Ingredients
  • 8 lb (3.6 kg) bone-in lamb roast with fat cap
  • 12 cloves garlic, divided
  • ½ cup (120 g) olive oil
  • ⅓ cup (80 g) whole grain mustard, plus more for serving
  • 1 lemon, juiced
  • 10 sprigs fresh rosemary, stemmed and leaves finely chopped, plus whole sprigs for serving
  • 10 sprigs fresh thyme, stemmed and leaves finely chopped, plus whole sprigs for serving
  • 1 ½ tablespoons sea salt
  • 1 tablespoon freshly ground black pepper
  • ¾ cup (180 mL) dry white wine
  • 2 ½ lb (1.1 kg) yukon gold potato, halved
  • flaky sea salt, for sprinkling
Instructions
  1. -3 hours before roasting, prepare the lamb. Use a small, sharp knife to make 15 to 20 incisions, each about 2 inches (5 cm) deep, through the fat cap on top of the meat. Thinly slice 3 cloves of garlic and use your fingers to press the slices into the incisions.
  2. In a blender, combine the remaining 9 garlic cloves, the olive oil, mustard, lemon juice, rosemary leaves, thyme leaves, salt, and pepper. Blend until a paste forms.
  3. Spread the paste evenly all over the lamb. Let marinate at room temperature for 2 to 3 hours.
  4. Preheat the oven to 425°F (220°C).
  5. Place the lamb on a roasting rack in a roasting pan and pour the wine into the bottom of the pan. Roast for 15 minutes.
  6. Remove the pan from the oven and reduce the heat to 325°F (160°C).
  7. Arrange the potatoes, cut side down, in the roasting pan and place the lamb on the rack on top. Roast for 2 hours, tossing the potatoes and basting the lamb with the roasting liquid halfway through.
  8. Transfer the potatoes to a platter, baste the lamb again with the remaining pan juices, and return the lamb to the oven. Continue to roast, basting often, until an instant-read thermometer inserted into thickest part of the leg reaches 130°F (for medium-rare), 45 minutes to 2 hours more, depending on thickness. (As a general rule, the lamb should roast 20 minutes per pound for medium-rare).
  9. Transfer the lamb to a platter and set aside to rest for 20 minutes. While the lamb rests, return the potatoes to the roasting pan, season with flaky salt, and warm in the oven until just heated through, about 20 minutes. Return the potatoes to the serving platter.
  10. Carve the lamb into ½-inch (1 cm) thick slices and arrange on the platter with the potatoes, garnished with rosemary and thyme sprigs. Serve with whole grain mustard alongside.

  • 6 tablespoons white chocolate, melted
  • Assorted candies
  • Colored chocolate:
  • 4 tablespoons white chocolate, melted
  • Food coloring
Instructions
  1. Mix 1 tablespoon melted chocolate with different food coloring to create desired colors. Drizzle colored chocolate into a silicone egg mold. Use a toothpick to swirl colors together to form a marbled pattern.
  2. Pour melted white chocolate over the top and rotate mold to ensure it is fully coated. Allow to cool until hardened, then remove from mold.
  3. Press one half of each egg onto a metal sheet pan that has been heated until the edges begin to melt. Quickly fill with assorted candies, then press the two halves together until sealed.

Ingredients
NACHO FILLING
  • 8 oz (225 g) whipped cream cheese
  • 3 cups (300 g) shredded cheese blend
  • 2 cups (250 g) shredded chicken, cooked
  • ½ cup (50 g) red pepper, diced
  • ½ cup (50 g) green pepper, diced
  • 2 tablespoons fresh parsley, finely chopped
  • ½ cup (145 g) BBQ sauce
BREADING
  • 3 cups (375 g) all-purpose flour
  • 6 eggs, beaten
  • 30 oz (850 g) nacho cheese chip, finely crushed
  • 5 qt (4 L) vegetable oil, for frying
FOR SERVING
  • 1 tablespoon fresh parsley, finely chopped, for garnish
  • 1 ½ cups (335 g) guacamole
  • 1 ½ cups (335 g) salsa
  • 1 ½ cups (345 g) sour cream
Instructions
  1. In a large bowl, combine the cream cheese, cheese, chicken, peppers, parsley, and barbecue sauce.
  2. Transfer the mixture to a parchment paper-lined 9x9-inch (23x23-cm) square pan. Spread the mixture evenly and freeze for 1 hour, or until firm.
  3. Cut the block into 32 triangle poppers.
  4. Pour the flour, eggs, and crushed nacho chips into 3 separate medium bowls. Double bread the poppers by dipping them in the flour, egg wash, and nacho chips, then again in the egg wash and nacho chips.
  5. Heat the oil in a large pot to 375°F (190°C).
  6. Fry the poppers, four at a time, for 40 seconds, or until golden brown.
  7. Sprinkle parsley on top of the poppers.
  8. Serve with guacamole, salsa, and sour cream.

