Ingredients
  • 3 cups diced cooked chicken (about 12 ounces)
  • 1½ cups prepared salsa
  • One 15-ounce can black beans, drained and rinsed
  • 1½ cups chicken broth
  • 1 tablespoon chili powder
  • 2 scallions (white and green parts), sliced
  • ¾ cup cornmeal
  • 1 cup shredded sharp Cheddar cheese
  • 1 tablespoon unsalted butter
  • Kosher salt and freshly ground black pepper
  • Sour cream, for serving
Instructions
  1. Preheat the oven to 400 degrees F.
  2. Heat the chicken, salsa, beans, ½ cup of the broth and the chili powder in a 10-inch cast-iron skillet over medium heat, stirring, until simmering. Stir in the scallions and remove from the heat.
  3. Meanwhile, combine the cornmeal with the remaining 1 cup broth and 1 cup water in a medium pan. Bring to a simmer over medium heat, stirring, until very thick, 5 to 7 minutes. Remove from the heat and stir in the cheese and butter. Season with ¼ teaspoon salt and ¼ teaspoon pepper.
  4. Spread the cornmeal mixture over the filling and bake until cooked through, about 30 minutes. Let stand for 15 minutes. Serve with sour cream.

  • ⅔ cup all-purpose flour
  • ⅓ cup cocoa powder
  • ⅔ cup sugar
  • ¾ teaspoon baking soda
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • ¼ cup milk
  • 3 tablespoons oil
  • ½ teaspoon vanilla extract
  • ¼ cup water
  • Milk Chocolate Mousse:
  • 225 milliliters whipping cream
  • 135 grams good quality milk chocolate
  • 3 large egg whites
  • 75 milliliters milk
  • 6 grams powdered gelatin
  • 1½ tablespoon water
  • White Chocolate Mousse:
  • 225 milliliters whipping cream
  • 135 grams good quality white chocolate
  • 3 large egg whites
  • 75 milliliters milk
  • 6 grams powdered gelatin
  • 1½ tablespoon water
  • Snowflake paper cutouts
  • Cocoa powder, for dusting
Instructions
  1. Bake the cake: Place the flour, cocoa powder, sugar, baking soda, baking powder and salt in the bowl. Mix until fully combined. Add the egg, milk, oil, vanilla and water and mix until smooth. Line the sides and bottom of a 9-inch springform pan with parchment paper and pour the batter into the pan. Bake at 350F for 20-30 minutes, or until a skewer inserted into the center comes out clean. Place the pan on a cooling rack and cool completely in the pan. Remove the cake from the pan and remove the parchment paper lining. Return the cake to the pan and set aside.
  2. Make the milk chocolate mousse: Sprinkle the gelatin into the cold water and set aside. Beat the egg whites until stiff peaks form. In a separate bowl, beat the whipping cream until soft peaks form and set both bowls aside. Set a small saucepan to medium heat and add the milk. Just before the milk comes to a boil, turn off the heat and add the gelatin. Once the gelatin has fully dissolved, add the milk chocolate and whisk until fully melted. You may need to turn the heat back on to fully melt the chocolate. Add this mixture to the whipped cream and whisk to combine. Then add the egg whites and whisk to combine, making sure to keep the mixture as airy as possible. Pour the mousse on top of the chocolate cake and smooth the surface. Transfer the cake to the fridge to set for 2 hours.
  3. Make the white chocolate mousse: Follow the same steps for the Milk Chocolate Mousse, but replace the milk chocolate with white chocolate. Once you have gently poured the white chocolate mousse onto the cake, transfer the cake to the fridge and set for 2½ hours.
  4. To decorate: Place the paper snowflake cutouts onto the surface of the cake. To help with positioning, use some scotch tape to create little handles on one side. Sift cocoa powder evenly over the entire surface of the cake. Gently remove the cutouts to reveal white snowflakes! Gently unlatch the sides of the pan and slide it off the cake. Running a warm, damp dishcloth around the sides of the pan will make it easier to remove. To serve, slice the cake with a warm knife.

Crescent Breakfast Tart

  • 1 can crescent dough
  • 6 eggs
  • ⅔ c. Monterey Jack
  • 4 slices cooked bacon
  • kosher salt
  • Freshly ground black pepper
  • 1 tbsp. Chopped chives, for garnish
Instructions
  1. Preheat oven to 400°. Line a medium baking sheet with parchment paper. Place crescent dough on baking sheet and pinch seams together.
  2. Fold edges of dough in to create a crust. Crack eggs onto crescent dough and sprinkle with cheese. Place bacon on top and season all over with salt and pepper.
  3. Carefully transfer baking sheet to oven and bake until crust is golden and egg whites are set, 10 to 15 minutes.
  4. Garnish with chives. Slice into squares and serve warm.

CHICKEN ALFREDO GARLIC BREAD ROLL

Ingredients
  • 1½ cups cream cheese
  • 3 tbsp double cream
  • 1 cup parmesan
  • 1 garlic clove, minced
  • 1 tsp salt
  • 1 tsp pepper
  • ¼ cup parsely
  • 3 cups shredded chicken
  • 6 rashers bacon, chopped and cooked
  • White bread, 12 slices
  • 12 slices mozzarella
  • ½ cup garlic butter
Instructions
  1. Mix the cream cheese, cream, parmesan, garlic, salt and pepper, chicken and bacon bits together to make the filling. Set aside (but don't refrigerate).
  2. Lay the crustless slices of bread in a sheet on a large piece of baking paper. Make sure the sides are overlapping. Press together with a rolling pin (if you press hard enough they'll stick together).
  3. Place the mozzarella in a sheet on top and sprinkle with the alfredo mix.
  4. Bring up the edge of the sheet and roll into a spiral.
  5. Place on a baking sheet and brush with the garlic butter.
  6. Bake for 30 minutes until golden brown and crisp.

