Caprese Steak

Caprese Steak

Ingredients
  • ¾ c. balsamic vinegar
  • 3 cloves garlic, minced
  • 2 tbsp. honey
  • 2 tbsp. extra-virgin olive oil
  • 1 tbsp. dried thyme
  • 1 tbsp. dried oregano
  • 4 steak fillets, such as sirloin
  • 2 beefsteak tomatoes, sliced
  • kosher salt
  • 4 slices mozzarella
  • Fresh basil leaves, for serving
  • In a small bowl, whisk together balsamic vinegar, garlic, honey, olive oil, dried thyme, and dried oregano.
  • Pour over steak and let marinate 20 minutes.
  • Season tomatoes with salt and pepper.
  • Heat grill to high. Grill steak 5 minutes per side, then top with mozzarella and tomatoes and cover grill until cheese is melty, 2 minutes.
  • Top with basil before serving.

Quesadilla Burger

Quesadilla Burger
No longer do you have to choose between a quesadilla or a burger.

Ingredients
  • 1 lb. ground beef
  • 1 clove garlic, minced
  • 1 jalapeño, minced
  • 1 tsp. chili powder
  • kosher salt
  • Freshly ground black pepper
  • 2 tbsp. vegetable oil, divided
  • 8 Small flour tortillas
  • 1½ c. shredded Cheddar
  • 1½ c. Shredded Monterey Jack
  • 1½ c. Shredded lettuce
  • 1 c. Pico de Gallo
  • Sour cream, for drizzling
Instructions
  1. In a large bowl, combine ground beef, garlic, jalapeño, and chili powder. Season with salt and pepper and mix until just combined.
  2. Shape mixture into four large, thin patties. Heat 1 tablespoon oil in a large skillet over medium-high heat. When the pan is hot, add the patties and cook until cooked to your desired doneness, about 4 minutes per side.
  3. Set aside burgers and wipe skillet clean. In the same skillet over medium heat, heat remaining tablespoon oil. Add one flour tortilla and top with cheddar, Monterey Jack and lettuce.
  4. Place one cooked burger on top then sprinkle more cheese and top with pico de gallo. Drizzle with sour cream then place a second tortilla on top. Cook until the bottom tortilla is golden, about 2 minutes.
  5. Carefully flip quesadilla and cook until the other side is golden, about 2 more minutes. Repeat with remaining ingredients and burgers. Serve immediately.

Funfetti Cheesecake

Funfetti Cheesecake
Funfetti fans, we've got the cheesecake for you.

Ingredients
  • 1 box Funfetti cake mix, plus ingredients called for on box
  • 3 8-oz. blocks cream cheese, softened
  • 1 c. sugar
  • 3 large eggs
  • ¼ c. sour cream
  • 2 tsp. pure vanilla extract
  • ½ c. rainbow sprinkles, plus more for decorating
  • ½ c. vanilla frosting
Instructions
  1. Preheat oven to 350° and grease a 9” springform pan with cooking spray.
  2. Prepare Funfetti cake mix according to package instructions and pour about half of the batter into prepared pan. Bake until a toothpick inserted into the middle of the cake comes out clean, 23 to 25 minutes. Let cake cool for 10 minutes.
  3. Make cheesecake mixture: In a large bowl using a hand mixer, beat cream cheese and sugar until combined. Add eggs and beat until combined, then stir in sour cream and vanilla and fold in sprinkles.
  4. Pour cream cheese batter onto cooled cake and bake until cheesecake is slightly jiggly in the center, 1 hour to 1 hour 10 minutes. (Cheesecakes tend to crack if you don't use a water bath. If you don't want to use one, bake as directed. If you do want to use a water bath, double wrap the outside of the pan in aluminum foil and place in a baking dish. Place on oven rack and pour in enough boiling water to reach halfway up the pan. Bake as directed.)
  5. If not using a water bath: Remove pan from oven and run a knife around the inside of the pan to release the cheesecake. Let cool 1 hour on a wire rack, then refrigerate until totally chilled, at least 4 hours and up to overnight.
  6. Pipe vanilla frosting along border of the cheesecake then garnish with more sprinkles. Slice and serve cold.

