Ingredients
  • 9 ounces chocolate wafers (such as Bauducco), broken
  • ⅓ cup whole milk
  • 2 tablespoons canola oil
  • ½ teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar (about 3⅜ oz.)
  • 1 cup salted butter, softened
  • 10 cream-filled chocolate sandwich cookies (such as Oreos), crushed into small pieces
  • Dipper suggestions: apple slices, strawberries, and pretzels.
Instructions
  1. Place chocolate wafers, milk, oil, and vanilla in the bowl of a stand mixer fitted with a paddle attachment. Beat on low, slowly increasing speed to medium-high, and beat until mixture is well blended and uniform, scraping bowl as necessary, about 2 minutes. Add cream cheese, powdered sugar, and butter; mix on medium-low until combined. Scrape mixture to bottom of bowl, and freeze for 30 minutes.
  2. Place crushed Oreos on a plate. Using gloved hands, shape mixture into a ball; carefully roll cheese ball in Oreos to coat. Wrap in plastic wrap, and chill until firm, about 1 hour. Unwrap and serve with dippers.

Ingredients
  • 2¼ cups all-purpose baking mix (such as Bisquick)
  • 1 tablespoon light brown sugar
  • ⅔ cup plus 2 Tbsp. whole buttermilk
  • 4 ounces Cheddar cheese, shredded (about 1 cup)
  • 4 thick-cut bacon slices, cooked and coarsely chopped
  • 4 medium eggs
Instructions
  1. Preheat oven to 450°F. Combine baking mix and sugar. Slowly stir in ⅔ cup of the buttermilk just until dough comes together. Stir in cheese and bacon.
  2. Flatten dough into a ½-inch thick disk. Cut 3 (4-inch) rounds out of dough. Use scraps to form 1 more round, to have 4 total. Place rounds on a baking sheet lined with parchment paper. Make a ¼-inch deep well in the center of each round.
  3. Crack 1 egg into each well. Brush edges of rounds with remaining 2 tablespoons buttermilk. Bake in preheated oven until golden brown and eggs are set, 13 to 15 minutes. Cool slightly.

Ingredients
  • 1¾ pound skinned and boned chicken thighs
  • 1 (12-oz.) bag frozen whole kernel yellow corn, thawed
  • 1 large onion, chopped
  • 2 garlic cloves, pressed
  • 2 (14-oz.) cans reduced-sodium fat-free chicken broth
  • 1 (14-oz.) can tomato puree
  • 1 (10-oz.) can diced tomatoes and green chiles
  • 1 teaspoon smoked paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 bay leaf
  • 4 (5½-inch) corn tortillas
Toppings:
  • fresh cilantro, shredded Cheddar cheese, sliced jalapeños and avocados
Instructions
Step 1
  1. Combine first 11 ingredients in a 4-qt. slow cooker.
Step 2
  1. Cover and cook on High 7 to 8 hours. Discard bay leaf and shred chicken.
Step 3
  1. Preheat oven to 375°. Cut tortillas into ¼-inch-wide strips, and place on a baking sheet.
Step 4
  1. Bake at 375° for 5 minutes. Stir and bake 5 more minutes or until crisp. Add table salt to taste. Serve soup with tortilla strips and toppings.
