Ingredients
  • 6 eggs
  • 2 cups sugar, divided
  • 2 tablespoons oil
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 teaspoons vanilla
  • 1 ½ cups flour
  • ¼ cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 tablespoon vanilla
  • 2 cups strawberry, sliced
Instructions
  1. Preheat oven to 350°F (180°C).
  2. In a bowl, whisk the eggs until pale yellow, about 2 minutes.
  3. Add in the 1½ cups (300 grams) sugar and whisk again until combined.
  4. Mix in oil, baking powder, salt, and vanilla.
  5. Add in flour, and fold until smooth and combined.
  6. Pour the batter on a parchment paper-lined baking sheet and spread evenly. Gently tap the baking sheet on the counter to release any air bubbles.
  7. Bake for 10-15 minutes, or until cooked through.
  8. Lay out a kitchen towel and sprinkle with powdered sugar.
  9. Once the cake is done, invert it onto the towel and lift the towel to roll the cake into a log. The towel will wrap into the cake.
  10. Refrigerate cake for 30 minutes.
  11. In a bowl, mix the cream cheese, remaining sugar, and vanilla. Set aside.
  12. Place the cake on the counter and unroll.
  13. Spread the cream cheese mixture in an even layer over the cake and top with sliced strawberries.
  14. Tightly roll the cake bake up, this time just using the towel as a guide.
  15. Top with powdered sugar.
  16. Slice and serve.
  17. Enjoy!

  • 1 c. vodka
  • 1 c. sprite
  • 1 c. lemonade
  • 1 c. ice
  • Pink food coloring (optional)
Instructions
  1. Add Sour Patch Watermelon gummies to vodka and soak overnight.
  2. To a blender, add 2 ounces flavored vodka, Sprite, lemonade, pink food coloring (if using) and ice.
  3. Blend to combine. Garnish with Sour Patch candies and serve.

Ingredients
For the soft serve:
  • 4 cups whole milk
  • ⅔ cup heavy cream
  • 1 cup sugar
  • 1 cup whole coffee beans
  • ½ teaspoon vanilla extract
  • ½ teaspoon salt
  • 2 pounds dry ice
For the coffee caviar:
  • ¾ cup freshly brewed coffee
  • ¼ cup sugar
  • ½ teaspoon agar agar
  • 1 cup vegetable oil
Instructions
For the Caviar:
  1. In a saucepan, whisk coffee, sugar, and agar agar, until everything is dissolved. Boil for 2 minutes. Allow to slightly cool.
  2. Transfer to a squeeze bottle and squeeze a one drop at a time into the cold oil, to form small spheres. Use a strainer to remove the spheres and rinse with water. You may use immediately, after lightly pat drying them on paper towel, or store them in a sealable container of water in the fridge.
For the soft serve:
  1. In a pot, add milk, heavy cream, sugar, vanilla, salt, and coffee beans and bring to a slight boil. Cover and allow to steep for 30 minutes and cool down. Strain the mixture to separate the beans. Transfer to a stainless steel mixing bowl.
  2. In a clean kitchen towel, wrap the dry ice and crush into a it appears powdery. Use with a heavy object, like a meat tenderizer or hammer.
  3. Turn the mixer on low and gradually add in a spoon of crushed dry ice. Keep adding until the mixture thickens.
  4. Transfer to a piping bag and swirl into ice cream cones. Top with coffee caviar.

Ingredients
  • 1 tablespoon olive oil
  • 50 g (¼ cup) butter
  • 1 medium onion, finely diced
  • 1 large carrot, finely diced
  • 1 stalk celery, finely diced
  • 100 g (4 oz) pancetta, diced
  • 200 g (7 oz) lean beef, minced
  • 150 g (5 ⅓ oz) lean pork, minced
  • 200 mL (¾ cup) red wine
  • 2 tablespoons double concentrated tomato puree
  • 500 mL (2 cups) chicken stock
TO SERVE
  • 400 g (2 cups) tagliatelle, cooked
  • parmesan cheese, grated
Instructions
  1. Heat olive oil and butter in a large pan over medium heat. Add onion, carrot, celery, and pancetta. Cook for around 10 minutes until the onions start to look translucent.
  2. Add the minced meats and brown all over, ensure the meat is fully broken up and no large chunks remain.
  3. Add salt and pepper to taste. Increase the heat, add the wine, and allow to evaporate for around 2-3 minutes.
  4. In a large jug, dilute the tomato puree into the chicken stock and add to the pan, stir well.
  5. Reduce to a low heat, then cover and simmer for 2 hours. Check from time to time to ensure the sauce is not drying out. If this occurs, add a small amount of stock.
  6. Cook desired pasta and toss in the bolognese.
  7. Top with parmesan cheese and serve.
  8. Enjoy!

