Pork Chops with Creamy Scalloped Potatoes
Tender pork chops are baked in the oven with creamy scalloped potatoes with a hint of thyme and Dijon mustard.

Ingredients
  • 5 tablespoons butter, divided
  • 6 boneless thick-cut pork chopssalt and ground black pepper to taste
  • 2 teaspoons Dijon mustard
  • 2 teaspoons dried thyme
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • ½ cup half-and-half
  • 6 potatoes, peeled and thinly sliced, divided
  • ½ cup diced onion, divided
  • 1 cup shredded Cheddar cheese, divided
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with 1 tablespoon butter.
  2. Melt 1 tablespoon butter in a skillet over medium heat. Season pork chops with salt and pepper; cook in skillet until browned, 3 to 5 minutes per side.
  3. Melt remaining 3 tablespoons butter in a small saucepan over medium-high heat. Stir mustard and thyme into the butter; season with salt and pepper. Whisk flour into the butter mixture to make a thick paste. Slowly whisk chicken broth and half-and-half into the paste mixture until smooth. Continue to cook, stirring occasionally, until it begins to thicken into a sauce, about 5 minutes; remove from heat.
  4. Cover the bottom of the prepared baking dish with about half the potato slices and diced onion. Sprinkle about half the Cheddar cheese over the potato mixture. Arrange the pork chops over cheese layer. Layer remaining potatoes and onion atop the pork chops. Pour the sauce evenly over the potato mixture.
  5. Bake in preheated oven for 1 hour. Top dish with remaining Cheddar cheese, switch oven to broil, and continue baking until the top is browned and bubbly, about 5 minutes.

Awesome Pasta Salad
This is the best pasta salad I've ever eaten, and people request it frequently. It's a very easy, light-tasting side dish for a picnic or dinner.

Ingredients
  • 1 (16 ounce) package fusilli (spiral) pasta
  • 3 cups cherry tomatoes, halved
  • ½ pound provolone cheese, cubed
  • ½ pound salami, cubed
  • ¼ pound sliced pepperoni, cut in half
  • 1 large green bell pepper, cut into 1 inch pieces
  • 1 (10 ounce) can black olives, drained
  • 1 (4 ounce) jar pimentos, drained
  • 1 (8 ounce) bottle Italian salad dressing
Instructions
  1. Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes or until al dente. Drain, and rinse with cold water.
  2. In a large bowl, combine pasta with tomatoes, cheese, salami, pepperoni, green pepper, olives, and pimentos. Pour in salad dressing, and toss to coat.

Coconut Bread Pudding
The classic bread pudding is enhanced with coconut flakes and coconut milk.

Ingredients
  • 2 tablespoons butter
  • ⅓ cup confectioners' sugar
  • 1 cup white sugar
  • 4 eggs
  • 1 egg yolk
  • 2 (14 ounce) cans coconut milk
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons coconut extract
  • 1½ cups flaked coconut, divided
  • ½ cup fresh coconut
  • 1 (1 pound) loaf French bread, cut into 1 inch cubes
Instructions
  1. Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13 inch baking dish with butter, and dust with confectioners' sugar.
  2. In a large bowl, combine sugar, eggs, egg yolk, coconut milk, cinnamon, nutmeg, salt and coconut extract. Mix until smooth. Stir in 1 cup of flaked coconut, and ½ cup fresh coconut. Fold in bread cubes until evenly coated. Pour into prepared baking dish. Set aside for 30 minutes.
  3. Bake on a cookie sheet in preheated oven for 25 minutes. Sprinkle top with remaining ½ cup flaked coconut. Continue baking for 25 to 30 minutes, or until center springs back when lightly tapped.

We were given a lot of strawberries and I had to figure out what to do with them so they didn't go bad. So I came up with this recipe. I hope everyone likes it as much as my kids did. I prefer fresh strawberries over strawberry extract because it gives it a more fruitful flavor. But the extract is good as well. You decide.

