Cheeseburger Tot Sliders

Cheeseburger Tot Sliders
Why have a burger with some tots on the side when you can just build a burger with tots as the bun! These mini tot sliders are first and foremost insanely cute. Believe it or not, they are actually pretty easy to make, too. But most important—they are extremely delicious. If you serve your friends these sliders when they come over for the big game, they will lose their minds!

Ingredients
  • 32 frozen coin-shape tots
  • 2 tbsp. vegetable or peanut oil
  • ½ lb. 85% lean ground beef
  • Kosher salt
  • Freshly ground black pepper
  • 4 slices American cheese
  • Ketchup, for topping
  • Mustard, for topping
  • 16 gherkins
Instructions
  1. Preheat the oven to 450°.
  2. Place the tots on a rimmed baking sheet and drizzle them with the oil. Toss the tots gently to coat evenly with the oil, then spread them out in an even layer. Bake, undisturbed, until they are browned on the bottom, about 15 minutes. Flip the tots with a spatula and bake until they are browned and crisp on top, about 10 minutes.
  3. Meanwhile, form and cook the burgers: Line a clean work surface with a sheet of wax paper and put the ground beef on top. Put another sheet of wax paper of the beef and press it down into a 4-by 6-inch rectangle. Remove the top piece of wax paper and season the meat with salt and pepper to taste. Cut the meat into sixteen 1- by 1½-inch rectangles.
  4. Break each slice of cheese into quarters, and fold each quarter over to make 16 pieces of double-thick cheese. Set aside.
  5. Cook the burgers in a large nonstick frying pan over high heat, until browned on one side, about 5 minutes. Flip the burgers, lay a piece of double-thick cheese on each, and cook until the burgers are cooked through and the cheese has melted, about 5 minutes more. (You may have to do this in two batches if you don't have a big enough pan.)
  6. Remove the tot "buns" from the oven and top half with the cooked cheeseburger patties. Squeeze a tiny bit of ketchup and mustard onto each cheeseburger, then top with the gherkin. Finally, poke a food pick through the center of each of the remaining tot buns. Place one on top of a cheeseburger stack and stab the food pick all the way down through the center to make a sandwich. Repeat with the remaining tot buns, toppings, and cheeseburgers.
  7. Serve hot. If not serving immediately, reheat them on a baking sheet in the oven at 200° for 5 minutes.

Big Mac Egg Rolls

Big Mac Egg Rolls
Complete with Mac Sauce.

Ingredients
FOR THE EGG ROLLS
  • 1 lb. ground beef
  • 2 tbsp. yellow mustard
  • 2 tbsp. ketchup
  • 1 tsp. Worcestershire sauce Worchestershire sauce
  • Kosher salt
  • Freshly ground black pepper
  • 12 egg roll wrappers
  • 12 slices American cheese
  • ½ c. chopped dill pickles
  • 3 tbsp. white sesame seeds
FOR THE SAUCE
  • ½ c. mayonnaise
  • 2 tbsp. yellow mustard
  • 1 tbsp. ketchup
  • 1 tbsp. apple cider vinegar
  • 1 tsp. paprika
Instructions
  1. In a medium skillet over medium heat, combine ground beef with mustard, ketchup, and Worcestershire sauce. Season with salt and pepper and cook until no pink remains, 8 to 10 minutes. Remove from heat and drain.
  2. Place an egg roll wrapper on a clean surface in a diamond shape place a folded slice of cheese in the center. Top with approximately 3 tbsp cooked beef and pickles. Fold up bottom half and tightly fold in sides. Gently roll, then seal fold with a couple drops of water.
  3. In a large skillet over medium heat, heat oil (it should reach 1" up the side of pan) until it starts to bubble. Add egg rolls and fry until golden, 1 minute per side. Transfer to a paper towel-lined plate and top immediately with sesame seeds.
  4. Make sauce: In a small bowl, whisk together mayonnaise, mustard, ketchup, vinegar and paprika until smooth. Serve with egg rolls.