FOR THE CAKE
  • nonstick cooking spray
  • 2 c. all-purpose flour
  • 2 c. sugar
  • 1 tsp. baking soda
  • ½ tsp. kosher salt
  • 1 c. butter
  • 1 can Coke
  • ⅓ c. cocoa powder
  • 2 large eggs
  • ½ c. buttermilk
FOR THE GLAZE
  • 1 can Coke
  • ½ c. butter
  • ¼ c. cocoa powder
  • 1 tsp. pure vanilla extract
  • ½ tsp. kosher salt
  • 4 c. powdered sugar
Instructions
  1. Preheat oven to 350°. Spray a 9”-x-13” pan with cooking spray.
  2. In a large bowl, whisk together flour, sugar, baking soda, and salt.
  3. In a medium saucepan over medium heat, combine butter, Coke, and cocoa powder. Bring to a boil, whisking continuously. Remove from heat and whisk in eggs and buttermilk. Pour into flour mixture and mix until combined.
  4. Transfer to prepared pan and bake for 30 minutes, or until a toothpick comes out clean.
  5. While baking, make the glaze: In a medium saucepan, bring Coke to a boil. Allow it to reduce by half, about 15 minutes. Add butter, cocoa powder, vanilla and salt and stir to combine. Pour over powdered sugar and whisk until combined.
  6. Pour frosting over cake while still warm. Wait about 10 minutes for icing to set. Slice and serve.

  • 2 tbsp unsalted butter
  • 3 tbsp soft light brown sugar
  • 3 tbsp maple syrup
  • 5 firm bananas, sliced carefully lengthways
  • 200g unsalted butter
  • 100g caster sugar
  • 100g light muscovado sugar
  • 3 medium free-range eggs
  • 300g plain flour
  • 1 tsp baking powder
  • 3 ripe bananas, mashed
  • 130g dark chocolate chips
  • 150ml whole milk
Instructions
  1. Preheat the oven to 180°C/360°F. Put the 50g butter, brown sugar and maple syrup in a non stick saucepan. Cook until the sugar dissolves then pour the caramel into a well greased 23 cm cake tin. Arrange the sliced bananas, cut-side down, over the base of the tin - feel free to cut them up to make them fit!
  2. Put the 200g butter and sugar in a bowl and beat until pale and creamy. Add the eggs, one at a time, beating after each one goes in. Sift in the flour and baking powder and fold through the mixture. Fold in the mashed up bananas, chocolate chips and milk then pour on top of the bananas and caramel.
  3. Bake for 45-50 minutes or until golden on top and a skewer comes out clean. Leave to cool for a bit in the tin then flip over onto a serving plate. Enjoy with ice cream.

BBQ chicken nacho’s are such a winning combination. The tang and slight kick from BBQ sauce pairs so well. Make your own flavoured tortilla chips for extra flavour and kick!

