Ingredients
CHESTNUT FILLING
  • 2 lb chestnut
  • 3 cups water
  • ¼ cup sugar
  • 2 tablespoons vanilla extract
MERINGUE
  • 2 egg whites
  • ½ cup sugar
CREAM FILLING
  • 1 qt whipped cream
BASE
  • 1 circle pie crust, baked
  • 1 powdered sugar, to serve
Instructions
  1. Preheat the oven to 450˚F (230˚C).
  2. Score the chestnuts in a cross with a knife.
  3. Place the chestnuts on a sheet pan and bake for 30 minutes.
  4. Remove the chestnuts with a towel, and quickly peel the warm chestnuts.
  5. Put the peeled chestnuts in a pan and add water, sugar, and vanilla extract.
  6. Cook and stir the chestnut on high heat until the water has evaporated and chestnuts has softened, about 15 minutes.
  7. Place the chestnut filling in a food processor, add in water and blend until smooth.
  8. Push the chestnut filling through an sieve into another bowl.
  9. Transfer filling to a piping bag with a circle tip and chill.
  10. Preheat the oven to 200˚F (90˚C).
  11. In a bowl, whisk the egg whites until foamy using a hand mixer.
  12. Add sugar to the egg whites and whisk until stiff peak forms.
  13. Transfer the meringue into a piping bag fitted with a circle tip and pipe the meringue in a swirling motion onto a parchment paper-lined baking sheet.
  14. Bake the meringue for 1 hour.
  15. Get the pie crust, and cut small circles to serve as the bottom for the meringue and bake for 30 minutes
  16. Place the meringue on top of the pie crust and pipe the whipped cream around it. Pipe the chestnut cream around the whipped cream.
  17. Sprinkle with powdered sugar.
  18. Enjoy!

Ingredients
  • 60 butter crackers
  • 1 egg
  • 3 tablespoons unsalted butter, melted
  • 4 russet potatoes, peeled and boiled
  • 1 tablespoon unsalted butter
  • 1 ¼ cups sour cream, divided
  • ½ cup milk
  • 1 ½ teaspoons salt
  • 1 teaspoon pepper
  • 2 cups shredded cheddar cheese
  • 11 strips bacon, cooked and chopped
  • ½ cup green onion, chopped
Instructions
  1. Preheat oven to 350°F (180°C).
  2. Place butter crackers in a food processor and blend until they are a fine, sandy texture. Transfer to a small mixing bowl.
  3. Add egg and melted butter to the crumbled crackers. Stir until crumbs become a clumpy, wet sand texture. Place the cracker mixture in the base of a 9-inch (22-inch) pie dish to create the crust. Use a measuring cup to smooth the surface.
  4. Bake for 10 minutes. Remove from oven and let cool for 10 minutes.
  5. Mash russet potatoes in a large mixing bowl. Once thoroughly mashed, add butter, ¼ cup(60 gram) sour cream, milk, salt and pepper and mix together with large spoon or spatula.
  6. Spread half of the mashed potatoes over the cooled cracker crust, about ¼-inch in thickness.
  7. Cover mashed potatoes with a layer of cheddar cheese, making sure to save some for the top.
  8. Spread the other half of mashed potatoes over the cheese layer. Sprinkle bacon bits and remaining cheese over the top.
  9. Bake for 20 minutes.
  10. Serve with sour cream and green onions.

  • 4 egg whites

Instructions
  1. In a bowl, add the flour and baking powder together, stirring to combine.
  2. In a separate bowl, add the butter, milk, and egg yolks, stirring to combine.
  3. In a third bowl, use a hand mixer to beat the egg whites until soft peaks form.
  4. Gently combine the bowl of flour with the butter and milk mixture, stirring until combined. Gently fold in the egg whites.
  5. Pour a large scoop of pancake batter into an 8-inch (20 cm) nonstick pan on low heat. Place the lid on top, and cook for 3 to 5 minutes, or until a toothpick comes out clean. Repeat with remaining batter.
  6. Serve with maple syrup.