Keto Cheesecake

Ingredients
  • Cooking spray, for pan
  • ½ c. almond flour
  • ½ c. coconut flour
  • ¼ c. shredded coconut
  • ½ c. (1 stick) butter, melted
  • 3 (8-oz.) blocks cream cheese, softened to room temperature
  • 16 oz. sour cream, at room temperature
  • 1 tbsp. Stevia
  • 2 tsp. pure vanilla extract
  • 3 large eggs, at room temperature
  • sliced strawberries, for serving
Instructions
  1. Preheat oven to 300°. Grease an 8 or 9-inch springform pan, and cover the bottom and edges with foil. In a medium bowl, mix together the flours, coconut, and butter. Press the crust into the bottom and a little up the sides of the prepared pan. Place the pan in the fridge while you make the filling.
  2. In a large bowl, beat the cream cheese and sour cream together, then beat in the stevia and vanilla. Add the eggs one at a time, mixing after each addition. Spread the filling evenly over the crust.
  3. Place pan in a water bath, then bake for 1 hour to 1 hour 20 minutes, until it only slightly jiggles in the center. Turn oven off, but leave the cake in the oven with the door slightly ajar to cool slowly for an hour.
  4. Remove pan from water bath and take off foil then let chill in the fridge for at least five hours or overnight. Slice and garnish with strawberries.

Ingredients
  • 1¼ c. water
  • ¾ c. vodka
  • 1 package strawberry jell-o (3-oz)
  • 1 container Cool Whip, thawed
  • 1 pint strawberries, hulled
Instructions
  1. Pour water into small saucepan and bring to a boil. Once boiling, remove from heat and add Jell-o packet, stirring until dissolved. Add vodka. Pour into plastic shot glasses and refrigerate until set, about 1 hour.
  2. Top with a dollop of Cool Whip, then place a strawberry on top, pointed-end up. Top with a small dot of whipped cream, to resemble Santa’s hat. Serve.

Ingredients
  • 4 bell peppers, halved and cored
  • 1 tbsp. extra-virgin olive oil
  • kosher salt
  • Freshly ground black pepper
  • ½ c. pizza sauce
  • 2 c. shredded mozzarella
  • ½ c. finely grated Parmesan
  • ⅓ c. mini pepperoni
  • 1 tbsp. chopped parsley
Instructions
  1. Preheat oven to 350°.
  2. On a sheet tray, drizzle peppers with olive oil and season witih salt and pepper. Spoon sauce onto each pepper half. Sprinkle with mozzarella and Parmesan and top with pepperoni. Bake for 10-15 minutes, until the peppers are crisp-tender and the cheese is melted.
  3. Garnish with parsley.

Hot Fudge Cheesecake Bars

Ingredients
FOR THE CRUST
  • 24 Oreos, crushed
  • 6 tbsp. butter, melted
  • Pinch kosher salt
FOR THE CHEESECAKE
  • 2 (8-oz) cream cheese bars, softened
  • ½ c. granulated sugar
  • ¼ c. light brown sugar
  • ¼ c. cocoa powder
  • 2 eggs
  • 1 tsp. pure vanilla extract
  • pinch of salt
  • 1 c. hot fudge sauce, plus more for garnish
  • ½ c. chopped Oreos, for garnish
Instructions
  1. Preheat oven to 325° and grease an 8"-x-8” pan with cooking spray. Make crust: In a medium bowl, combine crushed Oreos with butter and salt and mix until combined. Press tightly into prepared pan.
  2. Make filling: In a large bowl, beat together cream cheese, granulated sugar, light brown sugar, and cocoa powder. Add eggs one at a time, then add vanilla and salt and beat until combined. Fold in hot fudge sauce. Pour mixture over crust.
  3. Bake until only slightly jiggly, about 40 minutes. Let cool slightly, then refrigerate until firm, 3 hours, or up to overnight.
  4. Drizzle with more hot fudge and sprinkle with Oreos. Slice into bars and serve.

