Ingredients
MACARON
  • 1 egg white
  • ¼ cup granulated sugar
  • ¼ cup almond flour
  • ⅓ cup powdered sugar
  • 1 teaspoon matcha
FILLING
  • ¼ cup cream cheese, room temperature
  • ½ cup powdered sugar
  • 1 teaspoon milk
Instructions
  1. Preheat oven to 350˚F (180˚C).
  2. In a medium mixing bowl, beat the egg whites with an electric hand mixer on medium speed until soft peaks form. Add ½ of the granulated sugar and with mixer on high, continue to beat until egg whites are stiff peaks. Repeat with last ½ of sugar, beating until whites are shiny and fluffy.
  3. Using a fine mesh strainer, sieve the almond flour, powdered sugar, and matcha into the bowl with the egg whites. Discard any large pieces that remain in the strainer. Fold until just combined
  4. Fill a piping bag with the macaron mixture and pipe 1½-inch (4 cm) dollops onto a parchment paper-lined baking sheet. Let the cookies rest until they are no longer wet to the touch and a skin forms on top (can be up to 1 hour).
  5. While resting, make the filling by mixing the cream cheese, powdered sugar and milk in a bowl until smooth. Transfer to a piping bag and set aside until ready to fill.
  6. When the cookies are dry to the touch, bake at 300˚F (150˚C) for 15 minutes.
  7. Let rest for 10 minutes, or until cool before filling. Pipe the cream cheese mixture on the macron and sandwich with another one.
  8. Enjoy!

Sheet Pan Breakfast Crunchwrap
SHEET PAN BREAKFAST CRUNCHWRAP

Ingredients
  • 12 scrambled eggs
  • 1 cup crispy bacon
  • 3 peppers, diced
  • 1 large onion, diced
  • 6 large potatoes (skin on), diced
  • 3 tbsp olive oil
  • 2 tbsp paprika
  • 1 tsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 2 cups grated cheddar
  • 9 large, flour tortillas
  • 1 tsp butter
Instructions
  1. Chuck your potatoes, onions, peppers, garlic powder, onion powder, paprika, salt and oil onto a tray. Roast for an hour at 200°C, turning occasionally. Cool.
  2. Spread a tsp of butter onto a sheet pan. Lay in your tortillas. Sprinkle in half of your cheese, followed by the hash. Crumble over your bacon, spoon in your scrambled eggs, then finish with the rest of the cheese. Lay down 2 more tortillas, then fold over to seal the wrap. Lay on a sheet of baking parchment, weigh down with a heavy tray and bake for 25 minutes at 200°C.
  3. Turn out, slice up and enjoy!

Shrimp Francese recipe.

Ingredients
  • 1¼ pounds extra-large shrimp, peeled and deveined (about 20 shrimp)
  • 4 large eggs
  • Kosher salt and freshly ground pepper
  • 2 tablespoons finely chopped fresh parsley
  • Pure olive oil, for frying
  • 1½ cups all-purpose flour
  • ⅔ cup low-sodium chicken broth
  • ¾ cup dry white wine
  • Juice of 1½ lemons
  • 1 cup cherry tomatoes, halved
  • 4 tablespoons cold unsalted butter, cut into small pieces
  • Two 5-ounce packages baby spinach
Instructions
  1. Butterfly the shrimp: Make a deep cut along the outer curved edge, then spread open like a book. Pat dry.
  2. Whisk the eggs with 1 teaspoon salt, ½ teaspoon pepper and 1 tablespoon parsley in a bowl. Heat about ⅛ inch olive oil in a large skillet over medium-high heat. Put the flour in a shallow bowl. Working in batches, dredge the shrimp in the flour, dip in the egg mixture and add to the skillet cut-side down; fry, turning, until lightly browned, about 3 minutes. Transfer to paper towels to drain.
  3. Pour out any oil from the skillet and wipe clean. Add the broth, wine and lemon juice and bring to a boil over medium-high heat. Add the tomatoes and cook until the sauce is slightly reduced, 4 minutes. Push the tomatoes to one side; whisk in the butter a few pieces at a time. Stir in the shrimp and the remaining 1 tablespoon parsley.
  4. Meanwhile, put the spinach in a microwave-safe bowl, sprinkle with water and season with salt and pepper. Cover with plastic wrap and pierce the plastic; microwave until wilted, 3 to 5 minutes. Divide the spinach and shrimp mixture among plates and top with the sauce.

