Ingredients
  • 1½ cups beef ragu
  • 6 sheets fresh lasagna, par cooked
  • 1½ cups ricotta cheese
  • ½ cup grated parmesan
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp chopped fresh basil
  • 9 slices mozzarella cheese
  • Ready rolled puff pastry, defrosted
  • Egg wash
Instructions
  1. Pre-heat oven to 200ºC (390ºF).
  2. Lay out puff pastry onto a sheet of parchment paper.
  3. In a bowl mix together ricotta, parmesan, salt, pepper, and basil.
  4. Place two large noodles in the middle of the puff pastry with about 3” on either side. Spread a thin layer of rage in the middle of the lasagna noodles. Top with ricotta mixture and 3 slices of cheese. Top with a thinner lasagna noodle on top to cover. Repeat with remaining ragu, ricotta, cheese, and noodles for 3 layers with the final layer being lasagna noodle. Fold over excess lasagna noodle from the base layer to cover the sides.
  5. Cut diagonal lines along the left and right side of the cheese and pepperoni about an inch apart. Remove the corner pieces. Starting from the top, fold down the flap then alternate right and left until the bottom. Fold the bottom flap up and finish alternating between right and left.
  6. Brush evenly with egg wash and transfer to a flat baking sheet.
  7. Bake for 20-25 minutes until golden brown and puffed up.
  8. Enjoy!

CROQUE MONSIEUR CROISSANT LASAGNA

Ingredients
  • 6 croissants
  • 3 tbsp dijon mustard
  • 18 slices emmental
  • 12 slices ham
  • 50g butter
  • 50g flour
  • 700ml milk
  • 1 tbsp salt
  • 1 cup grated emmental
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Cut each croissant in half lengthways and spread the bottom with dijon mustard. Layer cheese and ham and place the top layer of croissant on top.
  3. Place a layer of three croissants in a greased baking tray and top with more cheese and ham, then add the final three with another layer of cheese on top.
  4. In a sauce pan heat the butter until its foaming and stir in the flour. Cook for a minute or so until it smells biscuity, then gradually stir in the butter to make a smooth sauce. Stir in the salt and cheese and pour directly over the croissants and bake for around 30 minutes, until bubbling and golden on top.
  5. Serve straight away, wear a beret.

  • 4 tablespoons olive oil, divided
  • 1 yellow onion, diced
  • 3 bell peppers, seeded and chopped
  • 6 cloves garlic, minced, divided

  • 1 lb eggplant, cut into ½-inch (1 cm) cubes
  • 2 yellow squashes, cut into ½-inch (1 cm) cubes
  • 2 medium zucchinis, cut into ½-inch (1 cm) cubes
  • 12 oz tomato paste
  • 1 tablespoon dried oregano
  • 2 tablespoons fresh thyme
  • 28 oz diced tomato
  • 30 oz ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup fresh basil, chopped
  • ½ cup fresh parsley, chopped
  • 1 egg
  • 2 japanese eggplants, thinly sliced
  • 2 zucchinis, thinly sliced
  • 2 yellow squashes, thinly sliced
  • 6 roma tomatoes, thinly sliced
  • lasagna noodle, cooked
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Add 2 tablespoons of olive oil to a skillet on medium-high heat. Once warmed, add the onion, bell peppers, 4 minced garlic cloves, salt, and pepper. Cook, stirring occasionally, until golden brown and caramelized.
  3. Add the eggplant, yellow squash, zucchini, tomato paste, dried oregano, thyme, and more salt and pepper. Cook until the vegetables are soft and the tomato paste deepens in color and starts to stick to the bottom.
  4. Add the diced tomatoes and bring the mixture to a simmer. Cook on low for at least 30 minutes. Set aside to prepare the rest of the lasagna layers.
  5. In a large bowl, mix together the ricotta, mozzarella, basil, parsley, salt, and pepper. Set aside.
  6. To a bowl, add the sliced Japanese eggplant, yellow squash, zucchini, eggplant, Roma tomatoes, garlic, 1 tablespoon thyme, salt, pepper, and 2 tablespoons olive oil, and gently toss to combine.
  7. In a 9x13-inch (23x33 cm) glass baking pan, add a layer of the ratatouille to the bottom. Top with lasagna noodles, and spread a layer of the ricotta mixture, then shingle alternating slices of the marinated vegetables. Repeat with another layer of ratatouille, noodles, ricotta, and on the top shingle the vegetables.
  8. Bake for 30 minutes, or until the cheese and sauce are bubbling slightly and the sliced vegetables on top have browned to your liking.
  9. Slice and serve.
  10. Enjoy

