Loaded Chicken Potato Soup
Chicken pot pie meets a loaded baked potato.

Ingredients
  • 2½ pounds russet potatoes
  • 1 pound skinless, boneless chicken breast halves, cut into chunks
  • 2 tablespoons olive oil, or as needed
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon ground black pepper, plus more to taste
  • 1 onion, diced
  • 1 cup diced carrots
  • 2 stalks celery, diced
  • 6 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 3 cups milk
  • 1 cup chicken stock
  • 1 cup bite-size broccoli florets
  • ½ cup bacon bits, divided
  • 2 green onions, chopped
  • 5 ounces shredded sharp Cheddar cheese, divided
  • 1 cup sour cream
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Prick potatoes with a fork and wrap each potato in aluminum foil.
  3. Bake in the preheated oven until potatoes are tender, 1½ to 2 hours. Cool potatoes until easily handled; scoop insides from skins and discard skins.
  4. Place chicken in a bowl and add enough olive oil to coat; add 1 teaspoon salt and ½ teaspoon pepper and toss to coat.
  5. Heat a skillet over medium-high heat; cook and stir chicken until no longer pink in the center and juices run clear, 5 to 10 minutes.
  6. Toss onion, carrots, and celery with enough olive oil to coat in a bowl.
  7. Heat a skillet over medium-low heat; cook and stir onion mixture until tender, 5 to 10 minutes.
  8. Melt butter in a large saucepan over medium-heat. Stir flour into melted butter and cook until lightly browned, 1 to 2 minutes. Pour milk, about ¼ cup at a time, into butter-flour mixture; cook, stirring constantly, until sauce is thickened, about 10 minutes.
  9. Stir cooked potato, chicken, onion mixture, chicken stock, broccoli, ½ of the bacon bits, ½ of the green onions, and 4 ounces of the Cheddar cheese into the sauce. Cook soup until heated through and broccoli is tender, about 10 minutes; season with salt and pepper. Stir sour cream into soup and cook until heated through, about 5 minutes.
  10. Ladle soup into serving bowls and top with remaining bacon, green onions, and Cheddar cheese.

Restaurant-style breakfast sandwich at home! It's quick, easy and delicious! The sliced avocado is what makes this sandwich pop and gives it a unique flavor. It is chock-full of protein, as well, so this sandwich will keep you full until lunchtime.

Ingredients
  • 1 tablespoon olive oil
  • 2 large eggs
  • salt and ground black pepper to taste (optional)
  • 1 tablespoon butter, softened
  • 2 slices Italian bread
  • 1 ounce Swiss cheese, sliced
  • 1 ounce Cheddar cheese, sliced
  • ½ ripe avocado, sliced
Instructions
  1. Heat olive oil in a skillet over medium heat. Crack eggs into skillet; cook for 1 to 2 minutes. Flip and cook egg until done, 2 to 5 minutes more. Transfer eggs to a plate and season with salt and pepper.
  2. Spread butter onto 1 side of each bread slice.
  3. Heat a skillet over medium heat. Lay bread slices in the hot skillet, butter-side down. Quickly layer Swiss cheese, 1 fried egg, Cheddar cheese, 1 fried egg, avocado, and remaining bread slice, butter-side up. Carefully flip sandwich to grill other side until golden brown, 3 to 4 minutes.
  4. Remove sandwich from skillet and cut in half.

Proper English Cottage Pie
Proper English Cottage Pie is a delicious, very traditional mince pie (beef) topped with mashed potato. Serve with garden peas.

Ingredients
  • 1 pound lean ground beef
  • 1 onion, diced
  • 3 carrots, diced
  • 2 tablespoons all-purpose flour
  • ½ teaspoon ground cinnamon
  • 1 tablespoon Italian seasoning
  • 2 tablespoons chopped fresh parsley
  • 1½ cups beef broth
  • 1 tablespoon tomato pastesalt and pepper to taste
  • 4 potatoes, peeled and diced
  • ¼ cup butter, softened
  • 1 cup milksalt and pepper to taste
  • ¼ pound shredded Cheddar cheese
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. To Make Meat Filling: Place a large skillet over medium heat. Crumble in ground beef and saute 1 minute. Add onion and carrot, then continue to saute until meat is no longer pink and onion begins to brown, about 5 minutes. Mix in flour, cinnamon, mixed herbs, and parsley.
  3. In a small bowl, combine beef broth and tomato paste. Mix together, then add to beef mixture. Add salt and pepper to taste. Lower heat and simmer mixture for 15 minutes, stirring occasionally, until almost all of liquid has been absorbed. Spoon mixture into a 9 inch pie plate.
  4. To Make Potato Topping: Place diced potatoes in a medium saucepan. Cover with water and place over high heat. Allow to come to a boil. Boil for 15 minutes, or until potatoes are tender. Drain.
  5. Mash potatoes until smooth, then add butter or margarine, followed by milk. Whip until fluffy. Add salt and pepper to taste. Spread potatoes over beef filling. Sprinkle with grated Cheddar cheese.
  6. Bake in preheated oven for 25 minutes, until top is browned and cheese is bubbly.

