Jalapeño Popper Grilled Cheese

Ingredients
  • 4 oz. cream cheese, softened
  • 1 jalapeño, finely chopped (seeded if desired)
  • 1 tsp. garlic powder
  • kosher salt
  • finely ground black pepper
  • 4 slices french bread
  • 2 c. shredded Cheddar
  • 4 slices cooked bacon, halved
Instructions
  1. In a large bowl, stir together cream cheese, jalapeño, and garlic powder and season with salt and pepper.
  2. Butter one side of each slice of French bread. On the other side of two slices, spread a thin layer of the cream cheese mixture.
  3. In a large skillet over medium heat, add bread with cream cheese mixture, buttered side down. Top with ½ cup cheddar and half the bacon, then top with another ½ cup cheddar. Top with remaining slice of bread, buttered side up.
  4. Cook until melty and golden, 4 to 5 minutes, then flip and cook 5 minutes more.
  5. Repeat with second sandwich.

Cheesy Spinach Artichoke Bagels

Ingredients
  • 8 oz. cream cheese, softened
  • ½ c. finely chopped artichoke hearts
  • ½ c. finely chopped spinach
  • 1 c. shredded mozzarella, divided
  • ½ c. freshly grated Parmesan
  • 1 Garlic clove, minced
  • ½ tsp. red pepper flakes, plus more for garnish
  • kosher salt
  • Freshly ground black pepper
  • 2 bagels, halved
  • 1 tbsp. chopped parsley
Instructions
  1. Preheat oven to 350° and line a medium cooking sheet with parchment paper. In a large bowl, combine cream cheese, artichoke hearts, spinach, ⅔ cup mozzarella, parmesan, garlic and red pepper flakes. Season with salt and pepper and stir to combine.
  2. Place bagels cut side up on baking sheet and spread each with spinach and artichoke mixture. Top with remaining mozzarella. Bake until bagels are warmed through and cheese is melty, 10 to 12 minutes. Broil if desired.
  3. Garnish with parsley and more red pepper flakes. Serve.

Chicken Fried Steak Bowl
This shortcut lets you make a roux in the same pan as your chicken fried steak. Game. Changed.

Ingredients
CHICKEN FRIED STEAK BITES
  • 1½ lb. cube steak
  • 3 Eggs, beaten
  • 1 c. flour
  • 1 tsp. salt
  • 1 tsp. Black pepper
  • 1 tsp. cayenne pepper
  • 2 tsp. garlic powder
  • vegetable oil (enough to fill pan 1")
GRAVY
  • ¼ c. reserved vegetable oil
  • ¼ c. flour
  • ½ tsp. salt
  • 1 tsp. Pepper
  • 1½ c. milk
CHICKEN FRIED STEAK BOWL MIX-INS
  • 3 c. Mashed potatoes
  • 1 package green beans, steamed (12 oz)
  • 1 can corn (15.25 oz)
Instructions
Make the chicken fried steak bites:
  1. Cut steak into bite-sized pieces. Set aside.
Set up a dredging station:
  1. Place beaten eggs in a shallow bowl next to the oven. In a second shallow bowl, combine flour, salt, pepper, cayenne and garlic powder.
  2. Place a skillet on the oven over medium-high heat. Add about 1" of vegetable oil, giving it a few minutes to warm up (the oil will start to shimmer slightly once it's ready for frying).
  3. Using tongs, dip pieces of steak into the flour mixture, then the eggs, then back into the flour. Place the pieces, one by one, into the oil, frying them until golden brown (about 2 minutes). Place them on a plate lined with paper towels to drain off any excess grease.
Make the gravy:
  1. Drain most of the oil from the skillet, reserving ¼ c to make the gravy. Reduce heat to medium, and slowly whisk in flour, one tablespoon at a time, until you've formed a light brown roux. Season with salt and pepper, then whisk in milk. Let it simmer until thick enough to coat the back of a spoon. Remove from heat.
  2. Prepare mashed potatoes and warm green beans and corn. Layer mashed potatoes, green beans, corn and chicken fried steak bites into bowls, then drizzle with gravy and serve.