Watermelon Cake

Watermelon Cake

Ingredients
  • Nonstick cooking spray
  • 2 boxes white cake mix, plus ingredients called for on box
  • 5 tsp. red gel food coloring, divided
  • 1 c. mini dark chocolate chips
  • 2 tbsp. all-purpose flour
  • 3 c. (6 sticks) unsalted butter, softened
  • 10 c. powdered sugar
  • ½ c. whole milk (plus more as needed)
  • 2 tbsp. vodka
  • 2 tsp. green gel food coloring
  • 2 tsp. yellow gel food coloring
  • A handful of black mini jelly beans
Instructions
  1. Preheat oven to 350°. Line four 8” round cake pans with parchment paper and grease with cooking spray.
  2. Prepare cake mixes according to package instructions and add 4 teaspoons of the red gel food coloring to achieve a watermelon red color.
  3. Toss the chocolate chips with flour to coat and fold into the batter.
  4. Divide cake batter between prepared pans and bake according to package instructions or until a toothpick inserted into the center comes out clean, about 30 minutes. Let cakes cool in pans for 10 minutes, then invert onto wire racks to cool completely.
  5. Make frosting: In a large bowl using a hand mixer, beat butter and about half of the powdered sugar until smooth. Add the remaining powdered sugar, ½ cup of milk, and ¼ teaspoon salt and beat until fluffy. If the mixture is too stiff, add more milk.
  6. Divide frosting into two medium bowls. Leave one bowl of frosting white and stir in the remaining 1 teaspoon of red gel food coloring into the other bowl of frosting.
  7. Level the top of each cake to create even layers. Place a small dab of red frosting on the cake plate (to keep cake in place). Place down one cake and top with about ¾ cup red frosting, then top with second cake and repeat with the third and fourth layer.
  8. Scrape a heaping ½ cup of frosting in a pastry bag fitted with a 1-inch tip and pipe a ring around the outer edge of the cake. Using about a cup and a half of frosting, smooth a crumb coat around the outside of the cake. Transfer the cake to the refrigerator until the frosting is hardened, 1 hour.
  9. Spread the outside of the cake with the remaining white frosting. Fill in the top center of the cake with red frosting, being careful to keep the red frosting inside the piped white ring.
  10. Arrange jelly beans in the top red frosting, pressing them in gently to adhere.
  11. In 2 small bowls, mix 1 tablespoon vodka each with the green, light green and yellow gel food coloring. Using 2 separate sponges, blot the colors in vertical lines up the sides of the white frosting, creating a watermelon rind pattern.

Instructions
  1. Stuff cones with marshmallows, Reese's cups, Reese’s pieces and peanut butter.
  2. Wrap cones with foil and throw on the campfire until the candies are melted, about 5 minutes.
  3. Remove from heat and let rest until cool enough to handle.

Grilled Peach Sundaes
Underripe peaches are the worst — unless they're grilled. Over the flame, they get deliciously charred and caramelized.

  • 2 peaches, halved, pits removed
  • ¼ c. maple syrup
  • 1 tbsp. cinnamon sugar
  • Pinch salt
  • Vanilla ice cream, for serving
  • Caramel, for serving
  • Crushed graham crackers, for garnish
Instructions
  1. Heat grill to high. Brush cut sides of peaches with maple syrup then sprinkle with cinnamon sugar and salt.
  2. Put peaches on grill, cut side-down, and cook until charred, about 2 minutes. Flip and cook another two minute, to allow peaches to soften slightly.
  3. Serve peaches with ice cream scooped on top. Drizzle with caramel and sprinkle with crushed graham c

Balsamic Steak Roll-Ups
Securing the roll-ups with toothpicks makes them MUCH easier to cook. Just don't forget to remove them when it's time for serving!

Ingredients
  • 1 lb. skirt steak, cut into thin strips
  • ½ c. balsamic vinegar
  • 2 tbsp. honey
  • 1½ tbsp. whole-grain mustard
  • 3 cloves garlic, minced
  • 1 tsp. Worcestershire sauce
  • 1 tsp. minced fresh rosemary
  • ½ tsp. dried oregano
  • Kosher salt
  • Freshly ground black pepper
  • 2 tbsp. extra-virgin olive oil, divided
  • 2 bell peppers, cut into thin strips
  • ½ lb. asparagus, woody ends removed
  • 2 small zucchini, cut into thin strips
  • Toothpicks
Instructions
  1. Make marinade: In a small sauce pan over medium heat, combine vinegar, honey, mustard, garlic, Worcestershire sauce, rosemary, and oregano. Season with salt and pepper. Bring mixture to a boil then reduce to a simmer and cook, stirring occasionally, until it has reduced by about a third and is syrupy in consistency, 10 to 12 minutes.
  2. Meanwhile, prepare vegetables: In a medium skillet over medium heat, heat 1 tablespoon olive oil. Add peppers and cook 2 minutes, then add asparagus and zucchini and season with salt, pepper, and Italian seasoning. Cook until vegetables are tender but still hold their shape, 4 to 6 minutes more.
  3. Assemble roll-ups: Lay steak strips flat on cutting board, and brush both sides with marinade. Place a small handful of vegetables in the center of each piece of steak. Wrap steak around vegetables and secure with a toothpick.
  4. In a large skillet over medium heat, heat remaining 1 tablespoon oil. Place steak roll-ups in skillet seam side-down and cook 2 minutes until nice and seared. Use tongs to turn roll-ups to cook on all sides, about 2 minutes per side. Brush with remaining marinade as steak cooks.
  5. Remove from heat and serve immediately.

