Turkey Taco Lettuce Wraps
No bread? No problem! Doubling up on romaine leaves insures a mess-free lunch, sans the carbs.

  • 2 tbsp. extra-virgin olive oil
  • 1 small yellow onion, chopped
  • 1 lb. ground turkey
  • 1 tsp. kosher salt
  • 1 tbsp. tomato paste
  • 1 tbsp. chili powder
  • 1 c. low-sodium chicken broth
  • 2 heads romaine lettuce, outer leaves separated
  • Shredded Mexican cheese, for serving
FOR SERVING
  • Shredded Mexican cheese
  • Chopped tomatoes
  • Chopped red onion
  • Chopped avocado
  • Chopped cilantro
Instructions
  1. Heat oil in a large skillet over medium-high. Add onion and cook until just soft, about 5 minutes. Add turkey and season with salt. Cook, breaking up meat with the side of a spoon, until meat is cooked through, 4 minutes.
  2. Stir in tomato paste and chili powder and cook 1 minute. Add broth and simmer, stirring occasionally, until thickened, about 2 minutes more.
  3. Double up lettuce leaves. Divide meat mixture among leaves. Sprinkle with cheese, tomato, onion, avocado, and cilantro and serve.

Garlic Butter Steak Bites
These garlic butter steak bites will make all of your friends go crazy.

Ingredients
  • 2 lb. ribeye steak
  • 4 tbsp. extra-virgin olive oil
  • 4 tbsp. butter
  • 2 large garlic clove, minced
  • 1 tsp. fresh parsley leaves, minced
Instructions
  1. Cut steak into ¾-inch cubes and season with salt and pepper.
  2. Heat half of the oil in a large heavy bottomed skillet over medium-high. Add half the steak in a single layer and cook, turning a few times until golden and medium rare, about 5 minutes. Add half of the butter and half of the garlic and toss to coat. Remove steak to a serving bowl. Repeat with remaining steak.
  3. Garnish steak with parsley. Serve with toothpicks.

  • 3 large pickles
  • Mustard, if desired
  • Mayonnaise, if desired
  • 6 slices ham
  • 3 slices provolone
  • 1 tomato, sliced
Instructions
  1. Slice pickles in half lengthwise. Using a spoon, scoop out the seeds.
  2. Spread mustard and mayo on the bottom “bun” of the pickles. Top with ham, cheese, and tomatoes. Top with the other pickle “bun” and serve.

Caesar Angel Hair
We used a whole bottle of Caesar dressing in this sauce and have no regrets. With bacon, lemon juice, Parmesan, and LOTS of black pepper, it's ridiculously good.

Ingredients
  • 12 oz. angel hair
  • 1 lb. boneless skinless chicken breasts
  • 1 tbsp. extra-virgin olive oil
  • kosher salt
  • Freshly ground black pepper
  • 6 slices bacon, chopped
  • 2 garlic cloves, minced
  • ½ c. chicken stock
  • 1 pint creamy Caesar dressing
  • ½ c. finely grated Parmesan, plus more for serving
  • 2 tbsp. lemon juice
  • ¼ c. finely chopped flat leaf parsley
Instructions
  1. In a large pot of salted boiling water, cook angel hair according to package directions until al dente. Drain and reserve 1 cup pasta water.
  2. Meanwhile, in a large skillet over medium-high heat, heat oil. Season both sides of chicken with salt and pepper then add to pan. Cook about 5-6 minutes per side, until the chicken is cooked through. Transfer to a cutting board and let rest for 10 minutes, then slice into strips. Wipe skillet clean.
  3. Return skillet to burner over medium heat. Add bacon and fry until crispy. Drain bacon pieces on a paper towel-lined plate. Reserve about two tablespoons of bacon fat in skillet.
  4. Add garlic and sauté until fragrant, about 1 minutes. Pour in chicken stock to deglaze pan and reduce down slightly. Stir in Caesar dressing and bring mixture to a slight simmer. If the sauce is too thick, gradually add pasta water, about ¼ cup at a time until you reach your desired consistency. Add Parmesan, lemon juice and parsley. Check for seasonings and add salt and pepper as needed.

  • 3 -4 medium zucchini, halved lengthwise
  • 1 tbsp. extra-virgin olive oil
  • ½ tsp. Italian seasoning
  • ½ tsp. garlic powder
  • Kosher salt
  • Freshly ground black pepper
  • 1 lb. ground beef
  • ¼ c. freshly chopped parsley, plus more for garnish
  • 1 large egg
  • 2 garlic cloves, minced
  • ½ tsp. crushed red pepper flakes
  • 1 tbsp. vegetable oil
  • 2 c. marinara sauce (use sugar-free if you're keto!)
  • 1 c. shredded mozzarella
  • ½ c. freshly grated Parmesan
Instructions
  1. Preheat oven to 350°. Score zucchini (like you’re dicing an avocado) and scoop out insides into a large bowl. Place in a shallow baking dish, drizzle with olive oil, and season with Italian seasoning, garlic powder, salt, and pepper. Bake 12 to 15 minutes, until mostly tender. Remove from oven and turn broiler to high.
  2. Make meatballs: In a large bowl, mix together beef, parsley, egg, garlic, salt, and red pepper flakes. Form into 24 meatballs.
  3. In a large skillet over medium-high heat, heat vegetable oil. Add meatballs in a single layer and sear on all sides until a nice crispy crust develops, about 2 minutes per side.
  4. Pour marinara around the meatballs and stir until the meatballs are fully sauced. Simmer for 10 more minutes. Remove from heat.
  5. Fill zucchini boats with meatballs and top with mozzarella. Broil until cheese is melty, 3 to 5 minutes. Garnish with Parmesan and parsley and serve hot.

