CHICKEN
  • 1 ½ cups panko breadcrumbs (75 g)
  • ¼ cup parmesan cheese, grated (30 g)
  • 1 teaspoon salt, plus more for taste
  • 1 teaspoon pepper, plus more for taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 chicken breasts
  • 1 cup all purpose flour (125 g)
  • 3 large eggs, beaten
  • 2 tablespoons olive oil
DRESSING
  • ⅔ cup sour cream (155 g)
  • ⅓ cup buttermilk (80 mL)
  • ¼ cup parmesan cheese, grated (30 g)
  • 1 tablespoon garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • salt, to taste
  • freshly ground black pepper, to taste
SALAD
  • 16 oz mixed greens (455 g)
  • 2 cups mixed cherry tomato, halved (400 g)
  • ½ red onion, thinly sliced
Instructions
  1. Preheat the oven to 425˚F (220˚C).
  2. In a medium bowl, combine the panko bread crumbs, Parmesan cheese, salt, pepper, paprika, and garlic powder. Mix together with a fork.
  3. Season the chicken breasts on both sides with pepper and salt to taste.
  4. Add the flour and eggs to 2 separate medium bowls. Dip the chicken breasts in the flour and shake off the excess. Then, dip in the eggs. Finally, dip in the bread crumb mixture. Make sure the chicken is well-coated.
  5. Place the chicken breasts on a baking sheet and drizzle with the olive oil.
  6. Bake for 25 minutes, or until deep golden brown and a meat thermometer inserted in the thick part of a breast registers at least 165˚F (75˚C).
  7. While the chicken is cooking, make the dressing: In a liquid measuring cup or small bowl, combine the sour cream, buttermilk, Parmesan, garlic, lemon juice, apple cider vinegar, olive oil, salt, and pepper. Stir to combine. If you prefer a thinner dressing, add a few more splashes of buttermilk.
  8. To assemble the salad, add the mixed greens, cherry tomatoes, and red onion to a large bowl. Drizzle about ½ the dressing over the salad and toss to combine.
  9. Slice the chicken, then serve on top of the salad and drizzle with more dressing.

  • 2 teaspoons salt

  • 2 teaspoons dried rosemary
  • 2 teaspoons onion powder
  • 2 cups all purpose flour (250 g)
  • 6 large eggs, beaten
  • 3 cups plain breadcrumbs (345 g)
  • 9 bell peppers, halved lengthwise, seeds and ribs removed
  • 3 cups marinara sauce (720 mL)
  • 1 cup parmesan cheese, grated (110 g)
  • 32 oz fresh mozzarella cheese, sliced (905 g)
Instructions
  1. Preheat the oven to 400°F (200°C). Set a wire rack over a baking sheet. Grease another baking sheet with nonstick spray.
  2. In a medium bowl, combine the chicken, salt, pepper, oregano, garlic powder, rosemary, and onion powder, and toss until evenly coated.
  3. Add the flour, eggs, and bread crumbs to 3 separate medium bowls. Coat a few pieces of chicken at a time in the flour, then the eggs, then the bread crumbs. Once coated, transfer to the wire rack.
  4. Bake for 25 minutes, or until golden brown.
  5. Arrange the bell peppers, cut-side up, on the greased baking sheet.
  6. Spoon half of the marinara sauce into the peppers. Sprinkle half of Parmesan over the marinara. Add a few pieces of chicken to each pepper, then spoon over the rest of the marinara sauce, and sprinkle with the rest of the Parmesan. Top each pepper with couple slices of mozzarella.
  7. Bake for 25 minutes, or until the cheese is melted and the peppers have softened.
  8. Serve immediately.

