Dorito Taco Salad
Obviously Doritos make the best taco salad topping. How did we not think of it sooner?

Ingredients
  • 1 lb. ground beef
  • kosher salt
  • Freshly ground black pepper
  • 2 tsp. chili powder
  • 1 tsp. paprika
  • 1 tsp. cumin
  • 2 tbsp. tomato paste
  • 2 heads romaine lettuce, chopped
  • 1 cherry tomatoes, halved
  • 1 can black beans, drained and rinsed
  • 1 c. shredded Cheddar cheese
  • 1 avocado, diced
  • 1 c. Pico de Gallo
  • ¼ c. Chopped cilantro
  • sour cream
  • Lime wedges, for serving
Instructions
  1. Heat a large cast iron skillet over medium-high heat. Add the beef and break up the meat into small pieces with a wooden spoon. Cook, stirring occasionally, until browned all over and cooked through, about 5-7 minutes. Drain fat.
  2. Stir cumin and chili powder into the meat. Season with salt and pepper to taste. Add tomato paste and about 2 tablespoons of water. Cook until the water cooks off and the flavors have melded, about 2 minutes more. Turn off heat and set aside.
  3. Assemble salad: Toss chopped lettuce, cooked ground beef, cherry tomatoes, black beans, cheddar cheese, avocado, cilantro and pico de gallo together in a large serving bowl. Serve with sour cream and lime wedges.

Cinnamon Roll Cheesecake Bars
You don't need a cream cheese glaze on top with this cheesecake-y filling. But then again, if you're already making these bars, you might as well go all out.

Ingredients
  • 2 tubes pre-made cinnamon roll dough
  • 2 packages cream cheese
  • 1 large egg
  • ½ c. sugar
  • 1 tsp. cinnamon
Instructions
  1. Preheat oven to 350°.
  2. Unroll a tube of cinnamon roll dough and use a rolling pin to flatten it out to to roughly the size of a 9"-x-9" baking dish. Place a sheet of parchment paper on the bottom of the baking dish, then place the flattened dough on top. You may need to use your fingers to spread it out further.
  3. Combine cream cheese, egg, sugar, and cinnamon in a mixing bowl, whipping until light and fluffy, then spread mixture on top of cinnamon roll dough.
  4. Open the second tube of cinnamon roll dough. Cut each cinnamon roll in half width-wise, creating shorter, squatter rolls. Place on top of the cheesecake spread, so rolls are touching one another. Bake for 25 to 27 minutes, or until rolls are lightly golden.
  5. Drizzle with frosting from cinnamon roll packages, if desired. Let rest 10 to 15 minutes before cutting into bars.

Caprese Chicken
Tomatoes cooked in balsamic vinegar are the perfect sweet-tart compliment to this cheesy chicken.

Ingredients
  • 1 tbsp. extra-virgin olive oil
  • 1 lb. boneless skinless chicken breasts
  • kosher salt
  • Freshly ground black pepper
  • ¼ c. balsamic vinegar
  • 2 cloves garlic, minced
  • 1 pt. grape tomatoes, halved
  • 2 tbsp. shredded fresh basil
  • 4 slices mozzarella
Instructions
  1. In a large skillet over medium-high heat, heat oil.
  2. Season chicken with salt and pepper and cook until golden and cooked through, 6 minutes per side. Transfer to a plate.
  3. Add balsamic vinegar to skillet to deglaze, then add garlic and stir until fragrant, 1 minute. Add tomatoes and season with salt. Let simmer until soft, 5 to 7 minutes.
  4. Stir in basil.
  5. Return chicken to skillet and nestle in tomatoes. Top with mozzarella and cover with a lid to melt cheese.
  6. Spoon tomatoes over chicken and serve.