  • Cooking spray, for pan
  • 1 box chocolate cake mix (plus ingredients called for on box)
  • 2 (1½ qt.) Breyers Natural Vanilla Ice Cream
Instructions
  1. Preheat oven to 350° and line two 9"-x-13" baking pans with parchment paper, leaving a two inch overhang on the long side. Grease with cooking spray. In a large bowl, prepare cake mix according to package instructions. Divide between pans and bake until a toothpick inserted into the middle comes out clean, about 20 minutes. Let cool completely.
  2. Using the back of a spoon, working horizontally poke out alternating rows of 4 and 3 evenly spaced small rounds, about ½-inch each.
  3. Invert the other cake onto a platter and cover with the vanilla ice cream, spreading the top to create an even layer. Place the cake with the holes on top and gently press into the ice cream. Smooth the ice cream along the sides, then put in the freezer for at least 2 hours, or until ready to serve.

  • FOR THE TACOS
  • Juice of 3 limes
  • 2 tbsp. freshly chopped cilantro, plus more for garnish
  • 2 garlic cloves, minced
  • ½ tsp. cumin
  • 1 tbsp. olive oil
  • Zest of 1 lime
  • Kosher salt
  • 1 lb. shrimp, peeled and deveined
  • 8 Tortillas, warmed, for serving
  • FOR THE CABBAGE SLAW
  • ¼ c. shredded green cabbage
  • ¼ c. cilantro
  • ¼ red onion, thinly sliced
  • ½ avocado, thinly sliced
  • Juice of 1 lime
  • 1 tbsp. olive oil
  • Kosher salt
  • FOR THE GARLIC-LIME MAYO
  • ⅓ c. Duke's Mayonnaise
  • 2 tbsp. hot sauce
  • Zest of 1 lime
  • ½ tsp. garlic powder
  • Kosher salt
Instructions
  1. In a large bowl, whisk together lime juice, cilantro, garlic, cumin, olive oil, lime zest and season with salt. Add shrimp and cover with plastic wrap. Let marinate 20 minutes in refrigerator.
  2. Make slaw: in a large bowl combine all slaw ingredients. Toss gently to combine and season with salt.
  3. Make garlic-lime mayo: in a medium bowl, combine all ingredients. Whisk and season with salt.
  4. Preheat grill or grill pan to medium heat. Grill shrimp until pink and opaque, about 3 minutes per side.
  5. Build tacos: add a scoop of slaw, a few shrimp, and a drizzle of the garlic-lime mayo to each taco. Garnish with cilantro and serve.

Cabbage Burritos

  • 8 large green cabbage leaves (from 1 head)
  • 1 tbsp. extra-virgin olive oil
  • ½ onion, chopped
  • 1 lb. ground beef
  • 2 cloves garlic, minced
  • 1 tbsp. taco seasoning mix
  • Kosher salt
  • Freshly ground black pepper
  • 1 (15-oz.) can black beans
  • 1½ c. chopped cherry tomatoes
  • 1 c. corn, canned and drained or frozen
  • 1 c. shredded Monterey Jack
  • ½ c. shredded cheddar
Instructions
  1. Preheat oven to 350º and line a small baking sheet with parchment paper. In a large pot of boiling water, use tongs to dip cabbage leaves in water for 30 seconds to blanch. Place on a paper towel-lined plate to dry.
  2. In a large skillet over medium heat, heat olive oil. Add onion and cook until soft, about 5 minutes, then stir in ground beef and garlic. Cook, stirring often, until beef is no longer pink, about 5 minutes. Drain excess fat, then season with taco seasoning mix, salt, and pepper. Stir in black beans, cherry tomatoes, and corn.
  3. Lay 2 cabbage leaves side by side, overlapping slightly. Place a heaping spoon of ground beef mixer, then top with cheese. Fold short sides of cabbage leaves in first, then roll into a cylinder — like a burrito! Repeat with remaining beef mixture.
  4. Place on baking sheet and bake until cheese is melted, about 10 minutes.

Ok, ok. We know. It's a very simple recipe. Trust us, though—once you try these egg rolls, you'll never want Snickers any other way.

Ingredients
  • 12 egg roll wrappers
  • 12 Snickers bars
  • ⅓ c. granulated sugar
  • ½ c. semisweet chocolate chips, melted
Instructions
  1. Place an egg roll wrapper on a clean surface in a diamond shape and place a half of a Snickers bar. Fold up bottom half and tightly fold in sides. Gently roll, then seal fold with a couple drops of water. Repeat until all egg roll wrappers are used.
  2. In a large skillet over medium heat, heat oil (it should reach 1" up the side of pan) until a drop of water bubbles in pan. Add egg rolls and fry until golden, 1 minute per side. Transfer to a paper towel-lined plate and sprinkle with sugar immediately.
  3. Serve with melted chocolate for dipping.