HAINANESE CHICKEN
  • 3 lb whole chicken, giblets removed (1.3 kg)
  • ¼ cup kosher salt, divided (60 g)
  • 4 inch pieces fresh ginger, peeled and cut into ¼-inch (6 mm) slices
  • 1 bunch fresh scallion
  • 1 gal cold water, plus more as needed (3.7 L)
  • 2 tablespoons sesame oil
HAINANESE RICE
  • ¼ cup sesame oil (60 mL)
  • 2 tablespoons chicken fat, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon kosher salt
  • 2 cups long grain rice, rinsed and drained (400 g)
  • 2 cups reserved chicken poaching broth (480 mL)
CHILI SAUCE
  • 2 tablespoons sambal
  • 2 tablespoons sriracha
  • 2 teaspoons sugar
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon lime juice
  • 2 tablespoons reserved chicken poaching broth
GINGER GARLIC SAUCE
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons garlic, finely minced
  • kosher salt, to taste
  • 3 tablespoons peanut oil
  • 1 tablespoon rice vinegar
SOY DIPPING SAUCE
  • reserved fried garlic and ginger
  • 1 tablespoon oyster sauce
  • 3 tablespoons dark sweet soy sauce
  • 1 tablespoon light soy sauce
  • 2 tablespoons reserved chicken poaching broth
  • 2 cucumbers, thinly sliced, for serving
  • 1 bunch fresh cilantro, for serving
Instructions
  1. To clean the chicken, rub all over with a handful of kosher salt, getting rid of any loose skin. Rinse the chicken well inside and out. Pat dry with paper towels.
  2. Remove any excess fat from the chicken and set aside for later.
  3. Season the chicken generously with salt. Stuff the chicken cavity with the ginger slices and scallions.
  4. Place the chicken in a large stock pot, cover with cold water by 1 inch (2 cm), and season with salt to taste.
  5. Bring to a boil over high heat, then immediately reduce the heat to low to maintain a simmer. Cover and cook for about 30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C). Remove the pot from the heat.
  6. Remove the chicken from the pot, reserving the poaching liquid for later, and transfer to an ice bath for 5 minutes to stop the cooking process and to keep the chicken skin springy. Discard the ginger and green onion.
  7. After it’s cooled, pat the chicken dry with paper towels and rub all over with sesame oil. This will help prevent the chicken from drying out.
  8. In a large wok or skillet, heat ¼ cup (60 ml) of sesame oil over medium-high heat. Add 2 tablespoons of reserved chopped chicken fat, the garlic, ginger, and salt, and fry until aromatic, about 10 minutes.
  9. Reserve ¼ of the fried garlic mixture, then add the rice to the remaining fried garlic and stir to coat. Cook for 3 minutes.
  10. Transfer the rice to a rice cooker and add 2 cups (480 ml) of reserved poaching broth. Steam the rice for 60 minutes, or until tender.
  11. While the rice is cooking, carve the chicken for serving.
  12. Make the chili sauce: combine the sambal, Sriracha, sugar, garlic, ginger, lime juice, and chicken broth in a small bowl and stir to incorporate.
  13. Make the ginger garlic sauce: in a small bowl, combine the ginger, garlic, salt, peanut oil, and rice vinegar, and stir to incorporate.
  14. Make the soy sauce: in a small bowl, combine the reserved fried garlic and ginger with the oyster sauce, dark soy sauce, light soy sauce, and chicken broth, and stir to incorporate.
  15. Serve the sliced chicken with the rice, dipping sauces, sliced cucumbers, and fresh cilantro.

  • 15 oz black beans, rinsed and drained (425 g)
  • ½ cup dark cocoa powder (60 g)
  • ⅔ cup almond butter, or nut butter of choice (160 g)
  • 1 cup almond flour (95 g)
  • ¼ teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1 tablespoon pure vanilla extract
  • ¼ cup dark chocolate chips (40 g)
Instructions
  1. Preheat the oven to 350°F (180°C). Grease and line a 8-inch (20 cm) square baking dish with parchment paper.
  2. In a food processor, combine the bananas, black beans, cocoa powder, almond butter, almond flour, salt, baking powder, and vanilla. Pulse until smooth.
  3. Pour the batter into the prepared baking dish. Sprinkle the dark chocolate chips over the top.
  4. Bake for 25 minutes, or until the brownies are set.
  5. Let cool, then slice into 12 pieces. Enjoy the brownies immediately, or store in the fridge for 1 week or in the freezer for up to 1 month.

