Addictive Sesame Chicken
My family begs for this dish! Much easier to prepare than the ingredient list indicates. If you are a fan of Chinese food, prepare to become ADDICTED to this yummy sesame chicken. Serve over jasmine rice.

  • 2 tablespoons soy sauce
  • 1 tablespoon dry sherry
  • 1 dash sesame oil
  • 2 tablespoons all-purpose flour
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon canola oil
  • 4 (5 ounce) skinless, boneless chicken breast halves, cut into 1-inch cubes
  • 1 quart vegetable oil for frying
  • ½ cup water
  • 1 cup chicken broth
  • ¼ cup distilled white vinegar
  • ¼ cup cornstarch
  • 1 cup white sugar
  • 2 tablespoons soy sauce2 tablespoons sesame oil1 teaspoon red chile paste (such as Thai Kitchen®)1 clove garlic, minced2 tablespoons toasted sesame seedsAdd all ingredients to list
Instructions
  1. Combine the 2 tablespoons soy sauce, the dry sherry, dash of sesame oil, flour, 2 tablespoons cornstarch, 2 tablespoons water, baking powder, baking soda, and canola oil in a large bowl. Mix well; stir in the chicken. Cover and refrigerate for 20 minutes.
  2. Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  3. Combine the ½ cup water, chicken broth, vinegar, ¼ cup cornstarch, sugar, 2 tablespoons soy sauce, 2 tablespoons sesame oil, red chili paste, and garlic in a small saucepan. Bring to a boil, stirring constantly. Turn heat to low and keep warm, stirring occasionally.
  4. Fry the marinated chicken in batches until cooked through and golden brown, 3 to 5 minutes. Drain on paper towels.
  5. Transfer the chicken to a large platter, top with sauce, and sprinkle with sesame seeds.

Crazy Cake
"This cake was popular during the depression, and does not have eggs in it."

Ingredients
  • 3 cups all-purpose flour
  • 2 cups white sugar
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • ½ cup unsweetened cocoa powder
  • ¾ cup vegetable oil
  • 2 tablespoons distilled white vinegar
  • 2 teaspoons vanilla extract
  • 2 cups cold water
Instructions
  1. Sift flour, sugar, salt, soda, and cocoa together into a 9 x 13 inch ungreased cake pan. Make three wells. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all, and stir well with fork.
  2. Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean. Frost with your favorite icing.

Huli Huli Chicken with Pineapple-Ginger Sauce
"Huli" is a Hawaiian word that means to turn over. Traditional versions of this dish are grilled, constantly turning the chicken back and forth as a rotisserie would. This easy recipe is made in the oven to save you time and elbow grease. Recipe adapted from Chef Greg Harrison, Pacific'O Restaurant.

Ingredients
Chicken
  • 2 tablespoons coconut oil
  • 1 head garlic, halved
  • 3 (4 inch) stalks lemongrass, smashed and diced
  • 1 (3 inch) piece fresh ginger, chopped
  • 4 cups ice water
  • 1 cup reduced-sodium tamari
  • 1 orange, sliced
  • 8 bone-in chicken thighs (about 4 pounds)
Sauce
  • ¾ cup pineapple juice
  • ⅓ cup chopped pineapple
  • ⅓ cup reduced-sodium tamari
  • 3 tablespoons light brown sugar
  • 1½ tablespoons minced garlic
  • 1 scallion, sliced
  • 2 teaspoons minced fresh ginger
  • 2 teaspoons minced shallot
  • 1½ tablespoons rice vinegar
Instructions
To prepare chicken:
  1. Heat oil, garlic halves, lemongrass and ginger in a medium skillet over medium heat. Cook, stirring, until starting to brown, about 2 minutes. Immediately transfer the mixture to a large bowl and add water, 1 cup tamari and orange. Add chicken, cover and refrigerate for at least 6 hours and up to 1 day.
  2. Meanwhile, to prepare sauce: Puree pineapple juice and pineapple in a blender until smooth. Transfer to a medium saucepan and add tamari, brown sugar, garlic, scallion, ginger, shallot and vinegar. Bring to a boil over medium-high heat; cook, stirring occasionally, until reduced by half, 8 to 10 minutes.
  3. Position rack in upper third of oven; preheat to 425°F. Line a rimmed baking sheet with foil.
  4. Remove the chicken from the marinade and pat dry with paper towels. (Discard the marinade.) Place on the prepared pan. Bake until an instead-read thermometer inserted in the thickest part without touching bone registers 160°F, about 25 minutes. Brush with 2 tablespoons of the sauce. Increase oven temperature to broil. Broil on high until charred in spots, 2 to 3 minutes.