Ingredients
  • 7 red potatoes, medium
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 cups heavy cream
  • 2 tablespoons butter, softened
  • 8 yukon gold potatoes, medium or large
  • 10 slices cheddar cheese
  • 6 strips bacon, cooked until crispy
  • ¼ cup chives, finely chopped plus more to serve
  • 1 sheet puff pastry, cut into a 9-inch circle
  • 1 teaspoon onion powder
  • 1 teaspoon garlic
  • ¼ cup grated parmesan cheese
Instructions
  1. Preheat oven to 350°F (180°C).
  2. Using a mandolin, slice the red potatoes to about 3 millimeter-thick slices.
  3. Slice the gold potatoes to about 5-6 millimeters thick.
  4. In a large bowl, combine the red potatoes with the salt, pepper, and heavy cream, and stir until evenly coated.
  5. Butter an oven-safe, 8 or 9-inch, stainless steel mixing bowl.
  6. Starting from the center, lay the red potatoes in an overlapping, circular fashion, making sure they make good contact and are sticking to the bowl. Repeat the circular pattern up until roughly ½-inch from the top of the bowl.
  7. Place the sliced gold potatoes into the cream, stirring until fully coated with cream.
  8. Shake off the excess cream, then layer the potato slices at the bottom of the bowl, building in a similar circular fashion.
  9. After 2-3 rotations, place down 2 slices of cheddar. To fill the gaps, you might need to cut 2 more slices into halves and use those strips near the edges.
  10. Layer another 2 rotations of gold potatoes.
  11. Place the strips of bacon in a single layer across the potatoes.
  12. Layer another 2 rotations of gold potatoes.
  13. Sprinkle the chives in an even layer across the potatoes.
  14. Layer another 2 rotations of gold potatoes.
  15. Fan out the rest of the cheddar slices in a circular pattern on top of the potatoes.
  16. Layer another 2 rotations of gold potatoes.
  17. Place the circle of puff pastry on top, pressing it lightly into the potatoes.
  18. Bake, uncovered, for 1 hour and 30 minutes. If the pastry or the edges of potatoes near the top are starting to get too dark, cover the dish with foil and continue baking.
  19. Cool until the bottom of the dish is no longer warm.
  20. While the potatoes bake, prepare the garlic cream sauce by transferring the cream from the soaked potatoes into a medium saucepan or pot.
  21. Add the onion powder, garlic powder, and Parmesan, stirring while bringing to a boil. Set aside and reheat when serving.
  22. Preheat oven to 400°F (200°C).
  23. Run a knife along the sides of the bowl to make sure the potatoes are release, then invert it onto a baking tray.
  24. Bake for another 10 minutes or so, until the slices start to turn golden brown and slightly crispy.
  25. Transfer the dome to a cutting board, then slice into wedges.
  26. Serve with the cream sauce, a sprinkle of chives.

Ingredients
  • 1 lb pizza dough, divided
  • 2 tablespoons olive oil
  • 8 cloves garlic, minced, divided
  • salt, to taste
  • pepper, to taste
  • 3 cups tomato puree
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 12 oz tomato paste
  • 1 lb low moisture mozzarella, sliced
  • 2 lb meatballs
  • 2 cups caramelized onions
  • 3 cups bell peppers, chopped, sauteed
  • Parmesan, to serve
Instructions
  1. Preheat oven to 450°F (230°C).
  2. Cut a 1 pound ball of pizza dough in half and roll out two large discs of dough.
  3. Spray the inside of a springform pan with cooking spray and lay in one of the dough discs. Press the dough into the corners.
  4. Sprinkle the olive oil, 2 cloves of the minced garlic, salt, and pepper on the dough and brush to cover the surface. Press the bottom of the dough with a fork.
  5. Bake until the dough is cooked and lightly golden brown, 15 minutes.
  6. Mix together the tomato puree, dried basil, 4 cloves of minced garlic, dried oregano, and tomato paste in a bowl. Season to taste with salt and pepper.
  7. Into the partially cooked bottom layer of pizza dough, shingle a layer of mozzarella slices and then a layer of the homemade marinara sauce.
  8. Spiral the meatballs in the dish as tightly as possible. Cover with more marinara sauce.
  9. Add a layer of caramelized onions, and more sliced mozzarella.
  10. Add the green, yellow, and orange bell peppers on top of the mozzarella.
  11. Cut the second piece of dough into strips to form into a lattice pattern on top of the pie.
  12. Brush with 2 tablespoons more of olive oil, 2 cloves minced garlic, and kosher salt.
  13. Bake for 40 minutes to an hour, or until the dough on top is browned and the sauce, meatballs, and cheese are heated through.
  14. Slice the pie, serve with extra marinara sauce and grated parmesan.

