.
  6. Cook and stir the chestnut on high heat until the water has evaporated and chestnuts has softened, about 15 minutes.
  7. Place the chestnut filling in a food processor, add in water and blend until smooth.
  8. Push the chestnut filling through an sieve into another bowl.
  9. Transfer filling to a piping bag with a circle tip and chill.
  10. Preheat the oven to 200˚F (90˚C).
  11. In a bowl, whisk the egg whites until foamy using a hand mixer.
  12. Add sugar to the egg whites and whisk until stiff peak forms.
  13. Transfer the meringue into a piping bag fitted with a circle tip and pipe the meringue in a swirling motion onto a parchment paper-lined baking sheet.
  14. Bake the meringue for 1 hour.
  15. Get the pie crust, and cut small circles to serve as the bottom for the meringue and bake for 30 minutes
  16. Place the meringue on top of the pie crust and pipe the whipped cream around it. Pipe the chestnut cream around the whipped cream.
  17. Sprinkle with powdered sugar.
  18. Enjoy!

No Bake Oreo Tart
Made with dark chocolate and America's favorite cookie, pardon us as we pick our mouths up off the floor.

Ingredients
  • 300 grams crushed Oreo cookies
  • 100 grams chopped Oreo cookies
  • 50 grams baby Oreos
  • 150 grams melted unsalted butter
  • 400 grams dark cooking chocolate
  • 150 milliliters thickened cream (35 percent fat content)
Instructions
  1. Start off by adding 300 grams of Oreos to a food processor and process until you reach a fine crumb. Add the melted butter and process until well combined.
  2. Add the crumb mixture to 30 centimeters rectangle. I used a long one but you may use a 20 centimeters round tin. Press down using the palm of your hands. Shape it so that it covers the bottom and sides evenly. Place in the fridge for 20 min to firm up.
  3. While that's chilling prepare the chocolate filling by adding the dark chocolate and cream to a large microwave safe bowl and microwave for 20 seconds at a time, stirring each time until the mixture is smooth.
  4. Pour it into the pie shell and sprinkle with roughly chopped Oreos and baby Oreos. Place it in the fridge for 4 hours, or overnight to chill before serving.

Orange Cheese Brûlée Cups
A cheesecake, crème brûlée hybrid served in hollowed out oranges is sure to impress anyone at the dessert table.

Ingredients
  • 2 oranges
Cream filling:
  • 100 grams cream cheese
  • 100 milliliters heavy cream
  • 20 grams granulated sugar
  • 1 tablespoon white wine
  • 1 tablespoon lemon juice
  • 2 grams gelatin
  • 2 tablespoons hot water
Orange jam:
  • 2 oranges
  • 1 teaspoon lemon juice
  • 2 tablespoons granulated sugar
Topping:
  • 2 tablespoons granulated sugar
  • Mint
Instructions
  1. Combine gelatin and hot water together and let it sit until gelatin has bloomed.
  2. Cut off the top and bottom of the oranges and cut in half.
  3. Cut around the edges of the orange to release flesh. Scoop flesh out with a spoon. Place the ends of the orange into the orange cups.
  4. In a saucepan, combine orange flesh, lemon juice and granulated sugar and bring to a boil.
  5. Pour mixture into a blender. Add in all ingredients for the cream filling and blend until smooth.
  6. Pour mixture into orange cups and refrigerate for at least 3 hours.
  7. Sprinkle sugar on top and caramelize by heating with a torch until sugar is melted and light golden brown.
  8. Garnish with mint and serve.

Ingredients
  • 2 c. chocolate chips
  • 2 tbsp. coconut oil
  • 14-16 fresh strawberries with stems (depending on your ice cube tray)
Instructions
  1. In a medium bowl, stir together melted chocolate chips and coconut oil.
  2. Spoon a layer of chocolate mixture into the bottom of each ice cube mold, then top each with a strawberry, stem side-up. Spoon remaining chocolate mixture over strawberries.
  3. Freeze until chocolate is solid, 4 to 5 hours.