Ingredients
  • 1½ cups white sugar
  • 1 cup butter, softened
  • 1 egg
  • 3 tablespoons strawberry puree
  • 2¾ cups all-purpose flour
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup white sugar
  • 1 teaspoon red colored sugar (optional)
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  2. Beat 1½ cups white sugar and butter together in a bowl with an electric mixer until creamy, about 3 minutes. Beat egg into butter mixture. Add strawberry puree.
  3. Stir flour, vanilla extract, baking powder, and salt into strawberry mixture with a spoon until flour is completely incorporated into dough.
  4. Stir ½ cup white sugar and red sugar together in a shallow bowl.
  5. Roll dough into walnut-sized balls, roll each ball in red sugar mixture, and place each ball 1½ inches apart onto prepared baking sheets. Lightly press each dough ball down to flatten.
  6. Bake cookies in the preheated oven until lightly browned, 10 to 15 minutes. Cool.

Better than EVER Brownies
Called 'brookies' as well. GOOD stuff. I like to serve them with ice cream.

  • Brownie Layer:
  • 10 tablespoons unsalted butter
  • 1¼ cups white sugar
  • ¾ cup cocoa powder
  • 2 eggs
  • 2 teaspoons vanilla extract

  • ½ cup all-purpose flour
  • Cookie Dough Layer:
  • ½ cup unsalted butter
  • ¾ cup white sugar
  • ¼ cup brown sugar
  • 1 egg
  • 1¼ teaspoons vanilla extract
  • 1¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup semisweet chocolate chipscooking spray
  • Cookie Layer:
  • 1 (20 ounce) package chocolate sandwich cookies (such as Oreo®), crushed
Instructions
  1. Melt 10 tablespoons butter in a saucepan over medium-high heat. Whisk 1¼ cup sugar and cocoa powder into the melted butter until dissolved. Remove saucepan from heat; add 2 eggs, 2 teaspoons vanilla extract, and ½ teaspoon salt. Whisk mixture continuously until the eggs are fully beaten into the mixture. Mix ½ cup flour into the mixture; set aside.
  2. Beat ½ cup butter, ¾ cup white sugar, and the brown sugar with an electric mixer in a large bowl until smooth and creamy. Beat 1 egg and 1¼ teaspoon vanilla extract into the creamed butter. Mix 1¼ cup flour, ½ teaspoon salt, baking soda, and baking powder into the butter mixture until just incorporated. Fold chocolate chips into the dough.
  3. Preheat oven to 350 degrees F (175 degrees C). Line a 9-inch square baking dish with aluminum foil and spray the foil with cooking spray.
  4. Press the cookie dough into the bottom of the prepared pan in an even layer. Spread an even layer of the crushed cookies over the cookie dough. Pour brownie batter over the cookies.
  5. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes.

Cinnamon Raisin Bread
This was my dad's recipe. A yummy moist bread loaded with raisins and cinnamon. The best raisin cinnamon bread I've ever had! Great plain, toasted, or with a light glaze of buttercream frosting!