Ingredients
  • 3 c. shredded mozzarella, divided
  • ½ c. freshly grated Parmesan, plus more for serving
  • 3 cloves garlic, minced
  • 1½ c. marinara
  • 1 tbsp. freshly chopped parsley, plus more for garnish
  • pinch of crushed red pepper flakes
  • kosher salt
  • Freshly ground black pepper
  • 12 oz. fresh or frozen breaded chicken, cooked according to package instructions and diced
  • 4 bell peppers, halved and seeds removed
  • ½ c. low-sodium chicken broth
Instructions
  1. Preheat oven to 400º. In a large bowl, combine 2 cups mozzarella, Parmesan, garlic, marinara, parsley, and red pepper flakes and season with salt and pepper. Stir until combined, then gently fold in chicken.
  2. Spoon mixture into halved bell peppers and sprinkle with remaining 1 cup mozzarella.
  3. Pour chicken broth into baking dish (to help the peppers steam) and cover with foil.
  4. Bake until peppers are tender, 55 minutes to 1 hour. Uncover and broil 2 minutes.
  5. Garnish with parsley and more Parmesan and serve.

Ultimate Easy Quesadilla Recipe
This ain't your average quesadilla.

Ingredients
  • 1 tbsp. vegetable oil
  • 1 Onion, finely chopped
  • 1 lb. ground beef
  • ½ tsp. ground chili powder
  • ½ tsp. ground paprika
  • ½ tsp. ground cumin
  • 8 medium flour tortillas
  • 1½ c. Monterey Jack, shredded
  • 1 avocado, sliced
  • 2 tbsp. Chopped cilantro
Instructions
  1. Heat vegetable oil in a large pan over medium heat. Sauté onions until soft. Add ground beef and spices, breaking up the meat with a wooden spoon. Stir occasionally and sauté until the meat cooked through. Remove pan from heat and drain excess fat. Season mixture with salt and pepper to taste. Clean pan and return over medium heat.
  2. Meanwhile, assembly quesadillas. Sprinkle cheese onto 4 flour tortillas. Top with beef mixture, avocado and cilantro. Top each tortilla with a second tortilla.
  3. Working one at a time, transfer quesadillas to the heated pan. Cook until golden-brown, about 3 minutes. When ready to flip, cover the pan with a large plate. Invert pan to transfer the quesadilla onto the plate, then slide the quesadilla back onto the pan (golden side up). Cook until golden-brown. Slice into triangles and serve warm.

Ingredients
  • 1 head of cauliflower, cut into florets
  • 1 c. all-purpose flour
  • 2 c. panko breadcrumbes
  • 3 large eggs, beaten
  • kosher salt
  • Freshly ground black pepper
  • 1 c. barbecue sauce
  • ½ c. brown sugar
  • Juice of 2 limes
  • 1 tsp. garlic powder
  • Ranch dressing, for serving (optional)
Instructions
  1. Preheat oven to 375 degrees F. In a large bowl, combine flour and cauliflower, Toss until fully coated.
  2. Set up a dredging station: In one bowl, add panko breadcrumbs and in another bowl whisk eggs and add 2 tablespoons water. Dip cauliflower in beaten eggs, then panko until fully coated. Transfer to a parchment-lined baking sheet and season generously with salt and pepper.
  3. Bake until golden and crispy, 20 to 25 minutes.
  4. Meanwhile, in a small saucepan over low heat, warm barbecue sauce, brown sugar, lime juice, and garlic powder.
  5. Coat baked cauliflower in sauce and serve with ranch, if desired.

Ingredients
  • 2 eggs
  • 2 tbsp. water
  • ½ avocado, lightly mashed
  • 2 slices cooked bacon
  • ¼ c. shredded Cheddar cheese
Instructions
  1. In a medium nonstick pan, place two mason jar lids (centers removed). Spray the entire pan with cooking spray and heat over medium heat. Crack eggs into the centers of the lids and lightly whisk with a fork to break up yolk.
  2. Pour water around the lids and cover the pan. Cook, letting the eggs steam, until the whites are cooked through, about 3 minutes. Remove lid and top one eggs with cheddar. Cook until the cheese is slightly melty, about 1 minute more.
  3. Invert the egg bun without the cheese onto the plate. Top with mashed avocado and cooked bacon. Top with the cheesy egg bun, cheese side-down. Eat with fork and knife.