  • 2 lb frozen tater tot, thawed (910 g)
  • 1 cup shredded cheese blend (100 g)
  • 9 slices cheddar cheese
  • 10 large eggs
  • 1 teaspoon salt

  • ½ teaspoon paprika
  • 6 strips bacon, cooked and chopped
  • 1 cup whole milk (240 mL)
  • 6 slices ham, folded in half
  • ½ zucchini, sliced
  • 9 cherry tomatoes, halved
Instructions
  1. Preheat the oven to 350°F (180°C).
  2. Add the tater tots to a 10-inch (25 cm) springform pan. Use a flat-bottomed measuring cup to flatten the tots against the sides and bottom of the pan, creating a ½-inch (1 cm) thick tater tot crust.
  3. Spread the shredded cheese evenly over the bottom of the crust.
  4. Arrange cheddar slices along the walls and base, overlapping slightly.
  5. Bake for 30 minutes, or until the crust is lightly golden brown.
  6. In a large bowl, whisk together the eggs, salt, pepper, paprika, bacon, and milk.
  7. When the crust is par-baked, remove from the oven and place the ham slices along the wall and base of the crust, overlapping slightly.
  8. Pour the egg mixture into the center.
  9. Add zucchini slices and cherry tomato halves on top.
  10. Bake for 1 hour, or until the center is set.
  11. Slice and serve warm.

  • 4 lb russet potato, washed and peeled (1.8 kg)
  • 1 tablespoon salt, plue 1 teaspoon, divided
  • ½ cup all-purpose flour (60 g)
  • 1 cup shredded parmesan cheese (100 g)
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon black pepper
SAUSAGE FILLING
  • 1 medium white onion, chopped
  • 1 yellow bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 lb ground sausage (455 g)
  • 2 teaspoons paprika
  • ½ teaspoon cayenne pepper
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
EGG FILLING
  • 1 tablespoon olive oil
  • 5 oz fresh spinach (140 g)
  • 6 large eggs
  • 8 strips bacon, cooked, chopped
  • ½ teaspoon pepper
  • 1 teaspoon salt
  • 4 tablespoons shredded cheddar cheese
  • 3 qt oil, for frying (2.8 L)
Instructions
  1. Add the potatoes to a large pot. Cover the potatoes with cold water and season with 1 tablespoon of salt. Bring to a boil over high heat and cook until the potatoes are fork tender, about 20 minutes.
  2. Make the sausage filling: Add the onion to a large skillet over medium heat and cook until translucent, about 3 minutes.
  3. Add the peppers and cook until slightly tender, about 6 minutes.
  4. Add the garlic and sausage. Cook until the sausage is browned, about 4 minutes.
  5. Season with the paprika, cayenne, pepper, thyme, and salt and cook for another 5 minutes until seasoning is evenly distributed. Remove the pan from the heat.
  6. Make the egg filling: Heat the olive oil in a large skillet over medium heat, then sauté the spinach until fully wilted, about 5 minutes.
  7. Add the eggs and scramble until cooked, about 3 minutes.
  8. Add the bacon, pepper, and salt and mix to incorporate. Remove the pan from the heat.
  9. Transfer the potatoes to a colander and run under cold water to cool. Pat dry.
  10. Using the large holes on a cheese grater, shred the potatoes into a large bowl.
  11. Add the flour, Parmesan, onion powder, garlic powder, pepper, and salt. Mix together thoroughly.
  12. Transfer half of the hash brown mixture to a greased 13” x 18” (33 cm x 45 cm) baking sheet and spread evenly with a spatula.
  13. On the left side of the tray, spoon the egg filling into 4 evenly spaced piles. On the right side of the tray, spoon the sausage filling into 4 evenly spaced piles. Top each pile of egg filling with a tablespoon of shredded cheddar cheese.
  14. Top the piles of filling with the remaining hash brown mixture and use a spatula to carefully press down the hash browns, sealing the filling inside. Use the tip of the spatula to delineate between each pocket of filling.
  15. Freeze for at least 2 hours.
  16. In a large pot, heat oil until it reaches 380˚F (195˚C).
  17. Remove the hash browns from the freezer and use a sharp knife to cut and separate each pocket.
  18. Fry the hash brown pockets in batches for 5-7 minutes, or until browned on both sides. Drain the pockets on a wire rack set over a baking sheet lined with paper towels.

Instructions
  1. Add the butter and peaches to a pan over medium-low heat and cook until the butter has melted and peaches are glossy.
  2. In a small bowl mix together the brown sugar, cinnamon, 1 tablespoon flour, and nutmeg. Sprinkle the sugar mixture over the peaches. Mix to combine and stir for 5-10 minutes until the mixture starts to thicken. Remove from heat and set aside to cool.
  3. On a floured surface, roll out the pizza dough to ¼-inch (6-mm) thick. Cut the dough into 20 rectangles.
  4. Spoon 1 tablespoon of the peach filling onto a cut piece of dough. Fold the dough over lengthwise and crimp the edges so the filling is well sealed. Repeat with remaining dough and filling.
  5. Heat oil in a large pot to 350°F (180°C).
  6. Working in batches, fry beignets for 3-4 minutes each, flipping halfway, until puffy and golden brown.
  7. Transfer beignets to a paper towel-lined plate or wired rack to drain.
  8. Dust with powdered sugar.

