Spinach Mushroom Tortellini Soup

Ingredients
  • 2 tablespoons unsalted butter
  • 1 tablespoon extra-virgin olive oil
  • 1 (8 oz.) package cremini mushrooms, quartered or sliced
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons fresh thyme, stems removed
  • 1 teaspoon dried sage
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon nutmeg
  • ¼ cup all-purpose flour
  • ½ cup white wine
  • 1½ (32 oz.) cartons vegetable or low-sodium chicken broth
  • 1 (8 oz.) package cheese tortellini (or spinach or meat)
  • ¾ cup parmesan cheese, grated, plus more for garnish
  • 1 (10 oz.) package fresh spinach, roughly chopped
  • ½ cup half-and-half
  • Kosher salt and freshly ground pepper, to taste
Instructions
  1. Melt butter and olive oil in a large stock pot or Dutch oven over medium-high heat and sauté mushrooms and onion for 10-12 minutes, or until softened and onions are translucent.
  2. Season with salt and pepper, then add garlic and cook for 1-2 minutes, or until fragrant.
  3. Add thyme, sage, red pepper flakes and nutmeg, and stir to combine.
  4. Sprinkle flour in and cook for 2-3 minutes, or until veggies are thoroughly coated, then pour in white wine to deglaze pan.
  5. Pour in chicken broth and tortellini, then bring to a boil and cook for 7-9 minutes, or until tortellini is cooked and al dente.
  6. Reduce heat to low, then stir in spinach, parmesan cheese and half-and-half, cooking until spinach is wilted and cheese is melted.
  7. Transfer to bowls and serve hot!

Buddy The Elf Cookie Bars

Ingredients
  • 1 (16 oz.) bag marshmallows
  • ½ cup (1 stick) salted butter
  • 1 (16 oz.) bag fried chow mein noodles
  • 1 cup marshmallow bits, not mini marshmallows
  • ⅓ cup hard-shell forming chocolate fudge sauce
  • Rainbow sprinkles, as needed
  • ¼ cup (1/2 stick) unsalted butter, optional
  • 6 oz. white chocolate chips, optional
Instructions
  1. Spray a 9x13-inch baking sheet with non-stick spray, or line with parchment paper.
  2. Place chow mein noodles in a large bowl.
  3. Heat butter in a large saucepan over medium heat and cook until just browned, then stir in marshmallows.
  4. Use a rubber spatula and stir until melted and smooth, then pour mixture over chow mein noodles.
  5. Optional (to make more gooey): heat ¼ cup butter and white chocolate chips in a medium saucepan over medium heat and stir until melted and smooth. Stir into chow mein mixture.
  6. Transfer noodle mixture to greased or lined baking dish and press into an even layer.
  7. Top with a drizzle of chocolate fudge, rainbow sprinkles and marshmallow bits.
  8. Let set until firm, then slice into squares.

Crunchy Pecan Grape Salad

Ingredients
  • 2 cups green grapes, halve
  • 2 cups red grapes, halve
  • 1 (8 oz.) package cream cheese, room temperatur
  • 1 cup pecan
  • 1 cup sour cream
  • ½ cup sug
  • 1½ teaspoons vanilla extrac
Topping
  • 2 cups pecans, chopped
  • 1 cup brown sugar
Instructions
  1. In a large bowl, mix together cream cheese, sour cream, sugar and vanilla extract.
  2. Once smooth, fold in red and green grapes. Mix together, then fold in 1 cup pecans.
  3. In a separate bowl, toss together topping ingredients (pecans and brown sugar) until all nuts are coated.
  4. Sprinkle mixture on top of grape salad, then refrigerate for at least 2 hours, or until chilled.
  5. Serve chilled and enjoy!