  • 6 medium potatoes
  • 2 tbsp groundnut oil
  • 1 tbsp sea salt
  • 4 slices mozzarella, cut into small squares
  • 2 cups ragu
  • 1 cup bechamel sauce
  • 6 slices mozzarella
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Cut parallel lines down the length of the potatoes – you can use two wooden spoons laid next to the potato as a guide to stop you cutting all the way through if you need to.
  3. Lay the potatoes in a greased skillet and brush with oil and sprinkle with salt. Bake for an hour or until the potatoes have fanned out.
  4. Spoon the ragu over each potato and drizzle with the bechamel, then drape with a final piece of mozzarella.
  5. Bake again for another half an hour, then serve with a delicious side salad.

Ingredients
  • 1 tbsp groundnut oil
  • 2.2 lb finely sliced sirloin steak
  • 1 tbsp salt
  • 1 tbsp pepper
  • 4 green peppers, sliced into strips
  • 1 white onion, sliced into thin strips
  • 3 cloves of garlic, finely chopped
  • 3 cups bechamel sauce
  • 18 slices provolone
  • 1 pack fresh lasagna noodles
Instructions
  1. Heat the oil in a large frying pan and sear the steak pieces. Season with salt and pepper.
  2. Add the peppers and onions and cook until the moisture has evaporated and they begin to get some colour, then add the garlic and cook for a further few minutes to soften.
  3. Grease a deep sided lasagna dish and pour a layer of the bechamel into the bottom, then top with lasagna sheets, a layer of the pepper steak mix, slices of provolone and more bechamel. Repeat to the top of the dish and finish with a layer of bechamel.
  4. Bake for 40 minutes until cooked through.

  • ¼ cup flour
  • ¼ cup water
  • 5 large tortilla wraps
  • 2 cups soft cream cheese
  • 2 cups grated parmesan
  • 6 sheets lasagna
  • 3 cup beef ragu
  • 9 sheets mozzarella
  • 2 cups bechamel
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Mix the flour and water together to make a paste.
  3. Lay three tortillas in a row, overlapping at the edges slightly – brush them with the paste to make them stick. Stick another two tortillas to the top.
  4. Spoon some of the soft cream cheese onto the middle of the wrap where you’ll build your lasagna. Sprinkle with parmesan and then top with the first layer of pasta sheets.
  5. Top these with the ragu, then a layer of mozzarella, then some more cream cheese and parmesan and another layer of pasta. Repeat this twice, finishing with a layer of mozzarella.
  6. Bring the sides up and roll over the burrito carefully to create a massive wrap.
  7. Move this onto a lined baking tray and pour over the bechamel and sprinkle over the remaining parmesan.
  8. Bake for 40 mins.

