Ingredients
  • 1kg beef mince
  • 100g bread crumbs
  • 1 egg
  • 1 tsp salt
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp black pepper
  • 18 slices american style cheese
  • 20 rashers bacon
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Mix the mince with the seasonings and press it in an even layer into a foil lined baking tray.
  3. Place the cheese in a double layer nearly the whole way up and then roll the whole thing up, using the foil. Leave to set in the fridge for around an hour.
  4. Lay the bacon on another foil lined tray and pop the unwrapped meat log at one end, then roll it up again to create a neat, tight bacon-wrapped meat torpedo.
  5. Bake for 20 minutes in the foil then unwrap for a final 30 mins.
  6. Sit back and observe your magnum opus. Serve with burger stuff - chips, ketchup, mustard and pickles

Mini Cheeseburger Wellingtons

Mini Cheeseburger Wellingtons
You may well remember the original cheeseburger wellington - that pastry bound bundle burgery cheesy wondrousness. Think of these as his little cousins, circling the great meat mothership. Basically, here at Twisted we love anything to do with cheeseburgers and the thought of having one stuffed with cheese and wrapped in pastry is essentially heaven on a plate.

Ingredients
  • 2lb beef mince
  • 1 onion, finely diced
  • 2 garlic cloves, very finely diced
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 4 sticks red cheddar
  • 20 bacon rashers
  • 16 slices American-style cheese
  • 2 large sheets puff pastry
Instructions
  1. Preheat the oven to 200°C/400°F.
  2. Mix the beef mince together with the onion, garlic, salt and pepper.
  3. Form into little rectangles and press a stick of the cheese in to the centre, then top with another lid of the mince mix. Press together to seal. You should be able to make roughly four wellingtons.
  4. Lay the cooked bacon on a small rectangle of puff pastry (large enough to roll up one the little wellingtons and tuck any excess underneath). Top with roughly four slices of American cheese.
  5. Place a wellington on the smaller end of the rectangle and brush any uncovered areas of pastry with egg wash, then roll the whole thing up and tuck the edges underneath.
  6. Bake for 30 minutes or until the internal temperature registers as cooked.

Muffin Tin Cheeseburgers

Muffin Tin Cheeseburgers
Pressing the bun into a muffin tin creates the perfect vessel to stuff with all of our favourite burger flavours and toppings. We’ve added bacon and cheese to these but chose your favourite toppings and layer them up!

Ingredients
  • 500g beef mince
  • ½ onion diced
  • 8 slices of bacon, cut into small pieces
  • 1 tbsp oil
  • 1 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • 12 top sesame burger buns
  • 12 squares cheddar
  • Ketchup
  • Mustard
  • Pickles
Instructions
  1. In a large pan, heat oil over medium heat. Add onions and bacon and cook until softened and bacon is just crispy. Add garlic add mince and cook, breaking apart with a spoon.
  2. Cook until liquid is reduce and beef is browned. Add Worcestershire sauce, ketchup, salt, pepper and garlic powder and mix until coated. Remove from heat.
  3. Press sesame buns into a greased muffin tin to create a little bowl.
  4. Add one heaping tablespoon into each muffin tin. Top with a piece of cheese. Bake in a 180ºF oven for 20 minutes until bread is golden brown and cheese is melted.
  5. Top each with choice of condiments, mustard, ketchup and pickles.