Taco Stuffed Avocados

Ingredients
  • 4 ripe avocados
  • Juice of 1 lime
  • 1 tbsp. extra-virgin olive oil
  • 1 medium onion, chopped
  • 1 lb. ground beef
  • 1 packet taco seasoning
  • Kosher salt
  • Freshly ground black pepper
  • ⅔ c. shredded Mexican cheese
  • ½ c. shredded lettuce
  • ½ c. quartered grape tomatoes
  • Sour cream, for topping
Instructions
  1. Halve and pit avocados. Using a spoon, scoop out a bit of avocado, creating a larger well. Dice removed avocado and set aside to use later. Squeeze lime juice over all avocados (to prevent browning!).
  2. In a medium skillet over medium heat, heat oil. Add onion and cook until tender, about 5 minutes. Add ground beef and taco seasoning, breaking up the meat with a wooden spoon. Season with salt and pepper, and cook until the beef is no longer pink, about 6 minutes. Remove from heat and drain fat.
  3. Fill each avocado half with beef, then top with reserved avocado, cheese, lettuce, tomato, and a dollop sour cream.

Banana Pudding Cake

Ingredients
  • 1 box vanilla cake mix, plus ingredients called for on box
  • 1 (3.4 oz) box vanilla pudding
  • 2 c. cold milk
  • ½ c. cool whip
  • 2 Bananas, sliced
  • 1½ c. butter, softened
  • 5 c. powdered sugar
  • 2 tsp. pure vanilla extract
  • ¼ c. plus 2 tbsp. heavy cream
  • 1 c. crushed Nilla wafers
  • Whole Nilla Wafers, for garnish
Instructions
  1. Preheat oven to 350°. Line two round 9" cake pans with parchment paper and grease with cooking spray. Prepare cake mix according to package instructions. Divide batter between cake pans and bake until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Let cakes cool for 10 minutes in pans then invert onto wire racks to cool completely.
  2. Make pudding: In a large bowl, combine milk and pudding mix and stir until thickened, about 5 minutes. Fold in Cool Whip.
  3. Make butterceam: In a large bowl using a hand mixer, combine butter, 3 cups powdered sugar, and vanilla. Beat until light and fluffy. Add remaining sugar and heavy cream and beat until smooth.
  4. Assemble cake: Using a serrated knife, cut off the rounded top of each cake to level. Top one cake with a thick layer of pudding then top with most banana slices. (Reserve some to garnish.) Place second cake on top and frost entire cake with buttercream, reserving about 1 cup to pipe on top. Press crushed Nilla wafers around the sides of the cake.
  5. Transfer remaining buttercream to a piping bag fitted with a large star tip and pipe large swirls around the top of the cake. Decorate with Nilla wafers and more banana slices.

Ingredients
  • 3 c. limeade
  • 4 envelopes gelatin
  • ¾ c. tequilla
  • ¼ c. triple sec
  • Lime wedge, for rim
  • Coarse salt, for rim
Instructions
  1. In a small saucepan, add limeade and sprinkle over gelatin. Let bloom, 2 minutes. Turn heat to medium and whisk until gelatin is dissolved. Remove from heat and stir in tequila and triple sec.
  2. Transfer mixture to large measuring cup and divide between small plastic jello shot glasses. Place in refrigerator until set, about 2 hours.
  3. When ready to serve, run a lime wedge around the rim of each shot glass and dip into coarse salt.

Ingredients
  • 1 lb. spaghetti
  • 2 eggs, lightly whisked (divided)
  • ½ c. finely grated Parmesan
  • 2 tbsp. extra-virgin olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 lb. ground beef
  • 2 tbsp. tomato paste
  • 1 28 oz can crushed tomatoes
  • ¼ tsp. dried oregano
  • 3 c. ricotta
  • 3 c. shredded mozzarella
  • 2 tbsp. chopped Italian parsley
Instructions
  1. In a large pot of salted boiling water, add spaghetti and cook until al dente, about 8 minutes. Drain water then return the spaghetti to the pot. Add 1 egg and the Parmesan and toss to combine.
  2. Meanwhile, make sauce. In a large pot over medium, heat olive oil. Add onion and cook until tender, about 5 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Add the ground beef, breaking up the meat with a wooden spoon, and cook until the meat is no longer pink, about 6 minutes. Drain fat then return the pot to medium heat and stir in tomato paste. Cook for 1 minute, then add the crushed tomatoes and oregano. Season with salt and pepper and simmer for 10 minutes.
  3. In a medium bowl, combine ricotta and remaining egg. Stir to combine.
  4. In a large baking dish, spoon a thin layer of sauce in the bottom of the dish. Top with half of the spaghetti noodles, cover with about half of the remaining sauce, half of the ricotta mixture and half of the mozzarella. Repeat once more. Bake until the cheese is melty and the lasagna is warmed through, about 20-30 minutes. Garnish with parsely.