  • 2 lb. strawberries
  • 2½ c. rosé
  • ½ c. vodka
  • ½ c. sugar
Instructions
  1. In a large bowl, place strawberries. Pour over rosé and vodka and let sit, soaking up the booze, at least 1 hour.
  2. Drain in a colander and pat strawberries dry with paper towels.
  3. Roll strawberries in sugar and serve.

Bell Pepper Meatball Subs
Bell peppers can be so much more than just forgotten dippers.

Ingredients
  • 1 lb. ground beef
  • ⅓ c. breadcrumbs
  • ¼ c. chopped parsley
  • ¼ c. grated Parmesan, plus more for garnish
  • 1 egg
  • 2 garlic cloves, minced
  • 1 tsp. kosher salt
  • ½ tsp. red pepper flakes
  • 2 tbsp. olive oil, divided
  • 1 (15-oz) jar marinara
  • 4 bell peppers, cored and halved
Instructions
  1. Preheat oven to 350°. In a large bowl, combine beef, breadcrumbs, parsley, parmesan, egg, garlic, salt and red pepper flakes. Mix until just combined and form into 16 balls.
  2. In a skillet over medium-high heat, add 1 tablespoon oil. Add meatballs and cook, turning occasionally, until seared on all sides, about 10 minutes. Add marinara sauce to skillet and toss to combine. Cover skillet with lid and simmer until meatballs have cooked through completely, about 10 minutes more.
  3. Place bell peppers cut side-up on a large rimmed baking sheet and drizzle with olive oil. Top 4 halves with mozzarella slices. Bake until cheese has melted and bell peppers are just warmed through.
  4. Add meatballs on top of the bell pepper halves with cheese and sprinkle with more parmesan, if using. Place remaining bell halves on top and serve.

Ingredients
  • ¾ c. creamy peanut butter
  • ¼ c. coconut oil, melted
  • ¼ c. raspberry or strawberry jam
  • ½ c. Chopped peanuts
Instructions
  1. Line a muffin tin with paper liners. In a small bowl, stir together the peanut butter and coconut oil until combined.
  2. Divide half the mixture evenly among the 12 muffin cups, then freeze for 15 minutes.
  3. Spoon a teaspoon of jam in the middle of each peanut butter layer.
  4. Top with the remaining peanut butter mixture, sprinkle chopped peanuts, then freeze until solid, another 25 minutes.

Want a quick, simple meal that's also hearty and filling? Toss together this lil' lasagna for a single-serving meal in a mug!

  • 1 sheet lasagna, cooked
  • ½ cup ricotta
  • ½ teaspoon salt
  • Pinch black pepper
  • 1 tablespoon olive oil
  • 4 tablespoons shredded mozzarella, plus more for topping
  • 4 tablespoons marinara sauce
  • 1 teaspoon chopped oregano
Instructions
  1. Preheat the oven to 375 degrees.
  2. In a small bowl, mix ricotta, salt, pepper and olive oil. Place the lasagna noodle on a plate or cutting board and spread ricotta mixture evenly across it, two tablespoons at a time. Sprinkle with two tablespoons of shredded mozzarella. Roll up into a circle.
  3. Place remaining mozzarella and two tablespoons of marinara on the bottom of a 12-ounce coffee mug. Place the rolled lasagna noodle inside the cup and top with remaining marinara and shredded mozzarella. Bake for 20 to 25 minutes until cheese is golden and bubbles over. Remove from oven and place a saucer or small plate on top. Flip over and top with oregano. Serve immediately.

