Keto Fat Bombs

Ingredients
  • 8 oz. cream cheese, softened to room temperature
  • ½ c. peanut butter
  • ¼ c. coconut oil, plus 2 tbsp.
  • 1 tsp. kosher salt
  • 1 c. dark chocolate chips
Instructions
  1. Line a small baking sheet with parchment paper. In a medium bowl, combine cream cheese, peanut butter, ¼ c coconut oil, and salt. Using a hand mixer, beat mixture until fully combined, about 2 minutes. Place bowl in freezer to firm up slightly, 10 to 15 minutes.
  2. When peanut butter mixture has hardened, use a small cookie scoop or spoon to create golf ball sized balls. Place in the refrigerator to harden, 5 minutes.
  3. Meanwhile, make chocolate drizzle: combine chocolate chips and remaining coconut oil in a microwave safe bowl and microwave in 30 second intervals until fully melted. Drizzle over peanut butter balls and place back in the refrigerator to harden, 5 minutes. Serve.
  4. To store, keep covered in refrigerator.

Ingredients
  • 12 slices bacon, cut into 1" squares
  • ¼ c. lime juice
  • 2 tbsp. sriracha
  • 1 tbsp. brown sugar
  • Ranch, for dipping
Instructions
  1. Preheat oven to 375° and line a medium cooking sheet with parchment paper. Lay bacon pieces in a single layer on the baking sheet.
  2. In a small bowl, combine Sriracha, lime juice and sugar in a bowl and whisk to combine. Brush onto bacon pieces. Place in the oven and bake until bacon is crisp, 10 to 12 minutes.
  3. Let cool slightly, then serve with ranch dressing on the side, for dipping.

Ingredients
  • 2 tbsp. butter
  • 1 onions, chopped
  • 2 cloves garlic, minced
  • ¼ c. brown sugar
  • 2 tbsp. maple syrup
  • 2 tbsp. apple cider vinegar
  • 1 tsp. chili powder
  • 20 large brussels sprouts, halved
  • 2 tbsp. olive oil
  • kosher salt
  • Freshly ground black pepper
  • 6 slices thick bacon
  • 7 oz. wheel brie, cut into squares
Instructions
  1. Preheat oven to 375°. In a large skillet over medium heat, melt butter. Add onion and cook until very soft, about 8 minutes. Stir in garlic and cook until fragrant, about 1 minute. Add brown sugar, maple syrup, apple cider vinegar, and chili powder, then season with salt and pepper. Cook until mixture has reduced and onions are jammy, about 10 minutes more. Remove from heat.
  2. On a large rimmed baking sheet, toss brussels sprouts with olive oil and season with salt and pepper. Cook until just tender, about 20 minutes. Let cool slightly.
  3. In a medium skillet over medium heat, cook bacon until crispy, about 8 minutes. Drain on paper towels, then chop into squares.
  4. To assemble slider, top the cut side of one brussels sprout half with a piece of bacon. Place a piece of brie on top then dollop a small amount of onion jam on top of brie. Place a second brussels sprout half on top, cut side-down, then secure the sandwich with a toothpick. Repeat with remaining ingredients.

Ingredients
FOR THE COOKIES
  • 1 c. sugar
  • ½ c. (1 stick) Butter, softened
  • 4 oz. cream cheese, softened
  • 1 large egg
  • 1 tbsp. lemon juice
  • 1 tbsp. lemon zest
  • 2½ c. all-purpose flour
  • 1 tsp. baking soda
  • 2 tsp. cornstarch
  • ¼ tsp. kosher salt
  • 2 c. blueberries
FOR THE LEMON GLAZE
  • 1 c. powdered sugar
  • 1 tbsp. milk
  • 2 tbsp. lemon juice
  • Zest of 1 lemon
Instructions
  1. Heat the oven to 350°. Line a baking sheet with parchment paper. In a large bowl, cream together the sugar, butter, and cream cheese until fluffy. Scrape down the sides, and add the egg and lemon juice and zest. Beat until combined.
  2. In a medium bowl, combine the flour, baking soda, cornstarch, and salt. Beat into the wet mixture just until combined. Gently fold in the blueberries.
  3. Drop tablespoon-sized mounds of dough onto the prepared baking sheet. Bake for 8 to 10 minutes, until the edges are set. Let cool.
  4. Meanwhile, make the glaze: Whisk together the powdered sugar, milk, lemon juice and zest. Drizzle on top of the cookies.

Ingredients
  • 1 box brownie mix, plus ingredients called for on box
  • 9 Samoa cookies
  • 1½ c. Toasted shredded coconut
  • 1½ c. Caramel
  • Melted chocolate, for drizzling
Instructions
  1. Preheat oven to 350° and line a 8"-x-8” square pan with parchment paper. Prepare brownie batter according to package instructions. Pour batter into the prepared pan, then place Samoas in an even layer. Press down on cookies so that the batter covers them almost completely.
  2. Bake until a toothpick inserted into the middle comes out mostly clean, about 35 minutes. Let cool completely.
  3. Meanwhile, make topping: in a small bowl mix together toasted coconut and caramel until combined. Spread all over brownies. Drizzle with chocolate and place in the refrigerator to set, at least one hour.
  4. Cut into squares and serve.