  • 1 box lasagna noodles, unboiled
  • 1 tbsp. olive oil
  • ½ onion, chopped
  • 2 garlic cloves, minced
  • 1 lb. ground beef
  • 1 tsp. Italian seasoning
  • 3½ c. marinara sauce, divided
  • kosher salt
  • Freshly ground black pepper
  • 16 oz. whole milk ricotta
  • ¼ c. freshly grated Parmesan, plus more for garnish
  • ¼ c. chopped parsley, plus more for garnish
  • 4½ c. shredded mozzarella
Instructions
  1. In a large skillet over medium heat, heat oil. Add onions and cook until translucent, 3-4 minutes. Add garlic and cook until fragrant, 1 minute. Add beef and season with salt, pepper and Italian seasoning. Cook until no pink remains and add 3 cups of the marinara, stirring to combine and cooking 2-3 minutes more.
  2. In a large bowl, combine ricotta with parmesan and parsley. Season with salt and pepper and stir until fully incorporated.
  3. Grease the bowl of your slow cooker with a nonstick cooking spray. Using the remaining marinara, spread a thin layer on the bottom of the crock pot. Next add a layer of noodles (you’ll have to break some to make them fit) a layer of meat mixture, a layer of mozzarella, and a layer of ricotta. Repeat until all ingredients are used up, ending with mozzarella. Cover and cook on low for 4 to 5 hours.
  4. Garnish with more parmesan and parsley and serve.

  • 1 square tin loaf
  • ¾ cup garlic butter
  • 12 slices mozzarella
  • 1½ cups bechamel sauce
  • 2 cups ragu bolognese
  • ½ cup parmesan
Instructions
  1. Preheat the oven to 180°C/360°F
  2. Cut the loaf lengthways into four equal slices.
  3. Brush each with the garlic butter and grill/broil until toasted.
  4. Layer up the lasagna loaf – first lay down mozzarella and spread with a layer of the bechamel, then a layer of bolognese. Repeat with all the layers except the top of the loaf, which you should smother with remaining bechamel and sprinkle with parmesan.
  5. Take away and bake for 30 – 40 mins, until the bechamel on top has bubbled up and browned slightly and the loaf is hot all the way through.

  • 2 tsp oil
  • 2 small white onions, diced
  • 1 lb ground beef
  • 1½ tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • ½ cup passata
  • ¼ cup ketchup
  • 3 cups bechamel
  • 450g yellow cheddar cheese, grated
  • 8 large fresh lasagna sheets
  • Chopped gherkins
  • Sesame seeds
Instructions
  1. Preheat oven to 180C (350F).
  2. In a large saucepan over medium heat, add oil to pan and onions. Cook until translucent, about 5 minutes.
  3. Add ground beef, breaking apart with a spoon. Cook until browned and just dry. Add passata, ketchup, salt, pepper, and garlic powder. Stir to combine and bring to a boil. Turn down to a simmer and cook for 5 minutes to reduce. Take off heat and cool completely.
  4. Add béchamel to a pot over medium heat. Add 350g cheddar cheese and stir until completely melted, take off the heat and cool.
  5. In a 11×13-inch deep baking dish, add a layer of beef mixture. Top with two lasagna sheets followed by a layer of cheesy béchamel, two more lasagna sheets, beef mixture, two more lasagna sheets, cheesy béchamel and two final lasagna sheets.
  6. Top with remaining grated cheese evenly.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes. Grill cheese on top if necessary.
  8. Sprinkle with chopped gherkins and sesame seeds.
  9. Slice and enjoy!

Ingredients
  • ½ cup ricotta cheese
  • ¼ cup spinach, chopped
  • 2 tablespoons parsley, chopped
  • 2 tablespoons grated Parmesan, divided
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup marinara sauce
  • 4 no-boil lasagna noodles, broken in half
  • ½ cup mozzarella
Instructions
  1. In a small bowl, mix the ricotta, spinach, parsley, one tablespoon of Parmesan, salt and pepper until combined.
  2. In the glass container, spread a layer of tomato sauce.
  3. Top the tomato sauce with the lasagna noodles and cover the noodles with a layer of the ricotta mixture.
  4. Top the ricotta with another layer of tomato sauce and a layer of mozzarella.
  5. Continue with another layer of noodles and repeat.
  6. Cover the top layer of lasagna noodles with more tomato sauce and a layer of mozzarella and Parmesan.
  7. Place the lid on the glass container, without locking it closed.
  8. Microwave for 7 minutes or until the cheese is melted through.
  9. Remove from the microwave carefully, the container will be hot!
  10. Allow to cool and refrigerate, or enjoy immediately. Enjoy!