Mashed Potato Bun Bacon Burger

Ingredients
MASHED POTATO BUNS
  • 5 russet potatoes, peeled and cubed
  • 4 cloves garlic, peeled
  • 6 cups (1.4 L) cold water
  • ¼ cup (55 g) butter, cubed
  • ½ cup (120 mL) milk
  • salt, to taste
  • pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • 6 slices provolone cheese
  • 2 cups (100 g) panko breadcrumbs
  • 5 eggs
  • oil, for frying
BACON BURGERS
  • 1 lb (455 g) ground beef
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • ½ teaspoon pepper
  • 12 slices bacon
  • ketchup, to serve
  • lettuce, to serve
  • red bell pepper, sliced, to serve
Instructions
  1. In a pot over high heat, add the potatoes and garlic and cover with cold water.
  2. Bring the potatoes to a boil, reduce the heat and simmer until fork tender, about 20 minutes.
  3. Drain the potatoes in a colander and return to the pot.
  4. Add the butter, milk, salt and pepper. Mash until smooth.
  5. Add in the parsley and mix until combined. Transfer the potatoes to a piping bag or ziplock bag.
  6. On a parchment paper-lined baking sheet, place the provolone slices.
  7. Pipe the mashed potatoes on top of the rounds starting from the outside to the center of the cheese.
  8. Freeze until solid, about 1 hour.
  9. Place the egg and panko in two bowls.
  10. Place the frozen potato round in the egg ensuring it’s completely submerged.
  11. Place the potato round in the panko and flip to cover completely. If necessary repeat process putting potato back into the egg and once more in the panko.
  12. In a large pot, heat oil to 350°F (180°C).
  13. Place the potato in oil and fry until both sides are golden brown, about 2 minutes per side.
  14. Set the mashed potato rounds on a wire rack to drain.
  15. In a bowl, add the ground beef, season with salt, onion powder, and pepper. Mix until combined.
  16. Form patties with your hand about the size of your palm.
  17. Lay the bacon two strips overlapping and two strips perpendicular.
  18. Place the burger patty on the bacon and fold over the bacon strips, trimming if necessary.
  19. Heat a pan over medium heat and add the bacon patties and cook until cooked through.
  20. Assemble the burger by placing one potato “bun” on the bottom. Spread with ketchup or your favorite sauce.
  21. Build with lettuce, patty, red onion and top potato bun.
  22. Enjoy!

Egg in a Hole Burger
Consider this the ultimate Easter hunt: an egg inside of one seriously amazing burger.

Ingredients
  • 3 tbsp. mayo
  • 1 tbsp. sriracha
  • 8 strips bacon
  • 2 tbsp. butter
  • 1 lb. ground chuck
  • kosher salt
  • Black pepper
  • 4 eggs
  • 4 Hamburger buns
  • Lettuce, for serving
  • 4 slices cheddar cheese
Instructions
  1. Make Sriracha mayo: In a small bowl, stir together mayonnaise and Sriracha.
  2. In a large skillet, fry bacon over medium-high heat until crisp, about 8 minutes. Transfer to a paper-towel-lined plate.
  3. Form beef into three equal-sized patties. Using a small glass, cut out the center of each patty to create a donut-shaped burger (combine excess meat to form fourth patty). Season generously with salt and pepper.
  4. Heat a cast-iron skillet to medium-high heat and melt butter. Add burgers and cook 2 minutes, then flip. Crack an egg into the center of each burger and cook, covered, until whites are set.
  5. Toast buns and spread Sriracha mayo on bottom buns. Build burgers by topping with lettuce, burger, bacon, and Cheddar.

Teriyaki Beef Buns
Make something without cheese, they cried. Something that doesn't include bacon, the crowd chanted, banging against the lofty doors of Twisted Towers. Give us vegetables, they screamed. Well, dear fans, we heard your call - here is a dish teeming with fresh vegetables without an ounce of cheddar or bacon in sight. We are kind.

Ingredients
  • 1 tbsp groundnut oil
  • 2 lb sliced rump steak
  • 1 tsp salt
  • 1½ tbsp Chinese five spice
  • 1 tbsp oil
  • 1 tbsp sesame seeds
  • 3 garlic cloves, crushed
  • 5cm ginger, finely diced
  • 1½ cups beef stock
  • 3 tbsp dark soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp sugar
  • 2 tbsp corn starch
  • 1 tsp water
  • Slaw
  • ¼ red cabbage, finely shredded
  • 1 large carrot, finely shredded
  • 1 apple, finely shredded
  • 4 spring onions, sliced
  • 1 red chilli, sliced
  • 1 cup mayonnaise
  • 1 lime, juiced
  • 1 tsp salt
  • 1 cup chopped coriander
Instructions
  1. Heat the oil in a large heavy bottomed frying pan and quickly fry the beef on a high heat.
  2. Remove from the pan and add a little more oil then turn the temperature down. Fry the sesame seeds for a bit then add the garlic and ginger and fry for 30 seconds until fragrant.
  3. Pour in the stock and add the beef back in, bring to a simmer and cook gently until soft. If your beef is cut really thinly it'll take less time, but usually takes around an hour.
  4. Meanwhile make the slaw - mix it all together.
  5. Toast some buns and fill each with the beef then the slaw. Nom.

Hangover Breakfast Sandwich

Hangover Breakfast Sandwich
A late night out calls for an entire deep-fried Camembert cheese wheel topped with bacon jam, a fried egg and, oh, arugula — for some greens.