Tuscan Butter Shrimp

Ingredients
  • 2 tbsp. extra-virgin olive oil
  • 1 lb. shrimp, peeled, deveined, and tails removed
  • kosher salt
  • Freshly ground black pepper
  • 3 tbsp. unsalted butter
  • 3 cloves garlic, minced
  • 1½ c. halved cherry tomatoes
  • 2 c. baby spinach
  • ½ c. heavy cream
  • ¼ c. freshly grated Parmesan
  • ¼ c. basil, thinly sliced
  • Lemon wedges, for serving (optional)
Instructions
  1. In a large skillet over medium-high heat, heat oil. Season shrimp all over with salt and pepper. When oil is shimmering but not smoking, add shrimp and sear until underside is golden, about 2 minutes, then flip until opaque. Remove from skillet and set aside.
  2. Reduce heat to medium and add butter. When butter has melted, stir in garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and season with salt and pepper. Cook until tomatoes are beginning to burst then add spinach and cook until spinach is beginning to wilt.
  3. Stir in heavy cream, parmesan and basil and bring mixture to a simmer. Reduce heat to low and simmer until sauce is slightly reduced, about 3 minutes.
  4. Return shrimp to skillet and stir to combine. Cook until shrimp is heated through, garnish with more herbs and squeeze lemon on top before serving.

  • 2 ripe avocados
  • ¾ c. heavy cream
  • ½ c. chocolate chips, melted
  • ¼ c. honey
  • 3 tbsp. cocoa powder
  • 1 tsp. vanilla
  • ½ tsp. kosher salt
  • ¼ c. Chocolate curls, for garnish
Instructions
  1. Combine all ingredients except chocolate curls in food processor and process until smooth. Pour into glasses and refrigerate 30 minutes to an hour. Garnish with chocolate curls and serve.

Ingredients
  • 1 tbsp. sesame oil
  • 2 cloves garlic, minced
  • ¼ c. soy sauce
  • 3 tbsp. peanut butter
  • 2 tbsp. honey
  • 1 tbsp. sriracha
  • 1 tbsp. lime juice
  • 2 c. shredded rotisserie chicken
  • 2 c. Shredded Monterey Jack
  • 5 c. tortilla chips
  • 4 green onions, sliced
  • ¼ c. roasted peanuts, chopped
Instructions
  1. Preheat oven to 425° and line a large baking sheet with foil. In a medium to large skillet over medium heat, heat sesame oil. Add garlic and cook until fragrant, about 1 minute. Pour in soy sauce and bring to simmer, then whisk in peanut butter, honey, sriracha, and lime juice. Bring mixture to a simmer then turn off heat. Add chicken and stir until chicken is fully coated.
  2. Spread about half of chips on baking sheet then top with chicken. Sprinkle about half of cheese on top. Repeat.
  3. Bake until cheese has melted and everything is heated through, about 10 minutes.
  4. Garnish with green onions and peanuts.

  • 2 tbsp. extra-virgin olive oil
  • 1 medium yellow onion, chopped
  • 1 jalapeno, minced
  • 1 lb. ground beef
  • kosher salt
  • 2 tbsp. Taco Seasoning
  • 1½ c. grated Monterey jack, divided
  • 1½ c. grated cheddar, divided
  • ¼ c. sour cream
  • can fire-roasted crushed tomatoes
  • 4 medium zucchini, sliced ⅛” thick
  • Cilantro, chopped, for garnish
Instructions
  1. Preheat oven to 400 degrees F.
  2. In a large skillet over medium heat, heat olive oil. Add onion and cook until tender, 5 minutes. Add jalapeño and cook 2 minutes more. Add ground beef and cook until no longer pink, 8 minutes, then drain the fat. Season with salt, mix in the taco seasoning, and add ½ cup of both Monterey Jack and cheddar, then set aside.
  3. Spread a thin layer of crushed tomatoes into the bottom of a 9"-x-13” baking dish. On each slice of zucchini, spoon a thin layer of sour cream and crushed tomatoes. Top with a layer of beef mixture, and sprinkle with Monterey Jack and cheddar. Roll up and place seam side down in baking dish. Repeat to fill the dish. Sprinkle top with remaining cheese.
  4. Bake until zucchini is tender and cheese is melted, about 30 minutes. Garnish with cilantro.

Ingredients
  • 2 (11-oz) tubes refrigerated bread dough
  • 3 tbsp. olive oil, divided
  • 2 tbsp. red wine vinegar, divided
  • 1 tsp. Italian seasoning, divided
  • ¼ lb. sliced provolone
  • ½ lb. salami
  • ½ lb. deli-sliced ham
  • ½ lb. pepperoni
  • 1½ c. shredded iceberg lettuce
  • 2 large beefsteak tomatoes, sliced
  • 1 tsp. Toasted sesame seeds
Instructions
  1. Preheat oven to 350 degrees F. Grease a bundt pan with cooking spray. Place bread dough into the bottom of the pan and pinch all ends together to form a single ring. Bake until golden brown and cooked through, about 25-30 minutes. Let cool for 5 minutes, then invert onto cooling rack to cool completely.
  2. Place baked bread on a serving platter and slice in half. Drizzle the bottom half with about 1 tablespoon each of olive oil and red wine vinegar. Sprinkle with about ¼ teaspoon of Italian seasoning. Place provolone slices on top of bread, followed by meats, lettuce and tomatoes. Drizzle tomatoes with another tablespoon each of olive oil and vinegar and sprinkle with the remaining Italian seasoning.
  3. Place the top half of the baked bread on top. Brush with remaining olive oil and sprinkle with sesame seeds. Slice and serve.