Ingredients
FOR THE FILLING
  • 4 oz. cream cheese, softened
  • ⅓ c. peanut butter
  • 1 large egg
  • ⅓ c. sugar
FOR THE BREAD
  • 3 ripe bananas
  • ½ c. butter, melted
  • 1 c. sugar
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • 1 c. flour
  • ¼ c. cocoa powder
  • 1 tsp. baking soda
  • 1 c. chocolate chips
  • Pinch kosher salt
Instructions
  1. Preheat oven to 350° and line a 9x5 loaf pan with parchment paper. Set aside.
  2. In a medium bowl, combine cream cheese, peanut butter, egg and sugar. Using a hand mixer, beat until smooth. Place in refrigerator while making the banana bread batter.
  3. In a large bowl using a fork, mash bananas. Add butter, sugar, eggs and vanilla and whisk until smooth. Add flour, cocoa powder and baking soda and stir again until smooth and no flour remains. Fold in chocolate chips until fully incorporated.
  4. Add half the batter into prepared loaf pan, add your peanut butter layer on top in a smooth layer, and top with the rest of the chocolate batter. Smooth top and place in the oven to bake, 1 hour and 5 minutes, or until a toothpick inserted in the center comes out clean. Let cool 15 minutes, slice and serve.

  • 3 zucchini, halved crosswise
  • 6 oz. cream cheese, softened
  • 1 c. shredded mozzarella, divided
  • ½ c. shredded Cheddar
  • 4 slices bacon, cooked and crumbled, 1 tbsp reserved for topping
  • 1 jalapeno, minced
  • 1 tsp. garlic powder
  • kosher salt
  • Freshly ground black pepper
  • 1 tbsp. chopped parsley
Instructions
  1. Preheat oven to 425°. Slice off both ends of zucchini and discard. Line up chopsticks on either side of zucchini, then carefully make ¼” slices, making sure your knife hits the chopsticks. Repeat with remaining zucchini.
  2. Place zucchini on a parchment-lined rimmed baking sheet and bake until pliable, 10 minutes.
  3. Meanwhile, make jalapeño popper filling: in a medium bowl combine cream cheese, ½ c mozzarella, cheddar, bacon, jalapeño and garlic powder. Season with salt and pepper and stir until fully combined.
  4. Remove zucchini from oven and stuff jalapeño mixture between each slice. Top with remaining mozzarella and bacon and bake until cheese is melty, 6 to 8 minutes. Garnish with parsley and serve.

Mozzarella-Stuffed Chicken Parm

Ingredients
  • 1 lb. boneless skinless chicken breasts
  • 8 oz. fresh mozzarella
  • kosher salt
  • Freshly ground black pepper
  • 1 c. flour
  • 3 Eggs, beaten
  • 1 c. panko bread crumbs
  • 1 tsp. dried oregano
  • ½ tsp. garlic powder
  • ½ c. freshly grated Parmesan, divided
  • Olive oil, for frying
  • 2 c. marinara
  • ¼ c. Thinly sliced basil
  • 2 tbsp. chopped parsley
Instructions
  1. Preheat oven to 425°. Using a sharp paring knife, cut a deep slit into each chicken breast. Stuff pockets with mozzarella then press edges of the chicken together to seal the chicken. Season outside of chicken with salt and pepper.
  2. Put the flour, eggs and panko bread crumbs into three separate shallow bowls. Into the panko bread crumbs, whisk in garlic powder, dried oregano, ¼ cup Parmesan and ½ teaspoon salt.
  3. Dip the stuffed chicken in flour, shaking off excess, then dip the chicken into egg, tossing to coat. Dredge chicken in bread crumbs, making sure the chicken is evenly coated.
  4. In a large skillet over medium heat, heat a thin layer of olive oil. Add chicken to skillet and cook until golden on both sides, about 4 minutes per side. Pour marinara around chicken and scatter basil on top of marinara. Turn off heat then sprinkle remaining Parmesan on top of chicken.
  5. Transfer skillet to oven and bake until the chicken is cooked through, about 20 minutes more. Garnish with parsley and serve warm.
