Potatoes - unparalleled in their versatility, these humble looking tubers have graced the tables of kings and lined the gutters of many a bad night out. There are few things that do not benefit from hasselbacking or being "croqued" and our lumpy friends certainly aren't one of them - in fact, stuffed full of ham and cheese and covered in bechamel sauce, these Franco-British love ins are essentially heaven on a plate. Nom.

Ingredients
  • 7 medium potatoes
  • 1 tbsp oil
  • 1 tbsp salt
  • 10 slices emmental
  • 10 slices ham
  • 2 cups bechamel/white sauce
  • 2 cups grated emmental
Instructions
  1. Begin by slicing parallel lines down the length of each potato, using two wooden spoons as guides to prevent the knife cleaving your tater in half.
  2. Rub each one with oil and sprinkle with salt, then bake for at least an hour, until they begin to fan out and look all sexy.
  3. Remove from the oven and leave until cool enough to handle.
  4. Stick slices of emmental and ham in each alternate slit in the potato then cover with bechamel sauce and more emmental.
  5. Bake for a further 20 minutes until the cheese is bubbling.

Giant Cheese Stuffed Burger Wellington
Heavens. What is this perfect circle of meaty joy? This vast, happy bundle of fun? It's a cheeseburger wellington! Dripping with cheese and wrapped with buttery pastry, it's basically the most economical, delicious way of serving a crowd since Jesus fed the 5,000.

Ingredients
  • 4lb beef mince
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tsp garlic powder
  • 2 cups grated mixed cheese
  • 1 tbsp oil
  • 2.2 lb puff pastry
  • 3 egg yolks, beaten
  • 2 tbsp sesame seeds
Instructions
  1. Preheat the oven to 180°C/360°F.
  2. Mix the beef mince together with the salt, pepper and garlic powder. Split in two and press each half into a springform cake tin on a sheet of baking paper. Sprinkle one half with cheese and lay the other on top, then press together around the edges to seal.
  3. Heat the oil in a large frying pan then fry the massive burger on both sides (you can flip it by placing a plate on top and spinning the pan upside-down).
  4. Cut the pastry into two circles, each larger than the burger. Lay the burger on one and paint the visible edge of pastry with egg yolk, then lay the other pastry circle on top and press together to seal and crimp around the edges.
  5. Brush the whole thing with more egg yolk and sprinkle with sesame seeds.
  6. Bake for 40 - 50 minutes until a temperature probe says the beef is cooked through.

Ingredients
  • 2 lb. Brussels sprouts
  • 2 tbsp. olive oil
  • 2 cloves garlic, minced
  • 1 tsp. chopped thyme
  • kosher salt
  • Freshly ground black pepper
  • 1 c. shredded mozzarella
  • ¼ c. freshly grated Parmesan
  • Fresh parsley, chopped, for garnish
Instructions
  1. Preheat oven to 425° and line a large baking sheet with parchment paper. Prepare an ice bath in a large bowl.
  2. Blanch brussels sprouts: Bring a large pot of salted water to a boil. Add brussels sprouts and cook until bright green and very tender, about 10 minutes. Add brussels sprouts to ice bath to cool then drain.
  3. On a large baking sheet, toss blanched brussels sprouts with olive oil, garlic and thyme. Using the end of a small glass or mason jar, press down on the brussels sprouts to smash them into a flat patty. Season each smashed brussels sprout with salt and pepper, then sprinkle mozzarella and Parmesan on top.
  4. Bake until the bottoms of the sprouts are crispy and the cheese is melted and golden, about 20 minutes.
  5. Garnish with parsley and serve warm.

