Zucchini Ravioli

Zucchini Ravioli

Ingredients
  • 2 medium zucchini
  • olive oil, to taste
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 2 tablespoons fresh basil, finely sliced
  • salt, to taste
  • pepper, to taste
  • 1 cup marinara sauce
  • ½ cup shredded mozzarella cheese
Instructions
  1. Preheat oven to 425°F (220°C).
  2. Cut off the end of each zucchini then using a vegetable peeler, peel each zucchini into wide strips.
  3. Transfer the zucchini strips to a plate then layer two strips vertically and two strips horizontally to make a cross. Repeat process with remaining strips.
  4. Heat a pan over medium-high heat.
  5. Add olive oil then garlic and sauté for 30 seconds to 1 minute.
  6. Add spinach and sauté for 1-2 minutes, until wilted down.
  7. Remove from heat and allow to cool for 10 minutes.
  8. In a large bowl, add the spinach and garlic.
  9. Add the ricotta, basil, salt, and pepper. Mix until well combined.
  10. Using a spoon or cookie scoop, scoop approximately 1 tablespoon of the mixture and place in the middle of each zucchini noodle cross.
  11. Fold each side to seal the ricotta mixture then flip over the ravioli so the seam side is on the bottom.
  12. In a baking dish pour the marinara sauce then smooth with a spatula.
  13. Evenly place the zucchini raviolis then top with mozzarella cheese.
  14. Bake for 15-20 minutes.
  15. Serve with fresh basil.

Cheesecake Stuffed Cupcakes

Ingredients
  • 1 box chocolate cake mix, plus ingredients called for on box
  • 12 frozen, plain 1" cheesecake squares
  • 1 c. unsalted butter, softened
  • 2½ c. powdered sugar
  • ¾ c. cocoa powder
  • 2 tsp. vanilla extract
  • Pinch kosher salt
  • ¼ c. heavy cream, plus more if needed
  • Rainbow sprinkles, for decoration
Instructions
  1. Preheat oven to 350° and line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, prepare cupcake batter according to package directions. Fill half the muffin tin with batter, then place a piece of cheesecake in the center. Cover with more batter and bake for 25 minutes. Let cool completely.
  3. Meanwhile, make frosting: In a large bowl using a hand mixer, beat butter, powdered sugar, cocoa powder, vanilla, and salt until light and fluffy. Beat in heavy cream (adding more by the tablespoon until consistency is creamy but can hold peaks).
  4. Pipe cupcakes with frosting and decorate with rainbow sprinkles.

This steak nacho party ring is going to impress all your friends at the next get-together ?!

  • 6 oz steak, 2
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • ½ teaspoon cayenne
  • 3 cups shredded cheddar cheese
  • 3 jalapeño, sliced
  • 1 red onion, chopped
  • 4 roma tomato, diced
  • 1 can black bean, drained and rinsed
  • 18 oz tortilla chip, 1 bag
  • sour cream, to serve
  • guacamole, to serve
  • pico de gallo, to serve
Instructions
  1. Preheat the oven to 450˚F (230˚C).
  2. Season the steaks with the salt, pepper, paprika, garlic powder, cumin, and cayenne, rubbing fully over the meat.
  3. Add oil to a skillet over medium-high heat and add the steaks. Cook the steaks for 3 minutes per side.
  4. Let the steaks rest for 10 minutes, and then cut into bite-sized pieces. Set aside.
  5. Spray a bundt pan with cooking spray and create three layers of nachos consisting of shredded cheddar cheese, sliced jalapeños, diced red onion, diced tomatoes, black beans, and the steak. Top with more cheese.
  6. Place into the oven to melt and heat up for about 10 minutes.
  7. Take a serving tray and place on top of the warm bundt pan and carefully invert the nacho ring onto the tray.
  8. Top with sour cream, guacamole, pico de gallo, or whatever else you would like.
  9. Enjoy!

Ingredients
  • 7 cups cauliflower florets, cut to bite sized pieces
  • 3 to 4 tbsp olive oil
  • 1 cup Italian bread crumbs
  • ½ tsp garlic powder
  • ½ tsp salt
  • ⅓ cup parmesan cheese
Instructions
  1. Preheat oven to 425 degrees F. Line a large, rimmed baking sheet with foil and spray liberally with non-stick cooking spray. Set aside.
  2. Combine the cauliflower and olive oil in a large zip close bag and shake to coat.
  3. Add the remaining ingredients to the bag and shake until coated, pressing slightly to help the breading stick. Pour onto the baking sheet and spray the tops of the cauliflower with cooking spray and bake for 20 minutes. Stir the cauliflower and continue to bake an additional 10 minutes. Serve hot. Enjoy!