Ingredients
  • 1½ cups milk
  • 1 cup warm water (110 degrees F/45 degrees C)
  • 2 (.25 ounce) packages active dry yeast
  • 3 eggs
  • ½ cup white sugar
  • 1 teaspoon salt
  • ½ cup margarine, softened
  • 1 cup raisins
  • 8 cups all-purpose flour
  • 2 tablespoons milk
  • ¾ cup white sugar
  • 2 tablespoons ground cinnamon
  • 2 tablespoons butter, melted
Instructions
  1. Warm the milk in a small saucepan until it bubbles, then remove from heat. Let cool until lukewarm.
  2. Dissolve yeast in warm water, and set aside until yeast is frothy. Mix in eggs, sugar, butter or margarine, salt, and raisins. Stir in cooled milk. Add the flour gradually to make a stiff dough.
  3. Knead dough on a lightly floured surface for a few minutes. Place in a large, greased, mixing bowl, and turn to grease the surface of the dough. Cover with a damp cloth. Allow to rise until doubled.
  4. Roll out on a lightly floured surface into a large rectangle ½ inch thick. Moisten dough with 2 tablespoons milk. Mix together ¾ cup sugar and 2 tablespoons cinnamon, and sprinkle mixture on top of the moistened dough. Roll up tightly; the roll should be about 3 inches in diameter. Cut into thirds, and tuck under ends. Place loaves into well greased 9 x 5 inch pans. Lightly grease tops of loaves. Let rise again for 1 hour.
  5. Bake at 350 degrees F (175 degrees C) for 45 minutes, or until loaves are lightly browned and sound hollow when knocked. Remove loaves from pans, and brush with melted butter or margarine. Let cool before slicing.

To Die For Blueberry Muffins
These muffins are extra large and yummy with the sugary-cinnamon crumb topping. I usually double the recipe and fill the muffin cups just to the top edge for a wonderful extra-generously-sized deli style muffin. Add extra blueberries too, if you want!

  • 1½ cups all-purpose flour
  • ¾ cup white sugar
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ⅓ cup vegetable oil
  • 1 egg
  • ⅓ cup milk
  • 1 cup fresh blueberries
  • ½ cup white sugar
  • ⅓ cup all-purpose flour
  • ¼ cup butter, cubed
  • 1½ teaspoons ground cinnamon
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
  2. Combine 1½ cups flour, ¾ cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  3. To Make Crumb Topping: Mix together ½ cup sugar, ⅓ cup flour, ¼ cup butter, and 1½ teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  4. Bake for 20 to 25 minutes in the preheated oven, or until done.

This is a rich, creamy, Italian-style Alfredo sauce perfect for chicken and seafood pastas! I discovered this recipe after relentless searching for an authentic Alfredo sauce that doesn't use cream cheese.

  • 1 cup unsalted butter
  • 1½ tablespoons minced garlic
  • 1 tablespoon all-purpose flour
  • 4 cups heavy cream
  • ¼ cup whole milk
  • 8 ounces freshly shredded Parmesan cheese
  • 2 ounces shredded fontina cheese
  • ½ teaspoon salt
  • 1 teaspoon ground black pepper
Instructions
  1. Melt the butter in a large pot over medium heat. Stir in the garlic and flour, and cook and stir until the garlic is fragrant but not browned, about 1 minute. Whisk in heavy cream and milk, whisking constantly until the mixture is hot and slightly thickened, about 10 minutes. Gradually stir in the Parmesan cheese and fontina cheese. Season with salt and black pepper. Continue to simmer until the cheese has melted and the sauce is thickened, stirring often, 20 to 30 more minutes.

Guinness® Beer Cheese Dip

  • 1 cup Irish stout beer (such as Guinness®)

  1. Heat cheese in slow cooker on High until melted, about 20 minutes.

Hot Pizza Dip
All your favorite pizza ingredients in a hot dip made in the microwave. Serve with sliced French baguette bread.

  • 1 (8 ounce) package cream cheese, softened
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ¼ teaspoon dried basil
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup pizza sauce
  • 2 tablespoons chopped green bell pepper
  • 2 ounces pepperoni sausage, chopped
  • 2 tablespoons sliced black olives
Instructions
  1. In a small bowl, mix together the cream cheese, oregano, parsley, and basil.
  2. Spread mixture in the bottom of a 9 inch pie plate, or a shallow microwave-safe dish. Sprinkle ½ cup of the mozzarella cheese and ½ cup of the Parmesan cheese on top of the cream cheese mixture. Spread the pizza sauce over all. Sprinkle with remaining cheese, then top with green pepper, pepperoni and olive slices. Cover, and microwave for 5 minutes. Serve hot.