Ingredients
  • ½ cup sugar
  • ¾ cup brown sugar, packed
  • 1 teaspoon salt
  • ½ cup coconut oil
  • ¼ cup non-dairy milk
  • 1 teaspoon vanilla extract
  • 1 ½ cups flour
  • ½ teaspoon baking soda
  • 4 oz vegan semi-sweet chocolate, chunks
  • 4 oz vegan dark chocolate, chunks
Instructions
  1. Preheat oven to 350°F (180°C).
  2. In a large bowl, whisk together the sugar, brown sugar, salt, and coconut oil until combined.
  3. Whisk in non-dairy milk and vanilla, until all sugar has dissolved and the batter is smooth.
  4. Sift in the flour and baking soda, then fold the mixture with a spatula, being careful not to overmix.
  5. Fold in the chocolate chunks evenly.
  6. Chill the dough for at least 30 minutes, or overnight.
  7. Scoop the dough with an ice cream scoop onto a parchment paper-lined baking sheet. Be sure to leave at least 2 inches of space between cookies and the edges of the pan so cookies can spread evenly.
  8. Bake for 12-15 minutes, or until cookies just begin to brown.
  9. Cool completely.
  10. Enjoy!

Ingredients
CHEESECAKE FILLING
  • 8 oz cream cheese
  • 1 egg
  • 2 tablespoons heavy cream
  • ⅓ cup sugar
  • 1 teaspoon vanilla
FRENCH TOAST EGG MIXTURE
  • 9 brioche breads
  • 4 eggs
  • ¾ cup milk
  • ½ cup heavy cream
  • 1 tablespoon vanilla
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
CARAMELIZED TOP
  • 2 tablespoons butter
  • 2 tablespoons sugar
  • ½ lb strawberry, sliced
  • 3 bananas, sliced
  • powdered sugar, for dusting
Instructions
  1. Preheat oven to 350˚F (180˚C).
  2. For the cheesecake filling: in a small bowl, combine cream cheese, egg, heavy cream, sugar and vanilla. Beat until smooth.
  3. For the French toast egg mixture, combine eggs, milk, heavy cream, sugar, vanilla, cinnamon, nutmeg, and salt in a large mixing bowl. Stir until well incorporated.
  4. Dip slices of brioche in egg mixture.
  5. Transfer brioche slices and cover bottom of a loaf pan, using a half or a quarter of a slice if necessary.
  6. Cover the slices with cheesecake filling and spread evenly.
  7. Layer another row of brioche slices and top with slices of strawberry and banana.
  8. Layer one last row of brioche slices using small pieces of the bread to fill in the holes.
  9. Bake for 30 minutes covered, then 10 minutes uncovered.
  10. Let cool to room temperature.
  11. Invert the loaf onto a parchment paper-lined baking tray.
  12. Brush top of loaf with butter and sprinkle sugar over top.
  13. Broil on high for 5 minutes or until sugar starts to carmelize.
  14. Garnish with more strawberries, banana, and powdered sugar. Slice and serve.
  15. Enjoy!

  • Cooking spray, for pan
  • 8 eggs
  • ¼ c. milk
  • 8 slices bacon
  • kosher salt
  • Freshly ground black pepper
  • 2 tbsp. finely chopped chived
  • 10 mini bagels, halved
  • 4 tbsp. cream cheese, softened
  • 1½ c. shredded Cheddar cheese
  • 3 tbsp. butter, melted
  • 2 tsp. dried onion
  • 2 tsp. granulated garlic
  • 2 tsp. sesame seeds
  • 2 tsp. poppy seeds
Instructions
  1. Preheat oven to 350° and grease a large baking dish with cooking spray. In a large bowl, beat eggs and milk until light and frothy. Set aside.
  2. In a large skillet over medium heat, cook bacon until crispy. Remove slices from pan to drain on paper towels. Pour out most of bacon fat but leave about 1 tablespoon in the skillet.
  3. Pour egg mixture in skillet then immediately turn down heat to medium-low. Stir occasionally with a spatula or wooden spoon. When the eggs are nearly set, season with salt and pepper and stir in chives. Remove from heat.
  4. Spread cream cheese onto the bottom halves of the bagels then place in greased baking dish, side by side. Spread egg mixture over bagels then crumble cooked bacon on top. Sprinkle with cheddar then add the bagel tops. Brush with bagel tops with melted butter and sprinkle with dried onion, granulated garlic, sesame seeds, and poppy seeds.
  5. Bake until the bagels are toasty and the cheese has melted, about 10 minutes. Serve warm.