Ingredients
Bourbon bacon jam:
  • 1 pound thick-cut bacon, cut into small dice
  • ½ sweet onion, chopped
  • ⅓ cup brown sugar, tightly packed
  • 2 cups beef broth
  • 1 cup bourbon
  • 1 teaspoon smoked paprika
  • 2 tablespoon maple syrup
  • 2 tablespoons butter
Deep-fried Camembert:
  • 3 cups frying oil
  • 1 whole Camembert
  • ½ cup flour
  • 2 large eggs
  • 1 sprig rosemary, chopped
  • 1 cup panko
For the sandwich:
  • 1 egg, sunny-side up
  • 1 handful arugula
  • 1 bun, slice in half and toasted
Instructions
For the bacon jam:
  1. In a frying pan, cook bacon on medium heat for 5 minutes. Add chopped onion, and cook for another 5 minutes until onion is soft and bacon fat is rendered. Stir in brown sugar; cook until dissolved and thickened. Add beef broth and cook until all liquid has evaporated, about 20 minutes.
  2. Add bourbon and allow to reduce again. Jam should look sticky. Strain bacon through a sieve, and discard most of the fat. Stir in smoked paprika, maple syrup and butter.
  3. For the Camembert: In a heavy-bottomed pot, heat oil to 325 degrees.
  4. In one bowl, add flour. In a second bowl, add eggs. In a third bowl, add rosemary mixed with panko. Coat the camembert with flour first, then egg, then rosemary/panko last. Fry for 1 minute on each side until golden brown.
To build the sandwich:
  1. Lay out bottom bun. Top with arugula, Camembert, bacon jam, sunny-side egg and top bun.

Irish Stout Stroganoff Burgers
IRISH STOUT SALISBURY STEAK BURGERS

Ingredients
  • 1 kg beef mince
  • 3 tbsp breadcrumbs
  • 1 onion, finely diced
  • 100ml stout
  • 2 tbsp parsley
  • 1 tsp salt
  • 1 tsp black pepper
  • For the sauce:
  • 1 cup sliced mushrooms
  • 2 cloves garlic, crushed
  • 300ml double cream
  • 200ml beef stock
  • 200ml stout
  • ½ tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter
  • 2 tbsp worcestershire sauce
  • 2 tbsp balsamic vinegar
Instructions
  1. For the burgers, mix together all of the ingredients. Form into 6 patties, then chill in the fridge for 30 minutes.
  2. Add 1 tsp oil to a non-stick skillet. Fry the burgers on the both sides until nicely browned and caramelised. Don't cook them all the way through as they will finish cooking in the sauce. Set aside.
  3. In the same pan, add the butter and fry the mushrooms. When they are golden, add the garlic. Fry until fragrant, then add the stout. Reduce over high heat until halved in volume. Add the beef stock and reduce to half volume again. Add the vinegar, worcestershire sauce, salt, pepper. When reduced, add the cream. Bring to a simmer then return the burgers to the pan and baste with the sauce.
  4. Reduce the sauce until thick and rich, basting and turning the burgers from time to time - about 10 minutes.
  5. Serve in burgers with cheese and toppings of your choice!!!

Asian Sloppy Joes

Asian Sloppy Joes
A twist to everyone's favorite weeknight dinner.

Ingredients
  • 2 tsp. sesame oil
  • ½ onion, chopped
  • 3 cloves garlic, minced
  • 1 lb. ground pork (or ground beef)
  • ½ c. ketchup
  • ½ c. hoisin sauce
  • 2 tbsp. low sodium soy sauce
  • 2 tbsp. brown sugar
  • 1 tbsp. apple cider vinegar
  • kosher salt
  • Freshly ground black pepper
  • 1 c. Shredded cabbage
  • 2 tbsp. mayonnaise
  • Juice of half lime
  • 2 tbsp. sesame seeds
  • 2 Thinly sliced green onions
  • 4 sesame buns
Instructions
  1. In a large skillet over medium heat, heat sesame oil until fragrant, about 30 seconds. (Sesame oil can burn quickly, so don't heat it for too long!) Add onions and cook until beginning to turn tender, about 4 minutes, then stir in garlic and cook until fragrant, about 30 seconds.
  2. Add ground pork, breaking up meat with a wooden spoon, and cook until no longer pink, about 6 minutes. Add ketchup, hoisin, soy sauce, brown sugar, and apple cider vinegar. Season with salt and pepper and bring mixture to a simmer. Cook until mixture thickens, about 5 minutes. Remove from heat.
  3. In a medium bowl, combine shredded cabbage, mayonnaise and lime juice. Season with salt and pepper.
  4. Make sandwiches: Top the bottom half of each bun with sloppy joe mixture then sprinkle with green onions and sesame seeds. Top with remaining bun halves.

Hangover Breakfast Sandwich