Ingredients
  • 4 yukon gold potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 12 strips center cut bacon
  • fresh thyme, to serve
  • grated parmesan cheese, to serve
Instructions
  1. Preheat oven to 400˚F (200˚C).
  2. Using a mandolin and a hand guard, thinly slice the potatoes into a large mixing bowl.
  3. Add olive oil, garlic powder, thyme, rosemary, pepper, and salt to the sliced potatoes and toss with tongs until evenly coated.
  4. On a cutting board, lay out two pieces of bacon overlapping each other vertically.
  5. Line the bacon with the sliced potatoes, making sure each potato is overlapping.
  6. Starting at one end, gently roll up the bacon, creating a potato rose.
  7. Place the rolled potato roses in a greased muffin tin. Repeat with the remaining bacon strips and potatoes.
  8. Bake for 20 minutes. Cover the roses with tin foil, and bake for an additional 30 minutes.
  9. Top the roses with thyme and Parmesan. Bake for an addition 5-10 minutes uncovered.

Ingredients
  • 3 lb center-cut beef tenderloin
  • kosher salt, to taste
  • black pepper, to taste
  • 2 tablespoons canola oil
  • ¼ cup english mustard
  • 1 tablespoon butter
  • 2 shallots, minced
  • 2 lb cremini mushroom, minced
  • 5 cloves garlic, minced
  • ½ lb prosciutto, thinly sliced, or ham
  • 1 sheet puff pastry
  • 2 eggs, beaten
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Let the beef tenderloin come to room temperature. Season with kosher salt and pepper on all sides.
  3. Add canola oil to a large pan on high heat. Once the oil is hot, add the tenderloin. Without moving the tenderloin, cook until a dark brown crust forms, about 3 minutes. Repeat searing on all sides, including the tenderloin ends.
  4. Remove the tenderloin from the pan and transfer to a cutting board or wire rack and remove ties.
  5. Brush the mustard on all sides of the meat while it’s still warm. Let the meat rest for while making the duxelle (mushrooms cooked and reduced until dry).
  6. To the same pan, add the butter, mushrooms, minced shallot, and minced garlic over medium heat. Cook, stirring occasionally, until all the liquid evaporates and the mushroom mixture becomes a thick, dry-like paste.
  7. Remove the mushrooms from the pan and let cool completely.
  8. Place a large layer of overlapping sheets of plastic wrap on your work surface that is twice the length and width of the tenderloin.
  9. Lay overlapping strips of prosciutto on the plastic into an even square layer.
  10. Spread a layer of the mushrooms evenly over the prosciutto.
  11. Tightly and evenly wrap the tenderloin with the prosciutto, using the plastic wrap to wrap it even tighter and seal ends. Tie the ends of the plastic wrap together to hold the Wellington’s shape. Place in the refrigerator for 15 minutes.
  12. Place a new layer of plastic wrap on the work surface and lay a sheet of puff pastry over it. Unwrap the prosciutto-wrapped beef tenderloin onto the puff pastry, wrapping until the ends meet. Cut off any extra puff pastry, making sure there is no overlap.
  13. Wrap the puff pastry in plastic wrap, tying the ends together to form a log shape. Place in the refrigerator for 15 minutes.
  14. Place the beef Wellington on a greased, parchment paper-lined baking sheet. Brush the surface with the beaten eggs. With a fork, score a decorative design onto the surface of the puff pastry.
  15. Decorate with additional pastry (optional). Sprinkle with kosher salt.
  16. Bake for 40 minutes or until the puff pastry is a dark golden brown and the internal temperature of the beef is 135°F (57°C) for medium-rare.

  • ½ cup sugar
  • ¾ cup brown sugar, packed
  • 1 teaspoon salt
  • ½ cup butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • 4 oz semi-sweet chocolate chunk, or milk chocolate
  • 4 oz dark chocolate chunk, or you preference
  • whole milk, to drink, optional
Instructions
  1. Preheat oven to 350°F (180°C).
  2. In a large bowl, whisk together the sugars, salt, and butter until a paste has formed with no lumps.
  3. Whisk in the egg and vanilla, beating until light ribbons fall off the whisk.
  4. Sift in the flour and baking soda, then fold the mixture with a spatula, being careful not to overmix too much. This will cause the gluten in the flour to toughen which will result in cakier cookies.
  5. Fold in the chocolate chunks evenly, then chill the dough for at least 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be.
  6. Scoop the dough with an ice-cream scoop onto a parchment paper-lined baking sheet, leaving at least 4 inches (10 cm) of space between cookies and 2 inches (5 cm) of space from the edges of the pan so that the cookies can spread evenly.
  7. Bake for 12-15 minutes, or until the edges have started to barely brown.
  8. Cool completely, and serve yourself a glass of milk.