Chicken Parmesan Casserole
I came up with this easy casserole idea instead of making homemade Chicken Parmesan. Enjoy!

  • 2 cups rotini pasta
  • 1 (12 ounce) can chicken chunks, drained
  • 1 cup shredded mozzarella cheese
  • 2 cups marinara sauce
  • ½ cup seasoned bread crumbs
Instructions
  1. Preheat an oven to 350 degrees F (175 degrees C).
  2. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  3. Stir together the rotini, chicken, and mozzarella cheese in a large casserole dish. Pour the marinara sauce over the pasta mixture; sprinkle with bread crumbs. Cover the dish with aluminum foil.
  4. Bake in the preheated oven until the cheese is entirely melted, about 35 minutes.

Hawaiian Sausage Skillet
I made this up one day when I couldn't find a recipe anywhere with these ingredients. So I kind of threw it together on a whim. Sugar can be adjusted for sweetness, and if the sauce gets a bit thicker than desired I suggest adding a little chicken broth as it's thickening. Serve immediately over rice.

  • 1 tablespoon vegetable oil, or more to taste
  • 1 (16 ounce) package Polish sausage, or to taste, cut into 1-inch squares
  • 1 large onion, thinly sliced
  • 1 large green bell pepper, cut into 1-inch squares
  • ¾ fresh pineapple - peeled, cored, and cut into chunks
  • 2 tablespoons cornstarch
  • ½ cup pineapple juice, or more to taste
  • ⅓ cup packed brown sugar, or to taste
  • 2 tablespoons cider vinegar
  • 2 tablespoons soy sauce
  • 2 teaspoons minced garlic
Instructions
  1. Heat oil in a large skillet over medium heat. Cook and stir sausage, onion, and green bell pepper until vegetables start to become tender, about 8 minutes; add pineapple and cook, stirring occasionally, until the pineapple is hot, about 5 minutes more.
  2. Beat pineapple juice and cornstarch together in a bowl using a whisk. Stir brown sugar, cider vinegar, soy sauce, and minced garlic with the pineapple juice until the sugar dissolves into the liquid; pour over the sausage mixture and cook until the sauce thickens, 5 to 8 minutes.

Asian Pork Tenderloin

Asian Pork Tenderloin
This is a simple and flavorful recipe. For best results, marinate the pork at least 8 hours (overnight is best) and flip it after 4 hours. It's great with rice and Asian veggies like bok choy! Enjoy!

Ingredients
  • ⅓ cup lite soy sauce
  • ¼ cup sesame oil
  • 2 tablespoons Worcestershire sauce
  • ⅛ cup packed light brown sugar
  • 3 green onions, chopped
  • 4 cloves garlic, crushed
  • 1½ tablespoons Asian chile paste
  • 1½ teaspoons pepper
  • 1 (2 pound) fat-trimmed pork tenderloin
Instructions
  1. Pour into a medium bowl the soy sauce, sesame oil, and Worcestershire sauce. Then whisk in brown sugar, green onions, garlic, chile paste, and pepper. Place the tenderloin in a shallow dish. Pour sauce over tenderloin, turning the meat a few times to coat. Cover dish, and refrigerate at least 8 hours.
  2. Preheat oven to 450 degrees F (230 degrees C). Transfer pork with marinade into an aluminum foil-lined baking pan.
  3. Roast in a preheated oven 25 to 30 minutes. Remove, and let stand 5 to 10 minutes before carving.

Banana Cream Cheesecake
A friend of mine couldn't make up her mind between banana cream pie and cheesecake for her birthday, so I came up with this rich and creamy concoction. The vanilla cream topping takes a little extra time to make but it really completes the dessert!

