Sloppy Joe

Ingredients
  • 1 tbsp ghee or butter
  • 1 pound ground beef
  • 1 cup each onion & red bell peppers diced
  • 2 cloves garlic minced
  • 1 1/2 tbsp tomato paste
  • 2/3 cup no added sugar ketchup
  • 3/4 cup water
  • 1 tbsp coconut sugar
  • 1 tsp Dijon or yellow mustard
  • 1/2 tsp chili powder
  • 1 tsp tamari soy sauce
  • Unrefined salt & pepper

Instructions
  1. Preheat a large pa over medium-high heat with 1.5 tablespoons of ghee. Add the ground beef, 1 teaspoon salt, a few cracks of pepper, and break up the meat well. Cook for 5-7 minutes, or until the beef is just cooked through. Remove from pan.
  2. To the same pan, add the peppers, onions, ΒΌ teaspoon salt, and a few cracks of pepper. Cook for 5 minutes then add the garlic and cook another 3 minutes. Add meat back to the pan along with the tomato paste and cook for 1 minute. Add the ketchup, water, coconut sugar, mustard, chili powder, tamari, and mix well. Bring to a gentle simmer and cook for 15 minutes, adding more water if the mixture gets too thick to quickly. Check for seasoning and remove from heat once the time is up and the mixture has thickened.
  3. Griddle the bun and build sloppy joes, enjoy!