Spicy Dorito® Taco Salad

Ingredients
  • 1 pound ground beef
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • ¼ teaspoon ground black pepper
  • 1 head lettuce, chopped
  • 5 cups crushed nacho cheese-flavored tortilla chips
  • 2 cups shredded Colby-Jack cheese
  • 1 (15 ounce) can dark red kidney beans, drained and rinsed
  • 1 tomato, diced
  • ⅓ cup chopped onion
  • ¼ cup pickled jalapeno peppers, chopped
  • 1 cup vegetable oil
  • ½ cup white sugar
  • ½ cup ketchup
  • 1 envelope taco seasoning mix
  • 2 tablespoons cider vinegar
  • 1 tablespoon Worcestershire sauce
Instructions
  1. Cook ground beef, garlic powder, chili powder, and black pepper together in a skillet over medium heat until meat is brown and crumbly, about 10 minutes, breaking the meat up into chunks as it cooks. Drain excess grease, remove from heat, and let the meat cool.
  2. Toss lettuce, tortilla chips, Colby-Jack cheese, kidney beans, tomato, onion, and pickled jalapeno peppers in a large salad bowl; mix in the beef.
  3. Whisk vegetable oil, sugar, ketchup, taco seasoning, cider vinegar, and Worcestershire sauce together in a bowl until sugar has dissolved; pour dressing over the salad and toss again.

Art's Southern-Style Chocolate Gravy
Art Stone from Honest Biscuit in Seattle was inspired by his grandmother's version of this down-home, easy-to-make breakfast staple that's served over fluffy buttermilk biscuits. Sounds kind of funny if you've never tried it before, but one bite and you'll be hooked.

  • 2 ⅔ tablespoon butter
  • 2 tablespoon all-purpose flour
  • ⅔ cup white sugar
  • ⅓ cup unsweetened cocoa powder
  • 2 cup whole milk
Instructions
  1. Melt butter in a skillet over medium-high heat until bubbling, 1 to 2 minutes. Add flour and stir until smooth, about 1 minute. Mix sugar and cocoa powder into butter-flour mixture until dissolved. Slowly pour milk into chocolate mixture, stirring constantly, until gravy thickens, 5 to 7 minutes.

Awesome Crispy Baked Chicken Wings
Incredibly tasty variation of baked chicken wings with no marinade - just butter, garlic, and herbs. Great for the low-carb eater!

Ingredients
  • 4 pounds chicken wings
  • ½ cup butter
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 tablespoon dried parsley
  • 1 tablespoon dried oregano
  • 2 teaspoons ground paprika
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Line a shallow baking dish with aluminum foil and grease lightly.
  2. Cut tips from chicken wings and discard. Cut between the joint to separate each wing into 2 pieces.
  3. Combine butter and garlic in a small saucepan over low heat; heat until butter is melted and garlic is fragrant, 3 to 5 minutes.
  4. Mix Parmesan cheese, parsley, oregano, paprika, salt, and pepper together in a shallow bowl.
  5. Dip chicken wing pieces in melted butter mixture; coat with Parmesan cheese mixture in the bowl. Arrange in the prepared baking dish. Drizzle any remaining butter on top.
  6. Bake in the preheated oven until skin is browned and juices run clear, about 1 hour.

  • 3 cloves garlic, finely minced
  • 1 jalapeno pepper, seeds and ribs removed, minced
  • 2 zucchini, halved lengthwise and sliced
  • 1 yellow bell pepper, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 shallot, sliced
  • ¼ teaspoon saltfreshly ground black pepper to taste
  • 1 pinch paprika
Instructions
  1. Heat olive oil and butter in a large skillet; cook and stir garlic and jalapeno in hot skillet until softened, about 5 minutes. Add zucchini, yellow bell pepper, red bell pepper, and shallot; continue to cook and stir until tender, about 5 minutes more. Season with salt, pepper, and paprika.