Blooming Quesadilla Ring
This blooming quesadilla ring is a whole new way to enjoy quesadillas with your friends ?!

Ingredients
  • 2 cups chicken, cooked and shredded
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 jalapeño, chopped
  • 1 cup taco sauce
  • 20 taco-size tortilla
  • 3 cups shredded cheddar cheese
  • 3 cups shredded monterey jack cheese
Instructions
  1. Preheat oven to 375˚F (190˚C).
  2. In a bowl, add the chicken, red bell pepper, onion, jalapeño, and taco sauce, and mix to combine. Set aside.
  3. Cut each tortilla in half. Evenly spread about 2 tablespoons each of the cheddar cheese, Monterey Jack cheese, and chicken mixture on one half of the tortilla.
  4. Roll the tortilla into a cone starting from the cut edge making sure not to push the ingredients out of the tortilla.
  5. Place a wide mouth jar or glass in the center of a parchment paper-lined baking sheet.
  6. Create a ring around the jar with the tortilla cones. The point of the cones should be in the center, touching the surface of the jar. There should be about 13 cones in the first layer.
  7. Sprinkle both cheddar cheese and Monterey Jack cheese over the first layer of cones.
  8. Start the second layer of cones by placing one cone on top and in between 2 cones in the first layer. Continue this process with the rest of the cones. There should be 3 full layers of cones with 3 left to fill some of the empty space in the top.
  9. Sprinkle the rest of the cheddar and Monterey Jack on top of the blooming quesadilla. Remove jar from center of ring. Bake until the cheese is melted and the edges of the tortillas are crispy, 15 to 20 minutes.
  10. Transfer to a plate. Place dip of choice inside the ring. Top with desired garnishes.
  11. Serve immediately.

Hidden Horror Black Widow Cake
You will certainly get the award for the most twisted dessert. Luckily, it's also delicious.

Ingredients
  • One 15.25-ounce box chocolate cake mix (plus required ingredients)
  • Nonstick cooking spray, for the bowl and parchment
  • 16 ounces bittersweet chocolate, finely chopped
  • 16 chocolate cream-covered biscuit sticks, such as Pocky
  • 1 tablespoon coconut oil
  • ⅓ cup chocolate or vanilla frosting
  • 6 candy eyes
  • 1 tube store-bought red decorating icing
  • Red sanding sugar, for decorating
  • 3 cups mini marshmallows
  • 2 tablespoons chocolate sprinkles
  • One 11.75-ounce jar strawberry ice cream topping
Instructions
  1. Special equipment: a pastry brush, small round piping tip (1S or 2)
  2. Prepare the chocolate cake according to the package directions in two 8-inch cake pans and let cool completely.
  3. Spray an 8-inch bowl with cooking spray. Line it with plastic wrap as neatly as possible and spray the wrap with cooking spray. Put in the freezer until very cold.
  4. Line a baking sheet with parchment and spray with cooking spray. Microwave the chocolate in a medium microwave-safe bowl in 30-second intervals, stirring in between each, until melted, about 3 minutes. Let cool for 5 minutes.
  5. Cut off 1 inch from the chocolate ends of 8 biscuit sticks, so you have 8 short and 8 regular-size sticks total. In same-length pairs, dip the chocolate ends into the melted chocolate and lay them on the prepared baking sheet so that they overlap slightly in the shape of a V. Refrigerate until set.
  6. Stir the coconut oil into the remaining chocolate.
  7. Remove the prepared bowl from the freezer and brush the inside with ¼ cup of the chocolate, then refreeze until firm, about 10 minutes. Repeat 4 more times, each time making sure the chocolate goes all the way to the rim of the bowl and doesn't pool in the bottom. Freeze until solid, about 30 minutes.
  8. Put one cake layer in the bowl of a food processor and pulse to fine crumbs. Add the frosting and pulse until it just comes together. Form into a ball that is slightly flattened on the bottom where it will sit on the platter, and freeze for 30 minutes. Remove from the freezer and brush to coat with the chocolate mixture. Refreeze for 15 minutes, then repeat 2 more times. On the final time, affix the eyes to the ball in the shape of a horseshoe. Attach a small round piping tip (1S or 2) to the tube of red decorating icing, and outline each eye with icing.
  9. Fill the chocolate-lined bowl with the marshmallows. Top with the remaining cake layer and then flip it out onto a large serving platter. Remove the plastic wrap from the chocolate dome. Arrange the head so it touches the chocolate dome body. Drizzle the body with the remaining chocolate mixture and sprinkle with the chocolate sprinkles. Make a black widow marking by piping a red hourglass on the upper third of the body close to the head. Sprinkle it with red sanding sugar. Position 4 biscuit stick legs on each side of the body, making sure the 2 shorter ones go in the middle; gently push the legs into the dome about 1 inch.
  10. When ready to serve, heat the strawberry topping in a small saucepan over medium heat until it boils. Slowly pour it over the spider's body to reveal all the eggs inside. Then run, screaming for your life.