Crust:
  • 1¼ cups vanilla wafer crumbs
  • ½ cup ground walnuts
  • 5 tablespoons butter, melted
Filling:
  • 4 (8 ounce) packages cream cheese, room temperature
  • 1⅛ cups white sugar
  • 3 tablespoons all-purpose flour
  • 4 eggs
  • 1 cup sour cream
  • 2 ripe bananas, mashed
  • ¼ cup banana liqueur
  • 1½ teaspoons vanilla extract
Topping:
  • 1½ teaspoons unflavored gelatin
  • 3 tablespoons cold water
  • 1 cup milk
  • ⅓ cup white sugar
  • 4 egg yolks
  • 2 teaspoons vanilla extract
  • 1½ cups heavy cream, chilled
  • 12 vanilla wafer cookies
Instructions
  1. Preheat the oven to 350 degrees F (175 degrees C). Grease the sides of a 9 inch springform pan. In a medium bowl, mix together the vanilla wafer crumbs, ground walnuts, and melted butter. Press into the bottom of the prepared pan.
  2. In a large bowl, stir cream cheese to soften. Mix together 1⅛ cup sugar and flour; stir into the cream cheese until smooth. Stir in eggs, one at a time, mixing until well blended after each one. Stir in sour cream, mashed banana, banana liqueur, and 1½ teaspoons of vanilla. Pour over the crust in the springform pan.
  3. Cover the bottom of the outside of the cheesecake pan with aluminum foil to prevent water from the water bath from seeping in. Place springform pan inside a larger pan. Place the whole thing into the preheated oven, and fill the outer pan with hot water.
  4. Bake for 45 minutes in the preheated oven. After the time is up, turn the oven off, but leave door closed. Leave cheesecake in the unopened oven for 1 hour. Before removing from the water bath. Run a knife around the outer edge of the cake to keep it from shrinking away from the center and cracking. Let cool to room temperature, then refrigerate until chilled, at least 3 hours, or overnight.
  5. In a small bowl, sprinkle the unflavored gelatin over the cold water, and set aside to soften. Heat milk in a small saucepan over medium-low heat until hot but not boiling. Meanwhile, whisk together ⅓ cup sugar and egg yolks until smooth and frothy. Whisk about ⅓ of the hot milk into the egg yolk mixture, then pour the yolk mixture into the pan with the remaining milk. Cook over low heat, stirring constantly with a spatula, making sure that the mixture does not burn on the bottom, until it is thick enough to coat the back of a metal spoon. Remove from the heat. Stir the softened gelatin into the hot pastry cream until dissolved, then stir in vanilla. Pour into a bowl, place a sheet of plastic wrap directly on the surface, and refrigerate until cooled, about 1 hour.
  6. When the pastry cream is cooled, whip heavy cream just past soft peaks. Stir pastry cream to soften, then fold in the whipped cream. Place vanilla wafers on top of the cooled cheesecake, then spread the vanilla cream over the entire top. Chill until serving. Run a wet knife around the outer edge of the cake before removing the sides for a cleaner look.

Pinwheel Italian Calzones
Once you try these mini calzones, you may never go back to fixing the large ones again! These calzones come together in a snap, and are a great way to sneak a few veggies into your kid's diet. The best part is they are small so it makes it easy for little hands to pick up and eat. Plus they taste like pizza and there's even a dipping sauce!

Ingredients
  • ½ cup ricotta cheese
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup chopped pepperoni
  • ¼ cup finely chopped fresh mushrooms
  • ¼ cup finely chopped green bell pepper
  • 2 tablespoons finely chopped onion
  • 1 (8 ounce) can refrigerated crescent roll dough
  • 1 (14 ounce) jar pizza sauce
Instructions
  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, stir together the ricotta cheese, Italian seasoning, salt, Parmesan cheese, mozzarella cheese, pepperoni, mushrooms, green pepper and onion. Set aside.
  3. Unroll the crescent roll dough and separate into 4 rectangles. Press the remaining perforations together to seal. Spread the filling evenly onto the rectangles. Roll up the filling inside the dough starting at the short side. Slice each finished roll into four slices, and place cut side down onto a baking sheet.
  4. Bake for 10 to 12 minutes in the preheated oven, until lightly browned. While the pinwheels are baking, warm the pizza sauce. Serve the pinwheels with pizza sauce in small cups for dipping.

Mushroom Slow Cooker Roast Beef
This is tender, fall-off-the-bone roast beef with mushrooms. It's perfect as-is. Shred the leftovers for cheese steak sandwiches.

  • 1 pound sliced fresh mushrooms
  • 1 (4 pound) standing beef rib roast
  • 1 (1.25 ounce) envelope onion soup mix
  • 1 (12 fluid ounce) bottle beer
  • ground black pepper
Instructions
  1. Place the mushrooms in the bottom of a slow cooker; set the roast atop the mushrooms; sprinkle the onion soup mix over the beef and pour the beer over everything; season with black pepper. Set slow cooker to LOW; cook 9 to 10 hours until the meat is easily pulled apart with a fork.
