Whisk eggs together in a bowl. Add in salt, pepper, and sour cream, then whisk again.
Fold in baby spinach and bacon.
Heat 2 teaspoons Land O’Lakes® Butter with Canola Oil in a pan. Keep heat on low and
pour in eggs. Gradually scramble the eggs, using a silicone spatula. Remove eggs from
heat when they are just barely cooked (they will continue to cook).
Spread Land O’Lakes® Butter with Canola Oil on one side of each bread slice.
Position 2 pieces of bread, butter side down. Place 2 slices of cheese on each piece of
bread. Pile half of the eggs on each. Add 2 more slices of cheese on top of each. Top
with the other bread slices, butter side up.
Heat a nonstick pan over low heat. Add the sandwiches and cook on the first side until
bread is golden brown. Flip sandwiches and cook other side until also golden brown. Cover pan for a minute or two if cheese isn’t fully melted. Remove from pan, slice, and serve.