Ingredients
  • 3 cups sweet glutinous rice, rinsed (600 g)
  • 3 ¾ cups water (900 mL)
  • 3 mangoes
  • 1 ¼ cups coconut cream, unsweetened (300 mL)
  • 4 tablespoons sugar
  • 1 teaspoon salt
Instructions
  1. In a large pot over high heat, combine the rice and water. Cover, bring to a boil, then reduce the heat to low. Stir, re-cover and cook for 20 minutes. Remove the pot from the heat and set aside.
  2. On a cutting board, cut a mango ¼-inch (6-mm) away from the stem on both sides. Take one side of the mango and make 3-4 cuts vertically and horizontally to create a grid. Put pressure on the skin side of the mango so the mango cubes pop out. Cut off all of the cubes of mango. Repeat with the rest of the mangoes. Set aside until ready to use.
  3. In a medium saucepan over high heat, combine the coconut cream, sugar, and salt. Bring to a boil. Reduce the heat to low and cover for 10 minutes. Once sauce has thickened slightly, remove from the heat and set aside.
  4. Line a small bowl with plastic wrap. Scoop about 2 tablespoons of rice onto the plastic wrap. Push the rice against the sides of the bowl to create an even layer. Place 3 cubes of mango inside the rice. Using the plastic wrap, form the rice into a ball and twist the plastic wrap tightly. Unwrap and repeat with the rest of the rice and mango.
  5. Arrange the rice balls in a pile and pour the coconut cream sauce over them. Serve immediately.

  • 12 sticks mozzarella cheese, halved crosswise
  • 1 cup all-purpose flour (125 g)
  • 1 cup plain breadcrumbs (115 g)
  • oil, for frying
  • marinara sauce, for serving
  • fresh parsley, chopped, for garnish
Instructions
  1. Add the potatoes to a large pot with enough cold water to cover them. Bring to a boil over high heat and cook until tender when pierced with a fork, about 30 minutes.
  2. Drain the potatoes and transfer to a large bowl. Use a potato masher to mash the potatoes until there are no large chunks left.
  3. Add the garlic, parsley, Parmesan cheese, 1 beaten egg, salt, and pepper. Mix well.
  4. Take a spoonful of potatoes and form into a patty.
  5. Place a cheese stick in the middle and wrap the potato around the cheese until it is evenly covered.
  6. Arrange the formed croquettes on a parchment-lined baking sheet and freeze for 30 minutes.
  7. Place the flour, 3 remaining eggs, and bread crumbs in 3 separate shallow bowls. Dredge the croquettes in the flour, shaking off any excess; then dredge in the egg and the bread crumbs.
  8. Heat the oil in a large pot until it reaches 350°F (180°C). Fry the croquettes for 3 minutes, or until golden brown.
  9. Transfer the croquettes to a wire rack set over paper towels to drain the excess oil.
  10. Let cool for a few minutes as they will be HOT.
  11. Garnish with grated Parmesan cheese and parsley and serve with marinara sauce alongside.

  • 1 teaspoon salt
  • ½ cup unsalted butter, melted (115 g)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour (155 g)
  • ½ teaspoon baking soda
  • 4 oz milk or semi-sweet chocolate chunks (110 g)
  • 4 oz dark chocolate chunk, or your preference (110 g)
Instructions
  1. In a large bowl, whisk together the sugars, salt, and butter until a paste forms with no lumps.
  2. Whisk in the egg and vanilla, beating until light ribbons fall off the whisk and remain for a short while before falling back into the mixture.
  3. Sift in the flour and baking soda, then fold the mixture with a spatula (Be careful not to overmix, which would cause the gluten in the flour to toughen resulting in cakier cookies).
  4. Fold in the chocolate chunks, then chill the dough for at least 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be.
  5. Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  6. Scoop the dough with an ice-cream scoop onto a parchment paper-lined baking sheet, leaving at least 4 inches (10 cm) of space between cookies and 2 inches (5 cm) of space from the edges of the pan so that the cookies can spread evenly.
  7. Bake for 12-15 minutes, or until the edges have started to barely brown.
  8. Cool completely before serving.