Ingredients
  • 6 eggs
  • ¼ cup water
  • ¼ cup oil
  • 1 package vanilla cake mix
  • ¼ cup sour cream
  • 1 tablespoon cocoa powder
  • 3 tablespoons strawberry instant gelatin
  • 3 cups vanilla frosting
Instructions
  1. Preheat oven to 350˚F (180˚C).
  2. In a large bowl, whisk the eggs until light yellow and frothy. Add the water, oil, cake mix, sour cream, and stir until combined.
  3. Separate the batter into three bowls. Add the cocoa powder to one of the bowls of batter, and stir until combined. Pour the chocolate batter into a piping bag, cut off the tip off of the piping bag.
  4. Add the strawberry gelatin powder to one of the bowls of batter, and stir until combined. Pour the strawberry batter into a piping bag, cut off the tip off of the piping bag.
  5. Pour the rest of the vanilla batter into a piping bag, cut off the tip off of the piping bag.
  6. Pipe the strawberry onto a parchment paper-lined baking sheet, starting in the upper left corner. Pipe 3 1-inch (2 cm) lines of batter diagonally across the pan, beginning with the strawberry, following with the chocolate, then the vanilla. Continue this pattern until you have filled the entire baking sheet. Tap pan on the counter 3 times to release any air bubbles.
  7. Bake for 7 minutes.
  8. While warm, flip cake carefully onto a large dish towel. While still warm, roll with the towel tightly but carefully. Set aside to cool for at least 30 minutes.
  9. Unroll the cake carefully, and peel away the parchment paper.
  10. Spread the vanilla frosting evenly on the cake.
  11. Gently roll the cake up making sure not to roll too tight or the frosting will come out of the sides of the cake roll.
  12. Enjoy!

S'mores Sushi

Ingredients
  • ¼ c. butter
  • 10 oz. mini marshmallows
  • 5 c. Rice Krispies cereal
  • 2 c. marshmallow Fluff
  • 1 c. crushed graham crackers
  • 1 c. semisweet chocolate chips, melted, plus more for serving
Instructions
  1. Line a baking sheet with wax paper and grease with cooking spray. In a pot over low heat, melt butter. Add marshmallows and stir until melty. Turn off heat and immediately stir in cereal. Stir until completely coated.
  2. Press mixture onto prepared pan and pat into a thin even rectangle. Spread fluff in a single layer and sprinkle with graham crackers, pressing in to make sure they stick. Pour melted chocolate over graham crackers and use a spatula to smooth into an even layer.
  3. Slice sushi in half lengthwise, then roll up halves, starting from the long side.
  4. Refrigerate until firm, 1 hour.
  5. Slice into sushi rolls and serve with melted chocolate.

Over Stuffed Potato
Anyone can stuff a potato, but it takes real chutzpah to hide the potato in a warm blanket of parmesan and mozzarella cheese.

Ingredients
  • 2 big potatoes
  • ¼ cup heavy cream
  • 7 ounces creamy Brazilian cheese
  • ½ cup Parmesan cheese, grated
  • 1 tablespoon parsley
  • Salt and pepper
  • 2¼ cups mozzarella cheese, grated, divided
Instructions
  1. Wrap the potatoes in foil and bake in an oven preheated to 350 degrees for approximately 40 minutes, or until they are soft.
  2. Remove a thin slice of potato and, with a spoon, scoop out the inside of the potato. Set aside.
  3. Mash the potatoes, add the heavy cream, cheese, Parmesan, parsley and half the mozzarella. Season with salt and pepper.
  4. Transfer mixture back into potato skin and top with remaining mozzarella.
  5. Bake at 350 degrees for 20 minutes, or until the cheese is melted.