Ingredients
  • 2½ cups chocolate chips, divided
  • ¾ cup creamy peanut butter, divided
  • ¼ cup plus 2 tablespoons butter, divided
  • 1½ cups sugar, divided
  • ¼ cup evaporated milk
  • 1½ cups Marshmallow Fluff
  • 1½ cups roasted salted peanuts
  • 1 teaspoon vanilla extract
  • ¼ cup cold water
  • ½ cup heavy cream
  • 1 teaspoon salt
Instructions
  1. Line a 9 x 13 pan with parchment paper.
  2. In a medium bowl, melt 2½ cups chocolate chips and ½ cup peanut butter in a double boiler. Stir until smooth, and pour half over the parchment-lined pan. Refrigerate until set and hard, at least one hour.
  3. In large bowl, melt ¼ cup butter, ½ cup sugar and evaporated milk over a double boiler. Stir in fluff, ¼ cup peanut butter, peanuts and vanilla. Pour over set chocolate base, and refrigerate until set.
  4. In a medium saucepan, combine 1 cup sugar and cold water. Cook on medium-high heat without stirring until the sugar has become golden, approximately 8 minutes. Remove from heat and carefully stir in heavy cream, being cautious of splattering sugar. Stir in remaining butter and salt. Pour the caramel over nougat layer, and set aside.
  5. Pour remaining melted chocolate and peanut butter over the caramel layer. Refrigerate until set and hard, at least one hour. (Bars are cut most easily when they are cold.) Remove from pan and divide equally. Bars will keep up to a week in the fridge covered.

Brownie Bonbon
These frozen treats feature a dark chocolate shell filled with custard, strawberries and a brownie base.

Ingredients
  • 2 cans condensed milk
  • 1¼ cups milk
  • 4 egg yolks
  • 21 ounces dark chocolate
  • 9 ounces strawberries, chopped
  • 12 circular brownie pieces
Instructions
  1. In a pan, add the milk and condensed milk. Pass the egg yolks through a sieve into the mixture.
  2. Cook over low heat, stirring continually, until a thick custard is obtained. Set aside to cool.
  3. Melt the chocolate, and cover silicone or acetate muffin cups with a thin layer of chocolate. Set aside in the refrigerator for chocolate to harden.
  4. Mix the strawberries with the custard and place a portion of custard in each cup. Place a brownie piece on top of the custard and finish with a layer of melted chocolate. Refrigerate for at least 30 minutes, or until the chocolate is solid.
  5. Remove from cups and serve.

Chocolate Dump(ed) Cake
Packed with Oreos and marshmallows, this cake proves being dumped can be pretty sweet.

Ingredients
  • 1 (3.4 ounces) package chocolate flavor instant pudding mix
  • 2½ cups cold whole milk, divided
  • 1 box store-bought chocolate cake mix
  • 1½ cups crushed Oreo cookies, divided
  • 2 cups miniature marshmallows, divided
  • 1 cup semisweet chocolate chips, divided
For garnish:
  • Marshmallows, chocolate syrup, crushed Oreos, fresh strawberry slices and vanilla ice cream
Instructions
  1. Preheat oven to 350°F, and prepare a 13x9-inch glass baking pan with nonstick cooking spray.
  2. In large bowl, whisk together the dry pudding mix and 2½ cups of milk for about 2 minutes until smooth and slightly thickened.
  3. Stir in cake mix, followed by the remaining milk and whisk until incorporated. Fold in 1 cup crushed Oreos, 1 cup mini marshmallows and ½ cup chocolate chips. Stir until combined.
  4. Spread batter evenly in bottom of the prepared pan.
  5. Scatter chocolate chips evenly on the top of the batter and bake 30 to 35 minutes or until toothpick inserted in center of cake comes out mostly clean.
  6. Immediately sprinkle with remaining mini marshmallows and allow to cool.
  7. Before serving, garnish with chocolate syrup, remaining crushed Oreos and freshly sliced strawberries, and serve with a scoop of vanilla ice cream.