  • 2½ c. semi-sweet chocolate chips
  • ¼ c. cocoa powder
  • ½ c. sugar
  • Pinch kosher salt
  • 6 c. whole milk
  • 1 bottle red wine
  • Toasted marshmallows, for serving
  • Chocolate shavings, for serving
Instructions
  1. Combine chocolate chips, cocoa powder, sugar, salt, milk and wine in slow cooker. Cook on high for one hour, stirring every 20 minutes.
  2. Ladle cocoa into mugs and top with toasted marshmallows and chocolate shavings.

  • 3 apples, peeled and diced small
  • 1 tbsp butter
  • ½ cup light brown sugar
  • ½ tsp cinnamon powder
  • Pinch of salt
  • Juice of two lemons
  • ¼ cup water
  • 2 sheets ready rolled puff pastry
  • Egg wash
  • Demerera sugar
  • Caramel Sauce
Instructions
  1. In a saute pan over medium heat, melt butter. Add apples and toss to coat. Stir in brown sugar, salt, cinnamon, lemon juice, and water. Cook until reduced and apples have softened. Set aside to cool completely.
  2. Pre-heat oven to 180ºC (350ºF).
  3. Roll out puff pastry. Spread apple mix in a circle around the center of the puff pastry leaving a 4” empty circle. Top with the second piece of puff pastry. And press to adhere. Place a bowl I the middle of the pastry where there is no apple mixture. Cut slits around the bowl 4 quadrants and 4 slices in each. Twist two slices into each other and pinch to seal at the end. Continue with remaining to create a star shape.
  4. Remove the bowl and cut our center. Brush evenly with egg wash and sprinkle with demerera sugar.
  5. Bake for 30 minutes until golden brown. Serve with caramel sauce.
  6. Enjoy!

Ingredients
BÉCHAMEL SAUCE
  • 250 mL (1 cup) milk
  • 150 mL (⅔ cup) double cream
  • 1 onion, roughly chopped
  • 2 cloves garlic, crushed
  • 2 bay leaves
  • 2 tablespoons butter
  • 25 g (¼ cup) flour
  • 1 teaspoon dijon mustard
  • 1 pinch ground nutmeg
  • 4 slices white bread
  • 2 tablespoons butter, melted
  • dijon mustard, to spread
  • 100 g (1 cup) grated gruyere cheese
  • 6 slices ham
Instructions
  1. In a saucepan, combine the milk, double cream, onion, garlic and bay leaves and heat over a medium heat until it just starts to boil.
  2. Take off the heat and leave to infuse for 10 minutes.
  3. Pour the milk mixture through a sieve into a jug.
  4. Then, in a saucepan, gently melt the butter and add the flour. Stir together over a low-medium heat for 1 -2 minutes.
  5. Gradually add the milk in three parts whilst continually stirring.
  6. Continue to stir and bring the sauce to a gentle boil.
  7. Take off the heat and stir in the dijon mustard and ground nutmeg.
  8. Next, brush the two slices of bread with the melted butter and grill for about 5 minutes until golden brown.
  9. Take out of the grill and preheat the heat the oven to 180°C (350°F).
  10. Flip the slices of bread over and spread one slice with a thin layer of dijon mustard, followed by another layer of the béchamel sauce, followed by the cheese and then the ham.
  11. Place the other slice of bread on top and coat with more béchamel sauce and cheese.
  12. Bake for about 15 minutes, until the cheese is bubbling.
  13. Serve with fresh salad!
  14. Enjoy!

  • 4 sheets puff pastry, chilled
  • 2 eggs, beaten
  • 25 hot dogs
  • spinach artichoke dip, to serve
  • chili dip, to serve
  • queso dip, to serve
Instructions
  1. Preheat oven to 350°F (180°C).
  2. Roll out the puff pastry into a square shape and brush the surface with egg wash.
  3. Cut the puff pastry sheet into 6 equal rectangles.
  4. Place a hot dog on the bottom of each pastry rectangle, then roll it up tightly.
  5. Slice each rolled hot dog into 3 equal segments.
  6. Repeat with the remaining puff pastry and hot dogs.
  7. In a large springform pan, place a circular wall of the hot dog pieces around the circumference of the edge. Stack a second row of rolled hot dogs on top, so that they go up the entire side of the pan.
  8. Build a 3-way wall with more hot dogs that all meet in the center to create 3 holes for the dips.
  9. Carefully place each dip into each open space, spreading them out evenly and making sure the walls don’t move.
  10. Cover with foil and bake for 1 hour and 45 minutes.
  11. Remove the foil and bake uncovered for another 30 minutes until the pastry is crispy.
  12. Cool until warm to the touch. Unclasp the springform pan.
  13. Enjoy!

  2. Drain in a colander and pat dry. On a shallow plate, roll the grapes in sugar until fully coated, then serve.