Ingredients
  • 1 tube refrigerated biscuit dough
  • 1 tbsp. butter
  • 8 eggs
  • ¼ c. milk (preferably whole)
  • 2 tbsp. Chopped chives
  • 8 slices bacon, cooked and crumbled
  • 1½ c. shredded Cheddar cheese
  • 4 tbsp. melted butter
  • 1 tbsp. Coarse salt
  • 1 tbsp. poppy seeds
Instructions
  1. Preheat oven to 375°. Spray an 8" round baking pan or pie dish with cooking spray.
  2. In a large nonstick skillet, melt butter over medium heat. In a large bowl, whisk together eggs and heavy cream. Pour egg mixture in pan and let set slightly. Reduce heat to medium low, and stir occasionally until scrambled eggs reach desired consistency. Season with salt and pepper. Remove from heat and fold in chives.
  3. Flatten each biscuit round to about ¼” thickness. Top each round of dough with scrambled eggs, bacon and cheese. Bring the edges of the dough together and pinch to seal. Place in pan seam side-down.
  4. Brush with tops with melted butter then sprinkle with coarse salt and poppy seeds. Bake until the biscuits are golden and cooked through, about 20-25 minutes. Serve warm.

Ingredients
FOR CHICKEN
  • 3 boneless skinless chicken breasts
  • ½ c. Caesar dressing, plus more for garnish
  • 3 tbsp. olive oil, divided
  • Juice of 1 lemon, divided
  • Kosher salt
  • Freshly ground black pepper
FOR LETTUCE WRAPS
  • 9 leaves romaine or butterhead lettuce, for cups
  • ½ c. quartered cherry tomatoes
  • 4 strips bacon, cooked and crumbled
  • ¼ c. freshly grated Parmesan, for garnish
Instructions
  1. In a medium bowl, toss chicken with dressing, 2 tablespoons olive oil, and half of lemon juice. Season generously with salt and pepper, cover with plastic wrap, and let marinate in fridge for at least 30 minutes.
  2. In a large skillet over medium heat, heat remaining oil. Add chicken breasts to skillet and cook until golden and no longer pink, 8 minutes per side. Remove from heat, let rest 5 minutes, then cut into bite sized pieces.
  3. Assemble lettuce wraps: Fill each lettuce cup with chicken pieces, tomatoes, and bacon. Top with a squeeze of lemon, more dressing, Parmesan, and a couple extra cranks of black pepper.

  • 4 zucchini, halved lengthwise
  • 1 tbsp. extra-virgin olive oil
  • ½ onion, chopped
  • 2 cloves garlic, minced
  • 1 lb. ground beef
  • ½ tsp. chili powder
  • ½ tsp. ground cumin
  • ¼ tsp. paprika
  • Kosher salt
  • Freshly ground black pepper
  • 1 (15-oz.) can black beans
  • 1 c. chopped cherry tomatoes
  • ½ c. corn
  • 1 c. shredded cheddar
  • 1 c. shredded monterey
  • 2 tbsp. chopped cilantro
Instructions
  1. Preheat oven to 350°. Score zucchini (like you’re dicing an avocado) and scoop out insides into a large bowl.
  2. In a large skillet over medium heat, heat olive oil. Add onion and cook until soft, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute more. Add ground beef, breaking up the meat with a wooden spoon. Cook until beef is no longer pink, about 6 minutes. Drain fat.
  3. Stir in chili powder, cumin, and paprika, then season with salt and pepper. Stir in black beans, cherry tomatoes, and corn.
  4. Spoon beef mixture into zucchini then top with cheeses. Bake until zucchini is just tender and cheeses are melted, about 15 minutes. Garnish with cilantro and serve warm.