Game Day Breakfast Sliders
A different twist on a breakfast egg and cheese biscuit! Great tailgate breakfast serving offered at a UVA tailgate by Krisanna Hudson. Gobbled up by the crowd!

Ingredients
  • 12 eggs
  • salt and ground black pepper to taste
  • 2 tablespoons butter
  • 1 (12 count) package Hawaiian bread rolls (such as King's®)
  • 18 slices provolone cheese, or as needed
  • 12 slices deli ham, or as needed
  • ¼ cup butter
  • 1½ tablespoons brown sugar
  • 1 tablespoon prepared yellow mustard
Instructions
  1. Whisk eggs, salt, and pepper together in a bowl until frothy. Melt 2 tablespoons butter in a large skillet over medium-low heat. Pour eggs into skillet; cook and stir with spatula until set, 3 to 6 minutes. Remove from heat.
  2. Cut rolls in half horizontally; lay bottoms in a single layer in a 9x13-inch baking dish. Add a layer of provolone cheese, then scrambled eggs, then a layer of ham, then provolone cheese, then ham, then provolone cheese again. Cover with roll tops. Cut through ham and provolone cheese layers to make individual sandwiches.
  3. Melt ¼ cup butter, brown sugar, and mustard together in a small saucepan over medium heat; cook and stir until sugar is dissolved. Spread mixture over roll tops. Cover baking dish with aluminum foil and let stand, about 30 minutes.
  4. Preheat oven to 350 degrees F (175 degrees C). Remove aluminum foil from baking dish.
  5. Bake in preheated oven until tops are golden brown and cheese has melted, 15 to 20 minutes.

Spicy Cheese (Foot)Ball
Warning! You will not be able to stop eating this flavor-packed cheese ball! It's just so good, and when shaped to form a football, makes the perfect party appetizer for your game day party.

Ingredients
  • 2 8 ounces packages cream cheese, softened
  • ¾ cup shredded cheddar cheese (3 ounces)
  • ¾ cup shredded Monterey Jack cheese with habanero or jalapeno peppers (3 ounces) (reserve 5 shreds of cheese for football laces at the end)
  • ½ cup fresh or frozen corn kernels, thawed
  • 2 green onions, thinly sliced
  • 1 jalapeno chile pepper, seeded if desired, and finely chopped
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon bottled hot pepper sauce
  • ½ teaspoon garlic salt
  • pinch cayenne pepper
  • 8 slices bacon, crisp-cooked and crumbled
  • Assorted crackers
  • Assorted veggie dippers such as carrots, cucumbers, celery, and/or sweet peppers
Instructions
  1. In a large bowl beat together the first 10 ingredients (through the cayenne) until well combined. Cover and chill 30 to 60 minutes or until easy to handle.
  2. Shape cheese mixture into a ball and coat in bacon. Transfer to a serving platter. Shape into a football shape. Decorate with reserved cheese shreds to look like football laces. Serve with assorted crackers and veggie dippers.

Frank's Spicy Alabama Onion Beer Chili
Spicy beef, onion, and beer chili recipe I picked up while in Alabama. Many people have asked me for the recipe so I'm posting it here. Enjoy! Adjust the amount of jalapenos and other spicy things to suit your taste.

Ingredients
  • 2 pounds ground beef chuck
  • 2 large white onions, chopped
  • 2 (14.5 ounce) cans diced tomatoes with juice
  • 2 (15 ounce) cans tomato sauce
  • 1 (12 fluid ounce) can beer
  • 2 (15 ounce) cans spicy chili beans
  • ¼ cup Worcestershire sauce
  • 3 tablespoons hot pepper sauce (e.g. Tabasco™), or to taste
  • ⅓ cup chili powder
  • 4 fresh jalapeno peppers, seeded and chopped
  • 3 tablespoons red pepper flakes, or to taste (optional)
Instructions
  1. Crumble the ground chuck into a skillet over medium heat. Cook, stirring occasionally until evenly browned. Drain grease. Transfer the beef to a large soup pot. Add onions, diced tomatoes, tomato sauce, beer and chili beans. Season with Worcestershire sauce, hot pepper sauce, chili powder, jalapenos, and red pepper flakes, if using.
  2. Cover the pot, and simmer over low heat for 2 hours. Turn off heat, and let cool, then refrigerate for two days. It gets much better with time. Heat and serve.