Ingredients
  • 3 oz. white chocolate liqueur
  • 2 oz. Vanilla Vodka
  • 2 tbsp. heavy cream
  • ½ c. ice
  • 1 lemon wedge, for rim
  • ⅓ c. white sanding sugar, for rim
Instructions
  1. Using a lemon wedge, wet the rim of your martini glass. Dip in sanding sugar until rim is coated.
  2. In a cocktail shaker, combine white chocolate liqueur with vanilla vodka and heavy cream.
  3. Fill shaker with ice and shake well.
  4. Strain mixture into prepared glass and serve.

  • 1 lb. ground chicken
  • ½ c. breadcrumbs
  • ¼ c. grated Parmesan, plus more for garnish
  • 3 tbsp. Freshly Chopped Parsley
  • 4 cloves garlic, chopped
  • 1 large egg
  • kosher salt
  • Freshly ground black pepper
  • 3 tbsp. extra-virgin olive oil
  • 1 28-oz. can crushed tomatoes
  • 1½ c. shredded mozzarella
  • Cooked pasta or crusty bread, for serving
Instructions
  1. Preheat oven to 400 degrees F. Make meatballs: In a large bowl, combine ground chicken, breadcrumbs, Parmesan, 2 tablespoons parsley, half the garlic, and egg and season with salt and pepper. Mix until fully combined, then form into meatballs.
  2. In a large oven-safe skillet, heat 1 tablespoon oil over medium heat. Add meatballs and brown each side, 5 minutes. Transfer to a plate.
  3. Add remaining two tablespoons oil to skillet. Add remaining half garlic and cook until fragrant, 1 minute, then add crushed tomatoes and crushed red pepper flakes and stir until combined.
  4. Bring to a low simmer, then return meatballs to skillet and nestle in sauce. Top with mozzarella and bake until cheese is melted and chicken no longer pink, 10 minutes more.
  5. Garnish with remaining parsley and Parmesan serve over pasta or with crusty bread.

Get ready for full-on gooey, melty madness.

Ingredients
  • ½ tube refrigerated chocolate cookie dough
  • 2 tbsp. marshmallow Fluff
  • 2 tbsp. caramel sauce, plus more for drizzling
  • ¼ c. mini chocolate chips
Instructions
  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. Divide cookie dough into 2 balls. Place the cookie dough balls on the baking sheet far apart and flatten them into big discs. Bake for 15-20 minutes until golden brown and cooked through. (Now is not the time for an under-baked gooey center!) Let cool for about 10 minutes on baking sheet then transfer on a cooling rack to cool completely.
  3. Spread marshmallow fluff on the bottom of one cookie and sprinkle with chocolate chips. Spread caramel sauce on the bottom of the other cookie and place the cookie, caramel side-down, on top of the marshmallow fluff. Place the sandwich in a nonstick skillet over medium-low heat, and cook until the chocolate chips are melted and caramel is gooey, about 2 minutes each side.

Sour Patch Grapes
You won't believe how much these grapes taste like the actual candy.

Ingredients
  • 1½ lb. green grapes
  • ½ lemon
  • 1 package cherry Jell-o (3 oz.)
  • 1 package orange Jell-o (3 oz.)
  • 1 package lemon Jell-o (3 oz.)
  • 1 package lime Jell-o (3 oz.)
Instructions
  1. Place each Jell-o flavor in a gallon-sized resealable plastic bag. Set aside.
  2. Remove grapes from stems and rinse in a colander, shaking the colander to remove any excess water (grapes should be damp, not dripping wet). Spritz with lemon juice, tossing the grapes to lightly coat them.
  3. Place a handful in each bag, sealing and shaking to coat.
  4. Remove from resealable bags, plate and serve.