  • ½ cup melted butter
  • ½ cup Frank’s RedHot® Buffalo, divided
  • 24 slices bread, divided
  • 9 slices american cheese, divided
  • 1 small tomato, sliced
  • 3 slices white cheddar cheese
  • ¼ cup shredded cheddar cheese
  • 1 tablespoon ranch dressing
  • 2 grilled chicken breasts, divided
  • 2 slices bacon, cooked
  • 6 slices mozzarella cheese
  • ½ cup spinach artichoke dip
  • ¼ cup sauteed onions
  • ¼ cup sauteed peppers
  • 6 slices provolone cheese
  • ¼ pound steak, grilled, sliced
  • ½ cup mac and cheese
  • ¼ cup blue cheese crumbles
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Add ½ cup butter and ¼ cup Frank’s RedHot Buffalo to a saucepan, then stir until melted.
  3. Pour half the melted butter and Frank’s mixture onto a sheet pan and brush it across the entire surface.
  4. Shingle 12 slices of the bread onto the sheet pan, making sure each slice overlaps and the bread reaches the edges.
  5. Place any fillings you choose onto the bread. You can mix and match any flavor combos you prefer!
  6. For the grilled cheese and tomato, place 3 slices of american cheese on the bread, 4 slices of tomato, and 3 slices of white cheddar cheese.
  7. For the chicken-bacon-ranch sandwich, place the shredded cheddar cheese, 2 bacon slices, grilled chicken slices, and ranch dressing on the bread, then top with more shredded cheddar cheese.
  8. For the spinach artichoke, layer 3 slices of mozzarella, three scoops of spinach artichoke dip, and top with 3 more slices of mozzarella.
  9. For the steak and onion, add 3 slices of provolone cheese, grilled steak, sautéed onions, and sautéed peppers, then top with 3 more slices of provolone cheese.
  10. For the buffalo chicken, add the shredded mozzarella cheese, buffalo grilled chicken, ¼ cup of blue cheese crumbles, and more shredded mozzarella.
  11. For the mac-and-cheese grilled cheese, add 3 slices american cheese, ½ cup of mac and cheese, additional Frank’s RedHot® Buffalo, and finish off with 3 more slices of american cheese.
  12. After all your fillings are in place, pour some Frank’s RedHot® Buffalo sauce on top of all the sandwiches, then shingle another 12 slices of bread on top of the fillings.
  13. Brush the bread with the remaining Frank’s RedHot® Buffalo and melted butter.
  14. Place a second sheet pan over all the sandwiches and press down. Place heavy objects that can withstand oven heat, such as heavy pots or pans, on top of the pan to press the sandwiches.
  15. Bake the sheet pan for 20 minutes or until the fillings have warmed through.
  16. Remove the heavy objects and the top sheet pan, then bake the pressed sandwiches for another 20 minutes or until the bread turns golden brown and crisps up.
  17. Remove the sandwiches from the oven, carefully flip the tray onto a large cutting board, and slice squares of sandwiches.

  • ½ onion, sliced
  • 2 cloves garlic, minced
  • 1 cup spinach
  • 4 slices mozzarella cheese, or swiss cheese
  • 8 slices ham
  • 4 fried eggs
Instructions
  1. Preheat oven to 350°F (180°C).
  2. In a bowl, mix the flour, eggs, ½ cup (120 ml) of milk, and salt, until smooth.
  3. Add in the remaining milk and mix again until the batter is thin and smooth.
  4. Heat a nonstick pan over medium heat.
  5. Add the butter and onions to the pan. Cook until browned.
  6. Add garlic, spinach, and salt, and stir until spinach is wilted.
  7. Remove the spinach mixture and clean the pan.
  8. Return the pan to medium heat and add ¼-½ cup of the batter into the pan.
  9. Swirl the batter to coat the pan and leave on the heat until the sides start to lift up from the pan.
  10. Using a spatula flip the crepe over and cook through, about 2 minutes.
  11. Repeat with remaining batter.
  12. Lay the crepes on a baking sheet.
  13. Place one slice of cheese in the middle of a crepe.
  14. Top the cheese with 2 slices of ham and the spinach mixture.
  15. Top with a fried egg and fold the edges over the egg, pressing down to make sure the sides stay in place. Repeat with other crepe.
  16. Bake the crepes for 5 minutes or until yolk is at the desired consistency.