Ingredients
  • 1 tbsp bbq seasoning
  • ½ cup melted butter
  • 1 pack tortillas
  • 2 cups shredded cooked chicken
  • ¼ cup cooked crispy bacon bits
  • 1 cup bbq sauce
  • ⅓ cup chopped spring onions
  • 2 cups mixed grated cheese
  • Chopped spring onions
  • Chopped tomatoes
Instructions
  1. Pre-heat oven to 180ºC. Line a large sheet tray with parchment paper.
  2. Cut tortillas into 8ths.
  3. Add bbq seasoning to melted butter and whisk to incorporate. Toss tortilla triangles in seasoning and arrange on lined tray in an even layer. Bake for 8 minutes until golden brown and crispy. Then arrange half on a sheet tray.
  4. Meanwhile, mix together chicken, bacon, bbq sauce and spring onions. Divide on top of the tortillas, sprinkle with half of the cheese mix. Top with remaining tortillas and repeat with chicken mix and cheese.
  5. Bake for 6-8 minutes until cheese is melted through.
  6. Top with chopped tomatoes and spring onions.
  7. Enjoy!

  • 5 lb (2.2 kg) boneless pork shoulder
  • 3 tablespoons achiote paste
  • 2 tablespoons guajillo chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon dried oregano
  • 1 tablespoon cumin
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • ¾ cup (175 mL) white vinegar
  • 1 cup (240 mL) pineapple juice
  • 1 pineapple, skinned and sliced into 1-inch (2 cm) rounds
  • 1 thick wooden skewer, trimmed to the height of your oven
  • 10 small corn tortillas
  • 1 white onion, finely chopped
  • 1 cup (40 g) fresh cilantro, finely chopped
  • 1 cup (260 g) salsa, of your choice
  • lime wedge, to serve
Instructions
  1. Preheat oven to 350°F (180°C).
  2. Slice the pork shoulder into about 1-cm (½ inch) slices, then transfer to a large dish or bowl.
  3. In a bowl, combine the achiote powder, chili powder, garlic powder, oregano, cumin, salt, pepper, vinegar, and pineapple juice, mashing and stirring until smooth with no lumps.
  4. Pour the marinade over the pork, then toss the pork slices to make sure that they are all coated on all sides. Wrap the dish/bowl in cling film then marinate the pork for at least 2 hours, up to 3-5 days in the refrigerator.
  5. On a baking sheet lined with parchment paper or foil, place down a slice or two of the pineapple. Take a wooden skewer and push it directly in the middle of the pineapple.
  6. Remove the pork from the fridge and push the slices through the skewer, layering one after the other until there is a 2-cm (1 inch) gap at the top. Push another pineapple slice on top.
  7. Bake for about an hour and a half, until slightly charred on the outside and deep red.
  8. Rest the meat for about 10 minutes, then carve off thin slices of the pork.
  9. Slice off thin pieces of the roasted pineapples as well.
  10. To assemble and serve, place some pork on the tortillas, followed by a few pieces of pineapple, a sprinkle of onions, a pinch of cilantro, then a small spoonful of the salsa. Top with a squeeze of lime juice (optional).
  11. Enjoy!

  • 2 c. canned chickpeas
  • 2 ripe avocados, cored and peeled
  • ⅓ c. tahini
  • ¼ c. lime juice
  • 2 cloves garlic
  • 3 tbsp. olive oil, plus more for serving
  • ¼ tsp. cumin
  • kosher salt
  • 1 tbsp. Chopped cilantro, for garnish
  • Red pepper flakes, for garnish
Instructions
  1. Combine chickpeas, avocados, tahini, lime juice, garlic, olive oil and cumin in the bowl of a food processor and season with salt. Blend until smooth.
  2. Pour mixture into serving bowl and garnish with cilantro and red pepper flakes. Drizzle with more olive oil if desired and serve.

  • 1kg potatoes, sliced 0.5 cm thick
  • 400ml double cream
  • 250 ml whole milk
  • 3 jalapenos, sliced
  • 12 rashers bacon, diced
  • 3 cloves of garlic
  • 1 tbsp salt
  • 1 tbsp black pepper
  • ½ cup mozzarella
  • ½ cup cheddar
Instructions
  1. In a large pot, fry the bacon until the fat is rendered and it's crisp. Add the milk, cream, jalapenos, salt, pepper and garlic. Bring to a simmer, then add the potatoes. Simmer for 5 minutes.
  2. Transfer half of the potatoes to a skillet using a slotted spoon, then add half the cheeses. Top with the remaining potatoes and the rest of the cheese.
  3. Bake for 40 minutes at 180°C, or until melted, golden and delicious.
  4. Delicious with steak!