  • 1 lb. lasagna noodles
  • 3 tbsp. butter
  • 2 cloves garlic, minced
  • 3 tbsp. all-purpose flour
  • 3 c. skim milk
  • kosher salt
  • Freshly ground black pepper
  • 1 c. freshly grated Parmesan
  • 2 c. shredded rotisserie chicken
  • ½ lb. frozen chopped spinach, defrosted and drained
  • 1 15-oz. can artichoke hearts, chopped
  • 2 pints skim ricotta
  • 4 c. shredded mozzarella
Instructions
  1. Preheat oven to 350º. In a large pot of salted boiling water, cook lasagna noodles until al dente. Drain and transfer to a sheet pan to cool.
  2. Meanwhile, in a large skillet over medium heat, melt butter. Add garlic and cook until fragrant, 1 minute, then add flour and whisk until golden brown, 1 minute more. Pour over milk and season with salt and pepper. Bring to a simmer and let thicken, 2 to 4 minutes. Add Parmesan and stir until creamy, then add shredded chicken, spinach, and artichokes and stir until combined.
  3. Assemble lasagna: In a large baking dish, spread a thin layer of the sauce mixture. Top with a layer of lasagna noodles, slightly overlapping each, a layer of ricotta, a layer of the chicken mixture, and a layer of mozzarella. Repeat for three layers, ending with mozzarella.
  4. Cover with foil and bake until warm and bubbly, 35 minutes. Broil until cheese is golden, 2 minutes more.
  5. Let cool 10 minutes before slicing and serving.

  • 4 bell peppers, halved
  • 1½ lb. sirloin steak, thinly sliced
  • 1 large onion, sliced
  • 16 oz. Crimini mushrooms
  • kosher salt
  • Freshly ground black pepper
  • 16 slices provolone
Instructions
  1. Preheat oven to 325º. Place peppers in a large baking dish and bake until tender, 20 minutes.
  2. Meanwhile, in a large skillet over medium-high heat, heat oil. Add steak and cook about 1 minute per side. Set aside.
  3. Add onions and mushrooms to skillet and season with salt and pepper. Return steak to skillet and stir to combine.
  4. Add provolone to bottom of peppers and top with steak mixture. Top with another piece of provolone and broil, 3 minutes.
  5. Serve hot.

  • 1 box chocolate cake mix, plus ingredients called for on box
  • 2 c. marshmallow creme
  • 1 tbsp. water
  • 2 c. heavy cream
  • 2 packets hot cocoa mix
  • ¼ c. marshmallow bits
  • 2 tbsp. chocolate shavings
Instructions
  1. Preheat oven to 350º and grease a 9"-x-13” pan. Prepare chocolate cake mix according to package directions and bake until a toothpick inserted in the center comes out clean, about 25 minutes.
  2. Poke cake all over with the bottom of a wooden spoon. In a small bowl, microwave marshmallow crème and water for 10 seconds, then stir until smooth. Pour all over cake, making sure to fill the poked holes.
  3. Make whipped topping: in a large bowl, combine heavy cream and hot cocoa mix. Using a hand mixer, beat until stiff peaks form, 3 to 4 minutes. Frost cake with the whipped cream and garnish with marshmallow bits and chocolate shavings. Serve.

  • 8 oz. cream cheese, softened
  • ¾ c. mayonnaise
  • ¾ c. sour cream
  • 1 c. freshly grated Parmesan
  • ¾ c. shredded white Cheddar
  • ½ c. Gruyere
  • 1 (14-oz.) can artichoke hearts, drained and chopped
  • 1½ c. frozen spinach, defrosted and chopped
  • 2 cloves garlic, minced
  • 1 tsp. lemon zest
  • ½ tsp. red pepper flakes
  • kosher salt
  • Freshly ground black pepper
  • Baguette, for serving
Instructions
  1. Preheat oven to 350°. In a large bowl, combine all ingredients except baguette. Mix until fully combined and season with salt and pepper. Transfer to a baking dish and smooth top with a spatula.
  2. Bake until bubbly and slightly golden, 30 minutes. If you’d like the dip to develop a more golden top, broil on high for 2 minutes.
  3. Serve with baguette on the side, for dipping.