Brussels Sprouts Hash
Give brussels sprouts the respect they deserve.

Ingredients
  • 6 slices bacon, cut into 1" pieces
  • ½ onion, chopped
  • 1 lb. brussels sprouts, trimmed and quartered
  • kosher salt
  • Freshly ground black pepper
  • ¼ tsp. red pepper flakes
  • 2-3 tbsp. water
  • 2 garlic cloves, minced
  • 4 large eggs
Instructions
  1. In a large skillet over medium heat, fry bacon until crispy. Turn off heat and transfer bacon to a paper towel-lined plate. Keep most of bacon fat in skillet, removing any black pieces from the bacon.
  2. Turn heat back to medium and add onion and brussels sprouts to the skillet. Cook, stirring occasionally, until the vegetables begin to soften and turn golden. Season with salt, pepper, and red pepper flakes.
  3. Add 2 tablespoons of water and cover the skillet. Cook until the Brussels sprouts are tender and the water has evaporated, about 5 minutes. (If all the water evaporates before the Brussels sprouts are tender, add more water to the skillet and cover for a couple minutes more.) Add garlic to skillet and cook until fragrant, 1 minute.
  4. Using a wooden spoon, make four holes in the hash to reveal bottom of skillet. Crack an egg into each hole and season each egg with salt and pepper. Replace lid and cook until eggs are cooked to your liking, about 5 minutes for a just runny egg. Sprinkle cooked bacon bits over the entire skillet. Serve warm.

Jalapeno Popper Burger Taquitos
Fusion cuisine at its finest. Satisfyingly crunchy, full of burger flavours and wonderful oozy cream cheese. And some other cheese. We love cheese!

Ingredients
  • 1 tbsp oil
  • 6 rashers bacon
  • 1 onion, finely diced
  • 3 cloves garlic, finely diced
  • 4 jalapenos, finely diced
  • 2 lb beef mince
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 8 oz cream cheese
  • 10 regular tortillas
  • Grated red cheddar
Instructions
  1. Heat the oil and fry the bacon until it's looking crispy, dark and golden. Add the onion and cook for around 3 minutes, until soft.
  2. Add the garlic and cook for a further 30 seconds or so then add the diced jalapenos and the beef mince, then stir in the spices and seasoning and the cream cheese. Allow the mixture to cool a little then spoon it onto the tortillas, sprinkle with cheese and roll up tightly.
  3. Fry in batches in hot oil until the taquitos are golden brown and crispy.
  4. Enjoy!

Cheese Stuffed Roll
Enjoy warm, chewy bread rolls stuffed with cheese, tomatoes and tons of flavor.

Ingredients
  • 2 teaspoons active dry yeast
  • 1 teaspoon olive oil
  • ¾ cup water
  • ½ teaspoon sugar
  • ¼ cup milk
  • 3 cups flour
  • 2 cups grated mozzarella cheese
  • 1 cup cream cheese
  • 1 cup chopped cherry tomatoes
  • Basil leaves, to taste
  • Salt and pepper
  • 1 egg, beaten
  • 1 tablespoon oregano
Instructions
  1. In a mixing bowl, combine the yeast, olive oil, water, sugar and milk.
  2. Add flour and a pinch of salt, and stir to combine. Once a dough begins to form, continue to mix by hand. Cover and leave the dough to rest for 30 minutes.
  3. Preheat oven to 350 degrees.
  4. In a bowl, combine the mozzarella cheese, cream cheese, cherry tomatoes and basil. Season with salt and pepper.
  5. Lay out dough on a floured surface, and divide into 8 small portions. Flatten each portion slightly and fill with the cheese and tomato mixture. Close the dough around the filling, forming a ball, and place on a baking pan. Brush rolls with egg and sprinkle with oregano.
  6. Bake for approximately 30 minutes, or until the rolls are golden brown.