Ingredients
  • ½ c. low-sodium soy sauce
  • ⅓ c. extra-virgin olive oil
  • ¼ c. lightly packed brown sugar
  • ¼ c. bourbon
  • 2 tbsp. whole-grain mustard
  • 2 tsp. cajun seasoning
  • 2 cloves garlic, minced
  • 1 tsp. fresh thyme leaves
  • 2 lb. tri-tip steak (or a very thick cut of sirloin)
  • 2 tbsp. butter, cut into tabs
  • Freshly chopped parsley, for garnish (optional)
Instructions
  1. In a large bowl, whisk together soy sauce, olive oil, brown sugar, bourbon, mustard, Cajun seasoning, garlic, thyme, and red pepper flakes. Pour out about ⅓ of mixture to use for glaze later. Toss steak in mixture and let marinate for 20 minutes, or up to 4 hours. (If marinating for more than 20 minutes, cover bowl with plastic wrap and refrigerate.)
  2. Heat grill or grill pan to high. Remove steak from marinade and season both sides with salt and pepper. Grill until charred on bottom, about 10 minutes. Flip steak, then lower grill to medium-high and cook for another 8 to 10 minutes. (A meat thermometer inserted into the thickest part of the meat should register around 130°.) Remove from grill and let rest on cutting board before slicing against the grain.
  3. Meanwhile, make glaze: Pour reserved marinade into a small saucepan and bring mixture to boil over medium-high heat. Reduce heat to medium, and cook until mixture has thickened slightly. Whisk in butter until melted. Remove from heat
  4. Brush glaze over steak and garnish with parsley, if using.

  • 2 tbsp. butter
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • ½ large onion, chopped
  • 2 tsp. fresh thyme leaves
  • kosher salt
  • Freshly ground black pepper
  • 2 tbsp. all-purpose flour
  • ⅔ c. chicken broth
  • ½ c. heavy cream
  • 2 c. diced chicken
  • ½ c. frozen peas
  • ½ c. frozen corn
  • 1 tube crescent dough
Instructions
  1. Preheat oven to 375° and grease a muffin tin with cooking spray. In a large skillet over medium heat, melt butter. Add carrots, celery, onion and thyme and season with salt and pepper. Cook until softened, 3 minutes, then stir in flour and cook 1 minute.
  2. Stir in chicken broth and heavy cream and bring to a boil, then reduce heat and simmer, stirring occasionally, until thickened, about 5 minutes. Stir in chicken, corn, and peas and simmer until warmed through. Remove from heat and set aside.
  3. On a lightly floured surface, roll out crescent dough, and pinch seams together. Cut into 12 squares. Place squares into muffin tin slots. Spoon heaping spoonfuls of chicken mixture into each crescent cup.
  4. Bake until the crescent is golden, about 15 minutes. Let cool slightly, pop out of muffin tray and serve.

S'mores Cheese Ball
Can't find marshmallow bits? Quarter mini marshmallows for a similar effect.

  • 16 oz. cream cheese, softened
  • ½ c. powdered sugar
  • ⅓ c. marshmallow crème
  • 1 tsp. pure vanilla extract
  • Pinch kosher salt
  • ⅔ c. mini chocolate chips
FOR COATING
  • ¼ c. mini chocolate chips
  • ¼ c. marshmallow bits
  • ¼ c. crushed graham crackers
  • Whole graham crackers, for serving
Instructions
  1. In a medium bowl using a hand mixer, beat together cream cheese, powdered sugar, marshmallow crème, vanilla, and salt. Fold in mini chocolate chips, then place in refrigerator to firm up, 30 minutes.
  2. Meanwhile, make coating: Combine mini chocolate chips, marshmallow bits, and crushed graham crackers on a shallow plate. When marshmallow mixture is firm, shape into a large round ball and roll in coating. Serve with graham crackers.