  • 2 fillets salmon
  • 50 g (2 oz) honey
  • 1 handful sesame seed
MARINADE/SAUCE
  • 100 mL (½ cup) soy sauce
  • ½ lemon, juiced
  • 25 g (1 oz) ginger, chopped
  • 1 red chili, sliced
  • 4 cloves garlic, minced
  • 1 pinch sea salt
GARNISH
  • sesame seed, to taste
  • spring onion, to taste
  • red chili, to taste
Instructions
  1. Cut the salmon into bite-size cubes. Set aside.
  2. Prepare the marinade by mixing the soy sauce, lemon juice, ginger, chilli, garlic, and sea salt together.
  3. Mix the salmon into the marinade, cover, and marinate for 15-30 minutes.
  4. In a large pan with a little oil, pour in the marinade and add the honey and sesame seeds.
  5. Mix together until it starts to bubble and gets thicker/saucier.
  6. Add the salmon and fry for a couple of minutes on each side.
  7. Take off the heat and garnish with more sesame seeds, spring onion, red chilli, and cocktail sticks.

Bavarian Cream Dragon Fruit Cake

  • 1½ tablespoons powdered gelatin
  • 4 tablespoons water
  • Chocolate sponge cake
  • 1 cup heavy cream
  • 1 dragonfruit, quartered
  • ½ cup raspberries
  • 6½ tablespoons granulated sugar, divided
  • 1 tablespoon lemon juice
  • ¾ cup milk
  • 1 egg yolk
  • 2½ tablespoons granulated sugar
  • ¾ tablespoon gelatin powder (soaked in 2 tablespoons water)
  • Decorations:
  • Whipped cream
  • ¼ dragonfruit
  • Edible flowers
  • Raspberries
  • Mint leaves
Instructions
  1. In a small bowl, combine the powdered gelatin and water. Set aside to let bloom.
  2. Cut the sponge cake into a circle and place in the bottom of a springform pan.
  3. Whip the heavy cream for 7 minutes until it reaches stiff peaks.
  4. In a blender, add three quarters of the dragonfruit, the raspberries, 4 tablespoons of the sugar and lemon juice. Blend until combined, then transfer to a small saucepan over medium heat. Cook until just before boiling, then remove from heat and stir in half the gelatin.
  5. Pour about a cup of the mixture into a separate bowl, leaving the rest in the saucepan. To the bowl add the remaining gelatin and stir to combine. Allow mixture to cool, then add milk, egg yolk and remaining sugar and whisk until thickened. Fold in the whipped cream, then pour mixture into the cake mold. Place in the fridge to cool for up to 3 hours.
  6. Remove from fridge and pipe additional whipped cream around the edges to decorate. Pour remaining mixture from the saucepan over the top of the cake. Return to refrigerator to firm up. Once firm, remove from springform pan and garnish with fruit and mint leaves.

  • 4 tbsp. extra-virgin olive oil, divided
  • 2 lb. bone-in chicken thighs
  • kosher salt
  • Freshly ground black pepper
  • 1 lb. baby red potatoes, quartered
  • 2 tbsp. butter
  • 5 cloves Garlic, Chopped
  • 2 tbsp. freshly chopped thyme
  • Freshly chopped parsley, for serving
  • 2 tbsp. Freshly Chopped Parsley
  • 2 tbsp. freshly grated Parmesan, plus more for serving
Instructions
  1. In a large skillet over medium-high heat, heat 2 tablespoons oil. Add chicken, season with salt and pepper, and sear until golden, 3 to 4 minutes, then flip and sear 3 minutes more.
  2. Meanwhile, in a 6-quart slow-cooker, toss potatoes with remaining 2 tablespoons oil, butter, garlic, parsley, thyme, and Parmesan and season generously with salt and pepper. Add chicken to slow cooker and toss gently, then cover and cook on high for 4 hours or low for 8 hours, until potatoes are tender and chicken is fully cooked.
  3. Garnish with Parmesan and parsley and serve.