Ingredients
  • 12 Halloween Oreos
  • 2 c. white chocolate, melted
  • 2 tsp. coconut oil
  • Black icing
  • 12 lollipop sticks
  • Black ribbon
Instructions
  1. Line a medium baking sheet with parchment paper.
  2. Stick the lollipop sticks into the cream of the Oreos.
  3. Mix coconut oil into white chocolate and dip Oreos into chocolate until completely coated. Place in refrigerator to harden, 5 to 10 minutes.
  4. Using the black icing, draw Jack’s face on the Oreos and let cool slightly. Tie black ribbon in a bow at the bottom of the Oreo and serve.

Ingredients
  • 1lb ground beef
  • 8 rashers bacon, chopped
  • ¼ cup finely chopped gherkins
  • ¼ cup finely chopped white onion
  • 18 slices American cheese
  • ¼ cup ketchup
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp garlic powder
  • 440g pizza dough
  • Egg wash
  • Sesame seeds
Instructions
  1. Pre-heat oven to 200C (400F). Line a large baking sheet with parchment paper.
  2. In a large non-stick pan over medium heat, fry bacon until just crispy. Remove and set aside.
  3. Add ground beef to hot pan and break apart. Cook until browned, about 4-5 minutes. Add salt, pepper and garlic powder, stir to combine. Stir in bacon and ketchup. Cook for another 5 minutes to reduce. Take off heat and let cool completely.
  4. Roll out pizza dough into a long rectangle.
  5. Lay 9 pieces of American cheese down, top with a layer of beef mixture, chopped onions, gherkins and another 9 pieces of American cheese. Roll into a tight log. Slice into 1-inch thick pieces and place cut side up on the baking sheet. Brush edges and center spiral of dough with egg wash. Sprinkle with sesame seeds.
  6. Bake for 15 minutes, until golden brown.
  7. Enjoy!

  • 2 cups crushed cookie crumbs
  • ¼ cup granulated sugar
  • 6 tbsp butter melted
  • 2 cups chopped chocolate
  • 1 cup butter
  • ½ cup brown sugar
  • 1¼ cups granulated sugar
  • 4 large eggs, lightly beaten
  • 2½ cups all-purpose flour
  • ½ cup salted caramel sauce
  • ½ cup coarsely chopped chocolate
  • 1½ cups mini marshmallows
Instructions
  1. Pre-heat oven to 180C (350F). Grease a 9-inch springform pan.
  2. In a medium bowl mix together cookie crumbs, sugar, and butter until combined and wet sand-like texture. Press into the base of the springform pan and use the back of a spoon or small bowl to press in.
  3. Bake for 10 minutes, set aside to cool.
  4. In a large microwavable bowl melt chocolate and butter together. Stir in both sugar and then eggs into a smooth batter. Fold in flour and chopped chocolate pieces until just combined.
  5. Pour caramel sauce over cooled cookie base. Pour brownie mix over top and spread to the edges, evenly. Bake in the oven for 35-40 minutes until a toothpick comes out with some crumbs, just set.
  6. Sprinkle marshmallows over entire top of brownie and place under the grill for 2-3 minutes to toast marshmallows. Keep a close eye on them to not burn.
  7. Let cool for 30 minutes and cut.
  8. Enjoy!