Broken Heart Chocolate Cake
For that person who feels nothing but daggers towards Valentine's Day, we gift you a cake that will crack you up. It's pretty cathartic to make, and delicious too.

Ingredients
Cake:
  • Nonstick cooking spray, for greasing the pan
  • All-purpose flour, for dusting the pan
  • One 15.25-ounce box chocolate cake mix (plus required ingredients)
Sugar Glass:
  • ⅔ cup granulated sugar
  • ¼ cup light corn syrup
  • ¼ teaspoon cream of tartar
Frosting:
  • One 12-ounce box assorted mixed nuts and chews chocolates (about 24 pieces), such as Russell Stover
  • ¼ cup heavy cream
  • Whipped Cream:
  • 1½ cups heavy cream
  • ¼ cup granulated sugar
Instructions
  1. Special equipment: a 9-inch heart-shaped cake pan
  2. For the cake: Preheat the oven to 350 degrees F. Spray a 9-inch heart-shaped cake pan with cooking spray and dust with flour, tapping out the excess.
  3. Prepare the cake batter according to the package directions and pour into the prepared pan. Bake until a toothpick inserted into the center comes out clean, 40 to 45 minutes. Remove to a rack to cool for 10 minutes. Invert the cake pan onto a plate to remove the cake from the pan, then invert back onto the rack to let cool completely.
  4. For the sugar glass: Line a baking sheet with parchment. Stir together the sugar, corn syrup and cream of tartar in a small microwave-safe bowl. Heat in the microwave in 2-minute intervals, stirring in between each, until the sugar starts to dissolve and the mixture turns a very light golden, about 4 minutes. Pour the mixture onto the prepared baking sheet and smooth with an offset spatula into a thin rectangle about 9 inches by 7 inches. Refrigerate until hardened completely, about 15 minutes. Use a meat mallet to break the sugar so that it resembles broken glass.
  5. For the frosting: Melt the chocolates and heavy cream in a small saucepan over medium-low heat, stirring frequently, until smooth. Set aside to cool slightly.
  6. For the whipped cream: Whip the heavy cream and sugar in a bowl with an electric mixer on medium speed until stiff peaks form.
  7. Assemble the cake: Once the cake has cooled, use a serrated knife to shave off the top to make it flat (it domes as it bakes). Cut the cake in half horizontally to make 2 even layers, then, keeping the layers stacked, use a paring knife to cut jagged edges in a zigzag formation down the middle of the cake so that you have 2 halves of a broken heart.
  8. Place the 2 bottom halves on a cake stand or plate so they are separated a little. Spread the whipped cream evenly over the bottom halves. Top with the 2 top halves and drizzle the melted frosting over the top so that it covers the top and drips down the sides of the cake. Decorate with the broken sugar glass and refrigerate until the chocolate has hardened, about 15 minutes. Slice and serve.

Strawberry Love Notes

Ingredients
  • 2 refrigerated pie crusts
  • Flour for rolling out dough
  • ½ c. strawberry jam
  • Egg wash
  • ¼ c. Granulated sugar, for sprinkling
Instructions
  1. Preheat oven to 375°. Line a large baking sheet with parchment paper. On a lightly floured surface, roll out 1 pie crust. Using a paring knife, cut out long diamond shapes, about 4" on each side. Transfer diamonds to baking sheet. Re-roll extra dough to make more diamonds. (You should have enough dough to make about 6.)
  2. Fill the center of each diamond with a very thin layer of strawberry filling, then fold three of the corners into the center so that the dough looks like an open envelope. Use a small heart cookie cutter to stamp out remaining dough into hearts, and place in the center of each.
  3. Brush envelopes with egg wash and sprinkle with sugar. Bake until envelopes are golden, about 15 minutes.
  4. Let cool for 10 minutes on baking sheet before transferring to a cooling rack to cool completely.
